Pumpkin pie frosty!

I saw a recipe for pumpkin frosty and figured I could make one that is simply filling! The only thing not simply filling is the sugar free vanilla pudding mix but 1 tbsp is 0pp.

Pumpkin pie frosty

1c skim milk
1/4c 0% Greek yogurt which I used to make it creamy but you could also make it without
1/4c pure pumpkin
1/4-1/2 tsp pumkin pie spice I like it spicy and used 1/2 tsp
1 tbsp vanilla sf pudding mix
I used 8 ice cubes
Sweetener to taste. I used 2 because I like it sweet

If you want it thicker you can add more ice or a tbsp more pudding pie mix

Blend all! This is 1/2 a portion because I shared with the hubs :)

Green tea smoothie Simply Filling

Green tea smoothie Simply Filling

3/4c boiling water and either a green tea bag or a tsp of matcha green tea powder
If using a tea bag let sit 4 minutes or so and then remove. Let cool.
1 small banana cut into chunks
8 ice cubes
sweetener to taste I used 1 package because the banana was really ripe and sweet
1 small individual light vanilla yogurt
I like to add 1/4 tsp ginger which is optional gives it a big of a zing!

When the green tea has cooled add all to a bullet or blender.

Zucchini pizza Simply Filling plus 0pp if you use fat free cheese



This would be 100% simply filling if you use fat free cheese. I don't so I count 2pp for the cheese. I brushed a little olive on the zucchini before I grilled it because I need to get my oils in today. Don't know whether you'd have to do that.

Zucchini pizza 

Zucchini the bigger you choose the bigger the slices for the pizza simply filling
I sprinkled the slices with a little sea salt and pepper
1/8c pizza sauce the one I used is 0pp
5 slices Butterball Turkey Pepperoni 0pp
30g light cheese 2pp when you shred really fine this was a lot of cheese I could have used 15g
Jalapeno peppers 0pp
bell peppers simply filling
onion simply filling

This is a knife and fork kind of pizza :) You would have to like zucchini to enjoy this but it made a nice change.

I put the zucchini on my grill pan and cooked till browned. Topped with the pizza sauce and other toppings and put under the broiler for a few minutes or you could just baked them for 8 to 10 minutes. Let sit for a few minutes then enjoy.

Cheesy scalloped potatoes simply filling + 3pp


Cheesy scalloped potatoes Simply Filling plus 3pp

3 medium potatoes which I sliced with a mandolin to get them nice and thin but be careful with your fingers!
1/2 onion sliced thinly as well
1 cup fat free 1/2 & 1/2 or skim milk
salt and pepper and garlic powder sorry didn't measure :)
1 tbsp flour 1pp
1 tbsp becel reduced calorie pro-active margarine 1pp
Light cheddar cheese 2 oz 4pp
Light cheddar finely shredded 1 oz save for on top 2pp

3 servings=3pp per serving

I sprayed non stick on a small pyrex dish  8x6"

In a small pan put the light margarine and the tbsp of flour and stir to mix and cook for a minute or two. Slowly add the fat free cream while stirring with a whisk continually. Keep stirring till all the cream is in the pot and it starts to bubble and thicken. Take off of the heat. Add in salt/pepper/garlic powder and 2 oz of the light cheese. Stir till melted.

Put a few spoonfuls on the bottom of the dish then layer 1/2 the potatoes and 1/2 the onion. Put 1/2 the remaining sauce on top and one again layer the rest of the potatoes and onion and finally put the last bit of sauce on top. Cover with foil and bake at 350 for 45-60 minutes depending on the thickness of the potato and your oven. I have occasionally popped them in the microwave to finish cooking when the rest of the dinner is nearly ready :) When done take out and evenly sprinkle the last ounce of light cheese. Pop  back into the oven to melt.



Brownie banana split for breakfast Simply Filling +3pp

I absolutely loved this! Would be great to let children make their own with different toppings.

I didn't have any granola so I decided to make a banana split with a twist.

1 banana
sliced strawberries
light yogurt or 0% Greek yogurt I used Greek to get added protein
1 fiber one brownie 2pp warmed in microwave for 10 seconds
10g dark chocolate melted 1pp

Berry whip!

This is one of my favorite desserts/snacks :) Don't let the ingredients fool you it tastes amazing and you can't taste the cottage cheese!

1/2c fat free cottage cheese
1/2c frozen fruit I chose cherries today
skim milk the amount depends on which fruit you use
1 packet of sweetener

Put all in a bullet and blend until all mixed. Keep scraping down the sides and add milk as you need it. I would start with maybe 1/8th of a cup.  Enjoy

Tuna and pasta salad simply filling

Made this for lunch today! Very good :)

Ingredients:
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 cans of chunk light tuna packed in water and drained
  • 3 cups, pre-cooked whole grain pasta
  • 1 cup frozen peas, defrosted
  • 2 tbsp Kraft fat free miracle whip
  • 1/2 cup fat free plain Greek yogurt
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
The only thing I did differently was to use 3 Tbsp mayo and I also used apple cider vinegar as that was all I had. I also put a pinch of sweetener in because I don't like it too tangy.

Good way to use up zucchini!

I have to say this was delicious :)

First I took my julienne peeler and made some zucchini noodles. Then I sauteed them in a tsp of olive oil. Poured some egg substitute on top and seasoned with a little sea salt and pepper. 100% Simply filling

Today I added some back bacon, slice of light toast, 1 tsp of becel calorie reduced pro active margarine 0pp, and strawberries.

Home made Wendy's style Frosty!

I've seen this in a lot of places so I don't know who originally posted it.

Wendy's style Frosty Simply Filling + 0pp
1 cup skim milk
1 tbsp sugar free instant chocolate pudding mix 0pp
6 ice cubes
1 tsp vanilla extra or other flavor

Put all in a blender and enjoy!

