Pumpkin butter creamy cranberry stuffed French toast Simply Filling +3 sp
Points will depend upon the pumpkin butter, cream cheese and cranberry sauce you choose

2 slices of bread I use Ezekiel as it's a power food here in Canada
1 egg, 2 egg whites or egg substitute
2 tbsp skim milk
2 Tbsp 95% ff cream cheese 1 sp 
Pumpkin spice 1/8 tsp
Sweetener of choice
2 Tbsp home made pumpkin butter 1 sp
1 tbsp home made sf cranberry sauce
1 tsp oil
1 Tbsp sf pancake syrup to put on top 1 sp

Mix the cream cheese with some sweetener, I used a pinch of stevia, and a pinch of pumpkin spice.
Spread the cream cheese on each slice of bread.
Top each slice of bread with 1 Tbsp pumpkin butter.
Top one slice of bread with 1 Tbsp sf cranberry sauce
Now place on slice on top of the other slice with all the fixings in the middle.

In a flat container mix the egg with the skim milk, sweetener of choice and pumpkin spice all together.
Now carefully place the bread in the egg mixture and allow to sit for a minute or so then carefully turn over and let the other side soak for a minute or two.

Put 1 tsp of oil in a frying pan and heat on medium. Carefully put the bread in the pan and allow to cook until browned on the one side. Carefully turn over and brown the other side.

Serve with 1 Tbsp sf pancake syrup or syrup of your choice.

Pumpkin cranberry baked oatmeal simply filling + 0sp



Pumpkin cranberry baked oatmeal 5pp, or simply filling or 4sp

1/3c uncooked quick oats
1/4c egg whites or 2 egg whites
1/4c skim milk
1/4c pure pumpkin
1/2 tsp pumpkin pie spice I like a lot so you may want less
sweetener to taste depends on how sweet you like it 1-2 packets
1/2 tsp baking powder
1/4c frozen or fresh whole or chopped cranberries
1/4 tsp sugar to sprinkle on top for a bit of crunch

I mixed all except the sugar. Put it into a ramkin or small baking dish. I oil mine first or use non stick spray. Sprinkle sugar on top. Update I let it sit a few minutes to soak up the liquid. 

I baked mine in my toaster oven at 375 for 25 minutes. You could bake this in the oven if you're cooking something else and then reheat in the microwave.

Egg, feta, tomato mini quiches

I saw this and was inspired to come up with my own recipe :)

I ate the whole serving and loved it!

Egg, feta, tomato mini quiches 5pp or Simply Filling plus whatever cheese you use

1 egg
2 egg whites
1 oz feta cheese crumbled or goat cheese
5 fresh basil leaves finely sliced although you could use dried
1 1/2 cocktail size tomatoes or you could use roma or even large cherry tomatoes
sea salt and ground pepper to taste

Beat the egg and the egg whites then add the crumbled cheese and the basil, salt, pepper.
I used parchment paper in muffin tins which are amazing because food never sticks to them but you could use oil.
Fill 3 muffin tins about 1/2 to 2/3 of the way full.
Place 1/2 piece of the cocktail tomatoes into each muffin tin.

I baked mine in my toaster oven at 375 for 23 minutes. When they are puffed up and slightly brown they are done :)

Cantaloupe ice cream Simply Filling

O.k it's not ice cream but it hit the spot on this hot and humid day!

Cantaloupe ice cream 1 serving simply filling

1 cup of milk of your choice
1 cup of cantaloupe chunks frozen the riper you use the sweeter it tastes
I used a pinch of stevia

That's it!
Just take the cantaloupe out of the freezer 5 minutes or so before you want to use it and put into a blender (I used my bullet) add the milk and the sweetener.

If it's hard to process because your cantaloupe is too hard just drizzle a little more milk in.

Breakfast parfait Simply Filling

Today I put 5g slivered almonds on top for an extra 1pp

Breakfast parfait Simply Filling

I used 2 small individual containers of 0% vanilla Greek yogurt
1/2c blueberries
1/4c raspberries
1 small banana sliced
2 Tbsp Ezekiel original cereal

Put one of the containers on the bottom of the mason jar then top with 1/2 of the blueberries, 1/2 of the raspberries, 1/2 of the banana slices and 1 Tbsp of the Ezekiel cereal.

Repeat.

Done! Enjoy

Chocolate salted caramel oatmeal

I made this today and it was sooooo good :) Definitely will be having again!

