This is the best sauce ever! I make it and I freeze it for use later on. It's very versatile and your house will smell wonderful while it's cooking :)

Cowboy's dinner Simply Filling
I do add cheese to this so I add 1sp to it. Original recipe here. I tweaked it :)
Cowboy's dinner
Put 1 tsp of garlic powder and 1 tsp of salt aside for the potatoes.
Put the tbsp of olive oil in a non stick pan and cook the potatoes. Add the Garlic and the salt.
Set aside.
Brown beef in the pan.
Add the seasonings cook for a couple of minutes then add the tomato sauce, potatoes, pinto beans, cilantro, and potatoes.
Stir together to warm up and serve with your choice of toppings.

- 6c of potatoes diced small
- 1 lb extra lean ground beef
- 8 oz tomato sauce
- 1 can of pinto beans well rinsed
- 15oz corn
- 1 tsp smoked paprika
- 2 1/2 tsp cumin
- 1/2 tsp oregano
- 1 tsp of salt for potatoes
- 2 tsp chili powder
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil

Taco boats
If you are in the U.S and have ff cheese or leave off the cheese (oh the horror) they would be Simply Filling. I used light cheese so I added 1sp.

Leftover taco meat mix (I froze it for later)
Plain fat free Greek yogurt or fat free sour cream
Salsa
Green onions
Jalepeno's
1/3 serving of finely grated light cheese 1sp
Warm up the taco meat. Put into endive leaves. Add the other ingredients and voila easy peasy lunch or appetizer :)

Black bean and corn salad Simply Filling
I wanted to try something new today and I love it! Not really a recipe I just through it all together :)
Black bean and corn salad Simply Filling
1 can of black beans rinsed well
2 cups of corn (I used frozen and thawed them but you can use fresh or canned)
1/2 onion chopped (I would have used red but don't have any left)
1 jalepeno pepper with seeds removed and chopped finely
1 cup cherry tomatoes halved
1/2c cilantro (I love it but if you don't use less or none)
juice of 1 lime
I added sriracha lime seasoning that I found in the store this week. Sorry I didn't measure.
You could also add olive oil if you needed to get your oils in for the day :)
Mix all together and put in the fridge for a couple of hours.
