I wanted to try something new today and I love it! Not really a recipe I just through it all together :)
Black bean and corn salad Simply Filling
1 can of black beans rinsed well
2 cups of corn (I used frozen and thawed them but you can use fresh or canned)
1/2 onion chopped (I would have used red but don't have any left)
1 jalepeno pepper with seeds removed and chopped finely
1 cup cherry tomatoes halved
1/2c cilantro (I love it but if you don't use less or none)
juice of 1 lime
I added sriracha lime seasoning that I found in the store this week. Sorry I didn't measure.
You could also add olive oil if you needed to get your oils in for the day :)
Mix all together and put in the fridge for a couple of hours.
Simply filling

Summer salad
This would be simply filling + however much avocado you use.
On points plus it worked out to 6pp
Summer Salad 1 serving you could always make more
Chopped cucumber
halved cherry tomatoes
1/2c black beans I used no salt ones
1/4c corn I used no salt ones here as well
50g avocado
lime juice, sea salt and pepper
Mix together and squeeze the lime juice, sea salt and pepper and toss gently.
Enjoy

Slow cooker black bean soup simply filling
Thanks Ida for passing along this Weight Watcher recipe! The only change I made was that I threw it all in my slow cooker :) Items in the red were add in's that I added but weren't in the original recipe
Black bean soup
- 1 med onion, chopped
- 29 oz chicken or vegetable broth (reduced sodium)
- 15.5 oz black beans, drained and rinsed next time I'd add 2 cans of black beans
- 11 oz corn
- 15.5 oz tomatoes with green chilies
- ½ c uncooked brown rice I just used leftover cooked brown rice that I added just a bit before I served it
- garlic I added 3 cloves chopped
- cilantro to taste which I added
Red pepper flakes (Optional)
Sauté onion in broth. Add all ingredients. Bring to boil. Cover and simmer for 50-60 minutes until rice cooks. I just threw everything in the slow cooker
6 servings. 3 pts each. If you are counting points