Chocolate salted caramel oatmeal 7pp or SF + 2pp

1/2c oats I used quick oats today
1/2 cup of water
1/2 cup of milk or almond milk
1 Tbsp of cocoa I use dark cocoa
sweetener to taste I used 2 packets
1/2 Tbsp chocolate chips
1/2 Tbsp of caramel dip I used marzetti I put it in the microwave for 6 seconds to warm it up
pinch of coarse salt I used kosher

Put the oats, water, milk, cocoa and sweetener in a small pot and bring to a simmer. Simmer for a few minutes until thickened.
Pour oat mixture into a bowl and top with the chocolate chips, caramel and salt.

Summer salad

This would be simply filling + however much avocado you use.

On points plus it worked out to 6pp

Summer Salad 1 serving you could always make more
Chopped cucumber
halved cherry tomatoes
1/2c black beans I used no salt ones
1/4c corn I used no salt ones here as well
50g avocado
lime juice, sea salt and pepper

Mix together and squeeze the lime juice, sea salt and pepper and toss gently.

Peanut butter, banana and chocolate chip bowl

I had this with some scrambled egg whites today! Delish and filling

Peanut butter, banana and chocolate chip bowl Sf + 3pp or 6pp

I used 2 individual Our Finest 0% plain Greek yogurt from Walmart
2 tbsp pb2
sweetener to taste
chopped banana
1 tsp mini semi sweet chocolate chips
1/2 Tbsp caramel dip

Mix the plain Greek yogurt with the pb2 and sweetener if you use it.
Chop banana and put it on top.
Sprinkle the mini chocolate chips on top.
And add the caramel

Cherry almond baked French toast


Cherry almond baked French toast Simply Filling + 1pp or 7pp all depends on the bread you use.

2 slices of Ezekiel bread
1/4c egg substitute or egg whites or if doing simply filling 1 egg beaten
2-3 Tbsp skim milk you want to make the bread wet but not too soggy
sweetener to taste
1/2c frozen cherries thawed
1/2 tsp vanilla extract or almond extract
7 grams of slivered almonds
1/2 tsp of turbinado sugar or large grain sugar to sprinkle on top for crunch :)

Cut the bread into cubes.
Mix the egg, milk, vanilla extract and sweetener together then pour over the bread cubes. Toss carefully to wet all the cubes.
Add the cherries saving a few to put on top.

Spray a small baking dish with non stick spray.
Pour the bread mixture in.
Top with a couple of the cherries, the almonds and lastly the sugar.

I baked mine in my toaster oven at 375 for 20-25 minutes or until browned.

Lemon Cherry Almond overnight oats

Made this the night before and it was delish!

Lemon cherry almond overnight oats Simply Filling +1pp or 8pp

1/2c uncooked oats
1 individual container of 0% lemon Greek yogurt
3/4c frozen no sugar cherries thawed
1/3c skim milk or almond milk
5g slivered almonds
sweetener if desired I used some because I like it sweet

The night before:
take out the cherries to thaw in the fridge overnight
mix the oats/yogurt/milk/sweetener in a separate container and put in the fridge overnight

Next morning:
layer the oat mixture and the cherries x 2
top with the slivered almonds

Overnight pumpkin flax oat bowl from hungry girl

If you're doing simply filling it's Simply Filling  2pp
Points plus it's 6pp

Found this on Hungry Girl and tweaked it a bit.

Overnight pumpkin flax oats
1/2c fat free vanilla Greek yogurt
1/4c old fashioned oats
1/3c canned pure pumpkin
2 Tbsp unsweetened vanilla almond milk
1 Tbsp ground flax meal
2 sweeteners
1/2 tsp pumpkin pie spice
1/4 tsp vanilla extract
8 grams of slivered almonds

Mix all ingredients except almonds in a medium bowl or jar, cover and refrigerate overnight.
Next morning stir and top with almonds.

Turkey or chicken meatloaf

Thanks to my friend Kimberley for this recipe!

