Individual frittata Simply Filling

I made this today and it was so good that I decided I needed to share :)

It's simply filling if you use ff cheese but we don't get that here and it was well worth 2pp for it. It's also great because you can use up whatever veggies and protein you happen to have in the fridge.

Really simple just put it in the toaster oven while you get ready in the morning and voila breakfast!

Individual frittata Simply Filling

  • 1 egg
  • 2 egg whites
  • baby spinach chopped
  • 3 cherry tomatoes sliced lengthwise
  • 2 slices extra lean ham chopped
  • green onion sliced
  • I put in 1 oz light cheese cubed for an extra 2pp if you use ff it would be sf
  • I know some people put ff cream in it but I didn't think it needed it.


Spray a small individual mini pie baking dish or any other small dish with non stick spray.

Beat the egg and egg whites together for a couple of minutes.

Put 2/3 of the egg mixture in the bottom of the dish.

Add the veggies then the ham, the green onion, the tomatoes and finally the cheese.

Pour the rest of the egg mixture on top.

I baked mine in my toaster oven at 375 for 20 minutes or until puffed up and set.

Breakfast roll ups!

Love these and they're easy to grab and carry when you're on the go in the morning :)

Breakfast roll up Simply Filling

2 eggs or 1 egg and 2 egg whites or 1/2c egg substitute or all egg whites whatever you like to use!
Canadian bacon or extra lean ham
fat free cheese if you want to keep it Simply Filling or light cheese if you don't mind using your points
1 light flatout I love these because they are BIG but if you don't have any a tortilla would work but wouldn't hold as much so maybe just 1 egg etc

Today: I used some chopped green pepper, onion, jalapeno and I like them cooked so I lightly sauteed them before I added them to the roll up :) ham, a slice of processed fat free cheese and 1 egg 2 egg whites

Other possible additions: fresh or leftovers
chopped peppers
chopped onions
chopped spinach
mushrooms
chopped tomato
jalapeno peppers
or any other veggies you have leftover or in the fridge :) This is a great way to eat them up

Slow cooker split pea and ham soup

One of my favorite soups.

Slow cooker split pea and ham soup Simply Filling or 5pp

1 pkg (16oz) dried split peas
2 cups of lean ham or back bacon diced
1 c carrot diced (didn't have any this time)
1/2c onion diced
1 cup of celery diced
2 garlic cloves minced
2 tsp dried parsley
1/4 tsp dried marjoram
1/4 tsp dried thyme
ground pepper
6 cups of low sodium fat free chicken broth (you can use water) add more if you want it thinner
salt to taste at the end of the cooking time

Put all into a slow cooker on low for 8 hours. Make sure to stir every now and then as the peas become thick on the bottom :)
