Healthy banana pancakes

Tried a new to me SF pancake recipe. I'm sorry I don't where it originally came from.

This was 1/2 the recipe and I froze the other 1/2 for another day.

Peach pie overnight oatmeal

This I figured out to Simply Filling + 1pp

Peach pie overnight oatmeal

1/2c oatmeal either steel cut for crunch or rolled oats uncooked
1/2c skim milk
1 peach
2 tsp maple syrup 1pp
1 tsp chia seeds
1 tsp hemp hearts
1/2 tsp cinnamon
pinch of nutmeg

Mix all together in a jar the night before or make several for breakfasts through the week :)

I slightly changed the recipe to be simply filling and I like more peach! The original recipe is here.

Lemon vinaigrette

I made this the other day and it was a really nice change :)

Lemon vinaigrette

  • 1/3 cup olive oil
  • Juice of 1 large lemon
  • 2 tsp maple syrup or raw honey
  • 1 tsp dijon mustard
  • 1 small garlic clove minced

  • I just put all of the ingredients in a mason jar and used my stick blender.

    Lemon cranberry stuffed French toast

    I was going to make lemon raspberry stuffed French toast and realized I didn't have any raspberries!!

    So last night while I was making dinner I popped 1/2c frozen cranberries and a couple of tbsp of water plus sweetener in a glass measuring cup and put it in the microwave until the cranberries burst and it was nice and thick. Put in the fridge until tomorrow.

    Lemon cranberry stuffed French toast SF + 1pp for the cream cheese
    2 slices of ezekiel bread (I count it as SF)

    2 Tbsp light organic cream cheese (just the one I use) 1pp mixed with a little lemon zest and lemon extract and sweetener.

    Leftover cranberry sauce I make mine with splenda so it's 0pp

    1 egg plus a little skim milk, some vanilla extract and sweetener whisked together (you could use egg whites if  you like)

    1 tsp of maple syrup 0pp

    Take the 2 slices of bread and carefully dip each side in the egg mixture. Cook in a pan that has been sprayed with non stick spray or a little oil. Carefully turn when one side is brown.

    When both slices are cooked divide the cream cheese between both slices and spread the cranberry sauce on top of one and put the other slice on top.

    Serve with a tsp of real maple syrup for 0pp :)

    Hot oat bran

    Hot oat bran cereal on a cold day is amazing!

    I cooked mine in a cup of skim milk to get some dairy in.

    This is the way I make it and it never comes out lumpy.

    I put 1 cup of skim milk in a small pot and added 1/3c of quaker oat bran and a bit of sweetener to taste.
    Turn the burner on medium and keep stirring :) When it was almost thick enough I added a splash of vanilla extract and some chopped up banana leaving a bit of banana to put on top!
    When thick pour into a bowl, add leftover banana on top and today I added a tsp of sugar free chocolate chips 1pp.

    Simply Filling plus 1pp for the chocolate chips or any other add on's

    Instant pumpkin ice cream!

    I saw this recipe here and new I had to make it! The only change I made was to use light coconut milk. Oh and it said it made 4 servings but I made 2 :)

    Instant pumpkin ice cream 2 servings 3pp each

    1/2c light coconut milk
    1 cup pumpkin puree frozen in an ice cube tray
    2 tbsp maple syrup
    1 tsp pumpkin pie spice
    1 banana frozen in chunks

    Allow the frozen pumpkin cubes to sit at room temperature for 10 mins or so then process everything in a food processor. I used my Nutribullet.


    Crockpot beef vegetable and barley soup

    Found this fantastic recipe at Skinny Kitchen! Simply Filling or 4 points plus

    I did tweak it a little as I don't really like zucchini in soup and used extra lean ground beef and less broth but other than that it was fantastic!

    1 lb extra lean ground beef
    3/4c dried barley
    2 tetra packs of low sodium fat free beef broth (not quite 2 as it didn't fit in my crockpot)
    1 15oz can of diced tomatoes I bought the one with garlic and black pepper
    1 big carrot sliced thinly on my mandoline
    1 onion shredded thinly
    2 big handfuls of baby spinach which I forgot to put in :(
    2 stalks of celery
    2 cloves of garlic
    2 tbsp Worcestershire sauce
    1 bay leaf
    1/2 tsp dried thyme
    1/2 tsp dried sage
    pepper

    Brown the ground beef and strain to get rid of the excess fat. Add the beef and all the rest of the ingredients to your crockpot. Turn on low for 7-8 hours.

    One serving is 1 1/2 cups :) 4pp or simply filling






    Corn Salad 2sp

    I just made an individual amount for me so if you make more than one serving it might change the points. Corn Salad 2sp 1/2c corn which...
