Double chocolate walnut kodiak muffins

Thanks again to @barbieb1 on Canadian weight watchers connect!

Double chocolate walnut kodiak muffins 1sp for 1/ 3sp for 2
Makes 6

2 ripe bananas mashed 0sp
2 eggs 0sp
1 Tbsp unsweetened cocoa 0sp
1/4c swerve sweetener 0sp
1/2c Kodiak buttermilk power protein waffle mix 5sp
7g walnuts 1sp
8g mini semi sweet chocolate chips 2sp

Mix bananas, eggs, cocoa and sweetener together. I used my hand blender.

Gently fold in the Kodiak powder.

Divide into 6 muffin wells. I use parchment paper liners.

Top with the walnuts and chocolate chips.

Bake at 350 for 20 minutes for my oven but when you start to smell the amazing muffins then check with a toothpick. Original recipe called for 25-30 minutes.

Very important to let cool because they taste the best when cooled.

Pb dip 1sp

Had this with some apple slices today and it was delish! Sorry I can't remember where I found it I think it was on the Canadian connect in Weight Watchers. If it's you please let me know so I can give credit.

Pb dip 2 servings of 1/4c 1sp
1/2 cup of plain fat free Greek yogurt 0sp
4 Tbsp pb2 2sp
your choice of sweetener I used swerve 0sp
1/2 tsp of extract could be vanilla or caramel etc I love it with the caramel one 0sp

Mix all together and put it into a small jar.

Serve with fresh fruit

Mason jar cheesecakes 1sp

I made this recipe that my buddy @lysall on Canadian weight watchers connect posted.


Mason jar cheesecakes 1sp

3 eggs 0sp
3c fat free plain Greek yogurt 0sp
1 Tbsp vanilla extract 1sp
1 package of sugar free fat free cheesecake pudding mix 4sp
2 Tbsp granular sweetener or whichever one you use 0sp

Mix all together.

I didn't use the right small mason jar as I didn't have 4 of them available so I use the next biggest size.
Divide mixture between 4 mason jar.
Take a baking pan and put the 4 mason jars in it and then pour water around the mason jars to half way full.
Put into a 325 oven for 40 minutes.

Take out and let cool then put into the fridge for 2 hours.

You can use any fruit topping but I used frozen strawberries that I add a tbsp of water and microwaved until hot then stirred in a mixture of 1 tsp cornstarch and 2 tsp of water. Put back into the microwave until hot and thick. Let cool.

When cheesecakes are cool top with the fruit mixture.

Cheesecake Simply Filling +1sp

There are a lot of different cheesecake recipes around but this is the one I like. No it's not real cheesecake but we are enjoying it :)

Cheesecake 8 servings Simply Filling +1sp (put into the ww's recipe builder) Up to 1/4 of it is still 1sp

3 cups of Plain fat free Greek yogurt
3 eggs
1 packet sugar free jello your choice of flavors
1 packet of sugar free fat free pudding your choice of flavors but if you choose chocolate I usually add extra cocoa powder
1/4c splenda or other baking sweetener

Mix all together well.
I use a paper towel with a little olive oil and wipe the inside of my springform pan. You could also use a baking dish.
Bake at 350 for 20 minutes and don't worry if it doesn't look set as it will as it cools.
Let it cool then put it into the fridge for at least 2 hours.
Top with your choice of toppings. I usually like some frozen berries that I heat up in the microwave and add a little cornstarch that has been mixed with a tsp of water. Put back into the microwave until hot and thick. Cool a bit then top the individual slices of cheesecake.

Strawberry chill 0sp or SF

I made this tonight for dessert and it was a hit with both the hubs and I!

Strawberry chill 0sp on Freestyle or SF

1/2c plain Greek yogurt
1/2c frozen sliced strawberries
I used my small blender and drizzled a little bit of water or you could use skim milk to get it started blending.
Because the strawberries weren't that sweet I added a bit of sweetener
Optional: 5g mini semi sweet chocolate chips 1sp

Brown rice pudding

Simply Filling if you use brown rice and skim milk or 4 sp for this recipe after being put in the recipe builder

Brown rice pudding 4 servings

1 1/2c cooked brown rice
1 3/4 cup vanilla almond breeze unsweetened skim milk for simply filling
3/4c egg substitute
1/4c baking splenda more or less depending on how sweet you like things or substitute your favorite sweetener
1 tsp vanilla extract

Warm the almond breeze/skim milk and the sweetener until almost simmering.

Add 1/2c of the warm milk mixture to the 3/4 c of egg substitute to warm it up.

Add back into the rest of the milk mixture stirring until at a simmer. Simmer and stir for 7 to 10 minutes.

Add in the cooked rice and vanilla extract and stir and simmer for another 5 minutes.

Let sit to cool stirring every now and then.

Put into the fridge to finish cooling. It will thicken as it cools.

Put into 4 individual bowls and top with fruit.

Individual no crust pumpkin pie Simply Filling

I make this when I'm craving pumpkin pie! I made this in an individual non stick bundt pan.