Not the best picture but I was putting in a thermos to take with me :)

Coleslaw dressing simply filling

I buy bags of the coleslaw mix and add this to it:

1/4c Kraft fat free miracle whip
1 Tbsp apple cider vinegar
1/2 tsp ground celery seed
1 tsp horseradish or more if you like it spicy
1 pinch to 1/2 packet of sweetener mix and taste to see if you need more than a pinch
sea salt and pepper

Tuna and chickpea salad


Tuna and chickpea salad

1/3c chickpeas
chopped celery, tomatoes, red onion, cucumber
1 tbsp fat free mayo
1 small tin of lemon pepper tuna
pepper/garlic powder

All simply filling

Hot oat bran

Hot oat bran cereal Simply Filling + 1pp for the walnuts

I make my hot oat bran by putting the milk and the oat bran cereal in a small saucepan. Put on a medium heat and stir. Don't go anywhere because it will quite quickly thicken one heated through :)

I make mine with skim milk which is Simply Filling

The 1/2 Tbsp of brown sugar isn't Simply Filling but it is 0pp

1/3c oat bran cereal
1 cup skim milk
1/2 Tbsp brown sugar 0pp
8g walnuts 1pp
banana

Almond joy oatmeal


Breakfast: almond joy oatmeal Simply Filling +2pp

1/3c oats
water
unsweetened cocoa 1 small spoonful
1 tsp unsweetened coconut
9g slivered almonds 1pp
10g dark chocolate chips 1pp
1 egg white lightly beaten
sweetener
almond extract a splash :)

I mixed the oats/cocoa/sweetener in a saucepan. Cooked until thick. At the last minute add 1 lightly beaten egg white and stir stir stir and it becomes creamy and with more volume. It also gives a bit of protein which helps to keep me full for longer! Add extras on top.

Tropical oatmeal 6pp


Tropical oatmeal Simply Filling +2pp

1/3c oatmeal
3/4c water
1 oz crushed pineapple
1/2 tbsp brown sugar
10g raisins 1pp
1 tsp coconut
5g slivered almonds 1pp

I put the water and oats together and microwaved until thickened approximately 1:45. Add the rest of the ingredients.

Original recipe was from here but I measured exactly and came up with different points plus I like more oatmeal :)

Baked individual chocolate chip oatmeal or as I like to call it Giant individual oatmeal chocolate chip breakfast cookie

Giant individual oatmeal chocolate chip breakfast cookie 6pp Simply Filling without the chocolate chips

You could also make it peanut butter by add 1 Tbsp pb2 which would add another point.

1/2c uncooked oatmeal 4pp
1/4c egg substitute or egg whites 1pp
1/4c mashed banana 0pp
1/2 tsp cinnamon 0pp
1/2 tsp vanilla 0pp
2 pkts sweetener 0pp
1/2 tsp baking powder 0pp
10g mini chocolate chips 1pp

I mixed all. Put into a non stick sprayed small round dish but you could also spread it on a non stick baking sheet. I put it in my toaster oven at 375. Sorry I didn't time it but I'd say approximately 20 minutes. I'm one of those people who wait till it smells done :)

Banana chocolate chip baked French toast Simply Filling + 1sp

Banana chocolate chip baked French toast/bread pudding simply filling + 1sp I used a bread that was 4sp for 2 slices of bread so the smart points were 5sp!

Banana chocolate chip baked French toast

2 slices of Ezekiel bread or 3 slices light bread for simply filling or 2 slices of bread of your choice cut into cubes
1/4c egg substitute or 2 egg whites or 1 egg
2 Tbsp skim milk you may need more depending on the bread. You want it really wet but all the liquid soaked up in the bread cubes.
Sweetener I used 1 pkt
1 banana 3/4 mashed the other sliced thinly
50 mini semi sweet chocolate chips 1sp
1/4 tsp sugar 0sp

Put the cubed bread into a bowl.
In another small bowl add egg subsitiute, skim milk, sweetener and the mashed banana. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of almond breeze. Now add all but a couple of the banana slices and most of the chocolate chips leaving a few to sprinkle on top. Put into an oven proof dish. Put the extra banana slices and chocolate chips on top and sprinkle the sugar on top

I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) Sorry didn't look at the clock but around 25 minutes while I did other things. Time depends on what kind of bread you use the denser the bread it will take a little longer.

Carrot cake overnight oatmeal


Carrot cake overnight oatmeal 6pp without the raisins

1/4 cup almond breeze 0pp
1/4 cup 0% Greek yogurt I used plain but vanilla would also work well 1pp
1 small individual light vanilla yogurt 1pp
1/4 cup finely grated carrot 0pp
1/2 cup of oatmeal uncooked 4pp
1/4 tsp cinnamon 0pp
pinch of nutmeg 0pp
1/8 tsp ginger I love it so I used 1/4 tsp 0pp
sweetener to taste I used a bit of stevia

Optional: 13 grams or 1 1/2 Tbsp raisins 1pp

Mix all together and put in a mason jar or other covered container. Put into fridge the night before you want to use it. In the morning stir and enjoy :)

Pb chocolate chip overnight oatmeal

pb chocolate chip overnight oats 8pp or 7pp with using almond breeze

1/3c oats 3pp
1/2c skim milk 1pp
2 T pb2 1pp
small container of 0% vanilla yogurt 1pp
mini chocolate chips I used pb and semi sweet ones 15g 2pp
Mix altogether leaving some chocolate chips to sprinkle on top the next day. Put it fridge overnight and stir in the morning and top with leftover chocolate chips If too thick which mine wasn't you could add more skim milk. If you use almond milk that would bring it down 1pp.