Turkey or chicken meatloaf 4 servings 6pp each

1 box of stove top turkey or chicken stuffing mix
1 lb of extra lean ground turkey or chicken
2 eggs if you want lower points you could use egg substitute
I added a tsp of poultry seasoning as I love it

I used 4 mini foil loaf pans sprayed with non stick

Mix all ingredients and divide into the 4 mini loaf pans.
Bake at 350 for 30 minutes

I added 1 tbsp of Kraft calorie wise bbq sauce on each one which is 0pp

Peach ginger almond breakfast parfait simply filling plus 1pp or 7pp

If following simply filling use skim milk

Peach ginger almond breakfast parfait SF + 1pp or 7pp
Serves 1

1/3c old fashioned oats
3/4c skim milk
1/2c water
1/4 tsp ground ginger
sweetener to taste
1/2 tsp vanilla extract

Put all in a small pan and bring to a boil and then turn down to simmer until thick and creamy. Allow to cool then put in a covered container overnight in the fridge.

Next morning assemble the parfait.

1/2c fat free vanilla yogurt
1 peach chopped
5g slivered almonds

Layer half the oatmeal mixture then the yogurt then the peach.
Repeat.
Top with slivered almonds.

Fruit and tuna salad from Hungry Girl

From Hungry Girl:

Fruit n tuna salad Simply Filling +3pp

4 cups of lettuce
1 1/2 Tbsp light mayo
1 Tbsp fat free plain Greek yogurt
salt and pepper
4 oz tuna in water drained 1 can
1/4c chopped apple
1/4c chopped grapes
1/4c chopped cucumber I just used 1 mini one
1 Tbsp craisins I used low sugar ones
2 Tbsp Bolthouse balsamic vinaigrette

Put mayo, yogurt, salt and pepper in bowl and mix well. Add all other ingredients except vinaigrette and stir to coat.

Put tuna mixture on top of lettuce in a large bowl. Drizzle with vinaigrette or serve on the side.

Simply Filling + 3pp Depending on the ingredients you use.
Hungry girl calculates 7pp if you're doing points plus

Black Forest oatmeal from Hungry Girl

Found this great recipe from Hungry Girl

Black Forest oatmeal Simply Filling + 1pp or 7pp

1/2c old fashioned oats which you must use for this
1 Tbsp unsweetened cocoa
1/8 tsp cinnamon
1/8 tsp salt which I don't add
1 cup almond breeze if doing simply filling you can use skim milk
1 cup water
2 sweeteners
1/3c chopped cherries frozen or fresh
1/2 Tbsp mini chocolate chips or regular chocolate chips
optional: 2 drops of almond extract

Add oats, cocoa, salt, milk and water and almond extract if using into a sauce pan and bring to boil. Lower heat to simmer and stir for 12-15 minutes or until thick and smooth.

Take of off heat stir in sweetener and pour into bowl to cool a bit and thicken even more.

Top with cherries and chocolate chips.

Chocolate raspberry coconut crepes

Original recipe from Hungry girl but I tweaked a couple of things. Original recipe was 8pp this is 7pp.

Chocolate raspberry coconut crepes 1 serving of 2 crepes simply Filling plus 3pp or if following points plus 7pp

1/2c egg whites
2 Tbsp chocolate protein powder which I didn't have so I used a  plain whey protein powder and added unsweetened cocoa powder and some sweetener
1/8 tsp vanilla extract
1/8 tsp cinnamon

Whisk altogether until smooth. This is the crepe batter.

Pour 1/2 into a 10 inch pan and tilt the skillet. Will be thin. Carefully flip when first side is browned.
Make second crepe.

1/4c fat free vanilla yogurt
1 1/2 Tbsp shredded coconut
1 Tbsp of chocolate chips I used Krisda no sugar made with stevia

Mix well.
Gently fold in raspberries.

1 cup of raspberries

Put half of mixture into each of the crepes. Fold over and enjoy!

Banana walnut quinoa hot cereal

Found a cherry almond quinoa recipe from Healthy Girl but didn't have either so I came up with this one :)

Banana walnut quinoa hot cereal Simply Filling +1pp for the walnuts
1 serving

1/4c uncooked quinoa
1/4 tsp cinnamon
1/4 tsp vanilla extract
1/2c skim milk
1 cup water
1/4c egg whites
sweetener to taste
1 small banana sliced leaving a few to put on top
5g walnuts bits

Put quinoa, cinnamon, vanilla, skim milk and water in a non stick pot and bring to boil then reduce to a simmer. Stirring continuously, slowly add egg whites.
Cook and stir until thickened and creamy 14-16 minutes.
Stir in sweetener and banana. Put extra slices of banana on top and walnuts.
Let sit until cooler and thickened.
Enjoy!