Individual no crust pumpkin pie Simply Filling count points for the whipped cream mine was 1sp

1/2c pure pumpkin
2 tbsp liquid egg whites
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
sweetener of your choice to taste I used 1 packet

Mix all together and put it into a non stick sprayed individual baking dish. I cooked mine in my toaster oven on 350 for 20 minutes. I just kept checking until it looked "set". When cool I turned it upside down to get out of the pan and put light whipped topping on top for 1sp.

Banana split 5sp or SF + 3sp

I decided to make this banana split for breakfast this morning :)

Banana split 5sp or SF + 3sp all depends on the ingredients you use.

1 banana cut lengthwise
Sliced strawberries either fresh or frozen and taken out of the freezer the night before and thawed in the fridge
Yogurt I used a light strawberry one
1/4c granola I used natures path hemp plus granola
Drizzle of sf ff chocolate sauce

Creamy sweet pineapple chill 2sp or simply filling

Made this tonight and to me it's just as good as ice cream and a lot better for me!

Creamy sweet pineapple chill 2sp or simply filling

1/2c fat free cottage cheese

1/2c of partially frozen pineapple I have used other frozen fruit and it all works great.
(Allow to sit at room temperature just so it's about 1/2 frozen so it will blend well)

sweetener to taste.

I put all in my bullet to blend until the consistency of ice cream.

Chocolate raspberry coconut crepes

Original recipe from Hungry girl but I tweaked a couple of things. Original recipe was 8pp this is 7pp.

Chocolate raspberry coconut crepes 1 serving of 2 crepes simply Filling plus 3pp or if following points plus 7pp

1/2c egg whites
2 Tbsp chocolate protein powder which I didn't have so I used a  plain whey protein powder and added unsweetened cocoa powder and some sweetener
1/8 tsp vanilla extract
1/8 tsp cinnamon

Whisk altogether until smooth. This is the crepe batter.

Pour 1/2 into a 10 inch pan and tilt the skillet. Will be thin. Carefully flip when first side is browned.
Make second crepe.

1/4c fat free vanilla yogurt
1 1/2 Tbsp shredded coconut
1 Tbsp of chocolate chips I used Krisda no sugar made with stevia

Mix well.
Gently fold in raspberries.

1 cup of raspberries

Put half of mixture into each of the crepes. Fold over and enjoy!

Fudgesicles

I love these in the summer! After putting them in the recipe builder they were 2pp each or 2 for 3pp

Fudgesicles 2pp or 2 for 3pp

1 box of sugar free fat free jello instant chocolate pudding mix
2 cups of skim milk
1 cup of 95% fat free cool whip thawed I use this because in Canada this is the lowest fat

Mix the pudding mix and the milk with a whisk until starting to thicken and no lumps then whisk in the cool whip.

Put into popsicle molds. The size of my popsicle mold made 7.

Put into the fridge until frozen.

Run warm water over the bottom of the mold when you want one to loosen the popsicle to make it easier to get out.

Banana Split Simply Filling


I love having this for breakfast it feels like I'm having something so decadent yet it's still very healthy for you!

Would be fun with kids choosing their own toppings

Banana split:
banana, strawberries, 0% Vanilla Greek yogurt, Ezekiel cereal, 4g chocolate chips 0pp and a drizzle of sugar free chocolate syrup 0pp = Simply Filling

Sometimes I chop up a fiber one brownie to put on top but I wanted to keep this to simply filling + 0pp

Berry cobbler cup simply filling


Single serve Berry cobbler cup Simply Filling or 1sp or 1pp

1 1/2 tbsp skim milk
2 tbsp of oat flour which is just oats ground up into flour
1 packet of truvia or other sweetener
1/4 tsp vanilla
1/4 tsp baking powder
1/3c of berries of your choice I used a mixture of blueberry and raspberry and blackberries
1/4 tsp sugar 0pp
Butter flavored spray

Coat a small baking dish with non stick spray
Put your berries in the dish
In a small bowl add the milk, oat flour, sweetener and baking powder and stir let sit a few minutes to absorb some of the liquid. pour on top of the berries.
Quick spray of butter flavored pam on top.
Sprinkle the sugar on top as it gives a nice bit of crunchiness

I put this in my toaster oven while I made lunch for approximately 15-18 minutes or until lightly browned.

Berry cobbler


Berry cobbler 2pp or simply filling

You could use any fruit for this but today I used frozen blueberries and frozen cherries.

Frozen fruit approximately 1/2 cup you could also use fresh fruit
1/4 cup of quick oats ground into flour
sweetener
1/2c approximately of diet clear soda I used diet 7up

Spray a 1 cup ramekin or baking dish with non stick spray
put the fruit in
mix the oatmeal and sweetener I used 1 packet
put the oatmeal on top of the fruit evenly
pour the pop slowly over the oatmeal if it fizzes let it settle before pour more on
I gave a quick spray of butter flavoured pam on top

I didn't do it this time but next time I'll sprinkle a little course sugar on top :) 0pp

I baked this in a 350 toaster oven for 30 minutes

This isn't overly sweet which is why I like it.

