Lasagna Rolls Simply Filling

This recipe is simply filling or add points for the cheese. Since I can't get fat free in Canada I used light. The amount of light cheese I used came to 1sp/serving.
Sorry I didn't measure the sauce as it was SF use whatever sauce you consider SF

Lasagna Rolls Simply Filling +0sp  10 servings

I had leftover marinara sauce from this recipe and used it for the sauce approximately 3 cups
10 whole wheat lasagna noodles cooked and drained
1 cup fat free cottage cheese
2 Tbsp light parmesan cheese when divided between 10 servings is 0sp
2 tsp Italian seasoning
1 lb extra lean ground chicken or turkey cooked
I used 3/4c light mozzerella shredded cheese

To make this easier to spread on the cooked noodles I put the cooked ground meat and some of the sauce, approx 1 cup, in my bullet to make it smooth.

Mix the cottage cheese, 1 tbsp of the light parmesean cheese and the Italian seasoning.

On each of the whole wheat lasagna noodles spread some of the meat/sauce mixture.

On top of the meat mixture put some of the cottage cheese mix.

Spray an 11x13 pan with non stick spray.

Roll each of the noodles up and place in the pan.

Spread the rest of the sauce on top of the rolls. I covered with foil and put into a 350 oven for 20 minutes. Took the foil off and put some light cheese on top of each roll then sprinkled the other tbsp of light parmesan cheese.

Put back into the oven for 10 minutes.

One pot chicken chow mein Simply Filling

I had a couple of chicken breasts in the fridge and I wanted some inspiration on what to cook with them. So I went on google and found this recipe.

I didn't want to cook that much and I wanted to make it even easier so I definitely tweaked it quite a bit.

I also used my electric pressure cooker but you could use a slow cooker or do it on the stove top. I wanted to make it quick so this is how I made it.

One pot chicken chow mein Simply Filling

2 chicken breasts cuts into small cubes
1/2 package of whole wheat spaghettini  or you could use any shape of whole wheat pasta I broke my in half for smaller pieces
2 cups chicken broth I made my own and used that
1 tsp olive oil which I'm not sure why that's in there
2 tbsp low sodium soy sauce
2 cloves of garlic which I didn't have so I just used powdered
a couple of drops of fish sauce which isn't necessary but I like it
Instead of sugar I added one sweetener
1 package of frozen mixed Asian vegetables
Chopped green onion

I didn't but you might want to spray non stick on your pan first.

Put the broth, chicken, pasta, soy sauce, olive oil, garlic and sweetener in pot.
I cooked it on the rice setting for 10 minutes.
Released the steam and stirred.
Added the Asian vegetables which mine were partly thawed.
Cooked for another 2 minutes.
Released the steam and voila
Dinners ready.
Served with chopped onion on the top.

Turkey or chicken meatloaf

Thanks to my friend Kimberley for this recipe!

Turkey or chicken meatloaf 4 servings 6pp each

1 box of stove top turkey or chicken stuffing mix
1 lb of extra lean ground turkey or chicken
2 eggs if you want lower points you could use egg substitute
I added a tsp of poultry seasoning as I love it

I used 4 mini foil loaf pans sprayed with non stick

Mix all ingredients and divide into the 4 mini loaf pans.
Bake at 350 for 30 minutes

I added 1 tbsp of Kraft calorie wise bbq sauce on each one which is 0pp

Chicken orzo soup

I was given permission by Thea-Lee Stottle

Chicken orzo soup makes 8x1 cup servings
Simply filling if you use chicken breast an whole wheat orzo or 3pp for 1 cup

2 cups of cooked chicken or turkey
2 x 32oz containers of fat free low sodium chicken broth or a chicken carcass boiled for the broth
4oz or 1/2 cup of uncooked orzo pasta
1 12oz bag of frozen mixed vegetables
1/4c flour to thicken
1 chopped onion
1 celery stalk chopped
1 tbsp poultry seasoning
1 tbsp dried rosemary
Check the flavor and add chicken bouillion if needed. I didn't need it

Now you can make this in a pan or do what I did and throw everything in the crockpot except the orzo put that in 30 minutes before you want it ready :)

Cook on low for 6-8 hours
Doesn't show in the picture but it's got loads of veggies/chicken and pasta!

Turkey or Chicken Caesar salad Simply Filling + 3pp

This salad is what I consider a good reason to use a few weekly points :)

Turkey or Chicken Caesar salad Simply Filling +3pp

Lilydale pre-cooked Turkey or Chicken breast
Romaine lettuce
2 slices of President's choice pre-cooked bacon heated in the microwave 1pp
7g President's choice sour dough Caesar croutons 1pp
2 Tbsp of President's choice blue menu light Parmesan cheese today I didn't have any so I used 15g light cheese either one is 1pp
Renee's fat free Caesar salad dressing 0pp if you don't like fat free use the light and adjust the points
Today I needed to get my oils in so I added 2 tsp olive oil to the dressing plus some lemon juice.

Hint: I put the lettuce, the Turkey and the dressing with oil in a large container with a lid and shake, shake, shake and it really helps to coat each piece of lettuce with dressing :)

Top with the cheese, crumbled bacon and croutons.

Chicken noodle soup simply filling style

Someone asked about my recipe and really it's not a recipe but I'll tell you how I did it :)

Chicken noodle soup simply filling style

I freeze leftover chicken to use for this I used a cup or so of chopped chicken
I buy no name lower sodium chicken broth
I chopped or sliced up peppers, celery, onion, carrots, mushrooms and sundried tomatoes
very thin whole wheat spaghetti noodles
Paul Prudholmes salt free seasoning
Garlic powder

Honestly just put it all in a pot. Bring it to a simmer and leave until noodles are cooked.