Fudgesicles

I love these in the summer! After putting them in the recipe builder they were 2pp each or 2 for 3pp

Fudgesicles 2pp or 2 for 3pp

1 box of sugar free fat free jello instant chocolate pudding mix
2 cups of skim milk
1 cup of 95% fat free cool whip thawed I use this because in Canada this is the lowest fat

Mix the pudding mix and the milk with a whisk until starting to thicken and no lumps then whisk in the cool whip.

Put into popsicle molds. The size of my popsicle mold made 7.

Put into the fridge until frozen.

Run warm water over the bottom of the mold when you want one to loosen the popsicle to make it easier to get out.

Banana Split Simply Filling


I love having this for breakfast it feels like I'm having something so decadent yet it's still very healthy for you!

Would be fun with kids choosing their own toppings

Banana split:
banana, strawberries, 0% Vanilla Greek yogurt, Ezekiel cereal, 4g chocolate chips 0pp and a drizzle of sugar free chocolate syrup 0pp = Simply Filling

Sometimes I chop up a fiber one brownie to put on top but I wanted to keep this to simply filling + 0pp

Individual pumpkin pie simply filling or 0pp

Individual pumpkin pie simply filling or 1pp with egg whites

1/2c pure pumpkin
3 T egg substitute or 1 egg white
1 tsp pumpkin pie spice
1-2 sweeteners depending upon how sweet you like things

Mix altogether. Pour into a non stick sprayed bowl or cup. Microwave on high for 2 minutes. I ended up putting it in 25 seconds longer as I have a weak microwave. Let cool a few minutes and optional top with fat free whipped cream. I used Greek yogurt mixed with a little sweetener and pumpkin pie spice.

Berry cobbler cup simply filling


Single serve Berry cobbler cup Simply Filling or 1sp or 1pp

1 1/2 tbsp skim milk
2 tbsp of oat flour which is just oats ground up into flour
1 packet of truvia or other sweetener
1/4 tsp vanilla
1/4 tsp baking powder
1/3c of berries of your choice I used a mixture of blueberry and raspberry and blackberries
1/4 tsp sugar 0pp
Butter flavored spray

Coat a small baking dish with non stick spray
Put your berries in the dish
In a small bowl add the milk, oat flour, sweetener and baking powder and stir let sit a few minutes to absorb some of the liquid. pour on top of the berries.
Quick spray of butter flavored pam on top.
Sprinkle the sugar on top as it gives a nice bit of crunchiness

I put this in my toaster oven while I made lunch for approximately 15-18 minutes or until lightly browned.

Cottage cheese oatmeal pancakes simply filling or 6pp


Cottage cheese oatmeal pancakes simply filling or 6pp for the whole recipe

1/3 cup oatmeal uncooked
1/3 cup fat free cottage cheese
1/4 cup egg whites
1/2 tsp baking powder
1 tsp vanilla
1 packets sweetener I used Truvia

Add cottage cheese, egg whites, baking powder, vanilla and sweetener and oats to bullet or blender. Blend till smooth.
Make sure to brown before turning over carefully.
I added a sliced banana but you could leave it out or add other fruits.

Spinach/onion/feta/egg breakfast wrap

Now whether you count points for the wrap/cheese would depend on which ones you use. Your choice. I counted this as simply filling.

Spinach/onion/feta/egg breakfast wrap
1 wrap I usually use La Tortilla but I had some low carb low sodium ones that I used
1 egg
1/4c egg whites
1 tsp oil
2 handfuls of baby spinach which I tore up by hand while adding it in
1 tbsp finely chopped onion you could also use green onion
20g light feta cheese

Heat the oil and add the onion and lightly saute.
Add the egg and egg white stirring till cooked.
Add the spinach and the egg and lightly stir and let sit a minute to let the spinach wilt a bit.

Put mixture into the middle of a tortilla and fold.

Shepherds pie 8pp

This is quick to put together and yes I used instant mashed potatoes you can use regular potatoes and figure the pp for that change.