Apple berry cobbler Simply Filling

Loved this! The husband said it was amazing :)

Apple berry cobbler simply filling
This made 2 ramekins each was 1 portion

I took the blueberry scone recipe and omitted the blueberries and put it on top of apple/berries :)

1 small apple chopped smallish so they'd cook faster
8 frozen strawberries
1/3c leftover sugar free cranberry sauce

I put them all in a small pan. Of course you could use any berries you have on hand. Heated them until the strawberries were thawed and the apple starting to cook.

Divide between to ramekin dishes mine are the 1 cup size.

I then made this blueberry scone recipe but left out the blueberries. I took 1/3 of the recipe out and divided it between the ramekins and baked in a 350 oven for 25 minutes.

Then I added a few frozen blueberries to the rest of the recipe and poured it into a small glass baking dish to make 4 blueberry scones for later :)

Berry whip Simply Filling

Berry whip Simply Filling 2 servings or 1/3 for me and 2/3 for the hubs which is how it went today :)

1c frozen fruit of your choice today I made strawberry but I also love blueberry or cherry
1c fat free cottage cheese
drizzle of skim milk if needed

That's it!
Put the frozen fruit it first followed by the cottage cheese.
I just put this in my nutri bullet and whip it. If it's hard to get it started add a little skim milk.

This tastes just like cool whip and berries :) You can add a little sweetener if the fruit isn't very sweet.

Slow cooker pumpkin cheesecake 5pp


I won't copy out the whole recipe again so go HERE to find the recipe for this pumpkin cheesecake.

The only thing I did differently was because of the size of my slow cooker I put water in the bottom then I have a glass round baking dish that fits perfect and stays on top so that what I used and it came out great.

1/8 of the whole thing is just 5pp which is fantastic for cheesecake. I served it with some light whipped cream 0pp and 1 tsp real maple syrup 0pp :)

The first slice was a pain to get out but after that it was easy sailing!

Lemon cranberry banana bread

I tried this last week and tweaked a few things and it really didn't work out so I decided to try it again today.

I printed out this recipe and just tweaked a couple of things today. I replaced the sugar with sweetener and used lemon extract instead of orange. With the tweaks and making 3 mini loaves that had 6 slices each they came out to 1pp/slice.

Think of the possibilities: cocoa/white chocolate chip, banana pecan, pumpkin cranberry, lemon poppyseed etc

Lemon cranberry banana bread

Ingredients
1 cup of all purpose flour
1/2 cup of whole wheat flour
1/2c sweetener that measures like sugar
1/2 tsp vanilla vanilla extract
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup of egg substitute or 2 eggs
1/2 cup of unsweetened apple sauce
3 mashed very ripe bananas approximately 1 cup
1 tsp of lemon extract
1 cup of fresh or frozen cranberries cut in half
1 tbsp lemon zest

Directions:
mix together all dry ingredients
in a separate bowl mix eggs, applesauce, vanilla extract, lemon extract, lemon zest and mashed bananas
stir banana mixture into dry mixture then fold in cranberries
do not over stir, stir just till dry ingredients are incorporated
baked in 3 mini pans for 30 minutes at 350 degrees
loaves are done when toothpick comes out clean.

3 mini loaves 6 slices each

Individual Apple Crisp Simply Filling

I decided to play around with making an apple crisp which I love. Of course you can use other fruits like peaches, cherries, plums etc.

This is not overly sweet and has a crisp topping. Best eaten while still warm.


It's Simply Filling plus 0pp for the syrup and margarine
1 serving

Individual Apple Crisp
1 apple peeled and sliced
Sweetener of your choice
1/3c quick oats
1/2 Tbsp of water
1 tsp becel calorie reduced margarine 0pp or other light margarine or butter
1 Tbsp sugar free pancake syrup 0pp
1/2 tsp cinnamon divided in half

I used a 6" individual baking dish. Spray with non stick spray.

Lay the apple slices in the dish.  Sprinkle with 1/2 the cinnamon a little sweetener depending on how sweet the apple is and the water.

In a small bowl mix the oats, 1 Tbsp of sugar free pancake syrup, 1/2 the cinnamon and 1 tsp of light margarine. Mix with fingers until all mixed together.

Put on top of the apples. Cover with foil.

Bake for 20 minutes at 350. Take off the foil and bake another 5 minutes or until topping is crisp :)

Creamy cherry dessert cups

These are a nice way to get some dairy in. You can use any flavor you like.

Creamy cherry dessert cups Simply Filling
1 box of sugar free jello your choice of flavors
1 cup of boiling water

Mix both together for a couple of minutes.

Add 1 cup of light yogurt I only had Vanilla so that's what I used.

Whisk together then put into individual cups.

Top with 2 Tbsp ff/light whipped cream 0pp