Shepherds pie 6 servings 8pp if you use potatoes and extra lean beef you could easily make this simply filling.di

  • 1 lb extra lean ground beef
  • 1 tsp olive oil
  • 1 medium onion chopped
  • 1 large stalk of celery chopped I used 2 today :)
  • 2 cloves of garlic chopped
  • 1 tsp rosemary
  • 10oz bag of mixed frozen vegetables
  • 1 cup of water
  • 1 packet of lower sodium beef gravy mix


  • 2 cups of Idahoan original instant mashed potatoes
  • 1 cup of skim milk
  • 2 cups of water
  • 4 tsp light margarine
  • salt if you like but I leave it out


Add the olive oil to a saucepan on med high and saute the onion, garlic and celery. Remove from pan. Next cook the ground beef until nice and browned.
Add back the onion/garlic/celery and also add the frozen mixed vegetables,  the cup of water and the gravy packet.. Bring to a simmer and cook until thickened. Turn off and put aside.

Heat the water and the margarine until starting to boil. Add the cold milk. Stir in potato but don't whip. Let sit for a couple of minutes.

Spray a casserole dish with non stick spray and and add the meat mixture.
Top with the potato and smooth evenly. I did sprinkle a little more montreal steak spice and a bit of smoked paprika on top.

Optional you could sprinkle with cheese but I left this out.

Bake in a 375 oven for 30 minutes or until nicely browned.

Big Mac Salad

I have made this a couple of time and love it!

Big Mac Salad 5pp or use extra lean beef and fat free cheese and you'd just count the dressing for SF
3 cups of chopped romaine lettuce
1/3c I used Mexican veggies ground round crumbles 2pp
30g light cheese 2pp
green onion
cherry tomatoes
2 Tbsp Kraft calorie wise thousand island dressing 1pp
1 lower sodium chopped up pickle

As with any recipe the points will depend upon the products you use.

Update

Since I'm doing points plus right now I'll be posting some recipes with the points plus numbers. These can usually be made into simply filling dishes as well. Just count anything that's not a power food or substitute a power food for ones that aren't.

Cold spaghetti pasta salad

Thanks to Thea-Lee Stottele for sharing her recipe!

Depending on your pasta and your sauces if  you're doing sf you'd just have to count the parmesan cheese and the shredded cheddar unless it's fat free.

So if  you use whole wheat pasta, pasta sauce with no sugar, fat free Italian dressing, parmesan cheese and light shredded cheddar cheese it would be Simply Filling + 1pp.

Or for points plus I counted 5pp for 1 cup and bulked it up by adding 1 cup of steamed broccoli that I'd cooled before adding in. A very filling lunch! Next time I might add mushrooms and peppers :)

Cold spaghetti pasta salad Makes 5x 1 cup servings 

5 oz of whole wheat thin spaghetti/spaghettini noodles cooked el dante
1/2 jar of pasta sauce I used a blue menu one
1/3c fat free Italian dressing I lowered the amount from the original recipe
1/4c parmesan cheese
1/4 tsp crushed red pepper flakes
1/4c chopped red onion
1/4c light shredded cheddar cheese
1/2 cup of cherry tomatoes cut in half
The original recipe also called for olives which I left out because of sodium

Break up your pasta before cooking and add to boiling water. Cook until just done. Drain pasta and put into large bowl. Add all other ingredients. Toss and put into the fridge for at least 2 hours I put it in overnight. Stir it up before serving.

Meatball spinach tortellini soup

I saw a recipe on skinnytaste.com which I tweaked.

I cheated and bought the lean Italian meatballs from president's choice blue menu which really made this an easy and quick put together soup.

Meatball spinach tortellini soup 6 servings of 1 1/2c and each has 4 meatballs 7pp per serving
For Simply Filling the only ingredients I would count would be the tortellini and parmesan cheese if you choose put it on. Points depend on which tortellini you buy.

president's choice blue menu lean Italian meatballs 24 or 4 per serving
2 tsp olive oil
2 stalks of celery chopped
1 small onion chopped
2 cloves garlic minced
1 large carrot peeled and I used my julienne peeler to shred it
2x 900 ml or 30oz boxes of lower sodium chicken broth
100g olivieri tortellini three cheese
3 cups of baby spinach torn

Melt butter then saute celery, onion, carrot and garlic until veggies are beginning to soften.
Add broth and increase temperature until boiling.
Reduce heat and add the meatballs and the tortellini.
Simmer for 7-8 minutes or according to directions on your tortellini.
Add the baby spinach and simmer for a minute or two.

You may like to add parmesan cheese on top once it's in the bowls that would be an extra 1pp

Makes 6 x 1.5c servings
7pp per serving without the parmesan cheese

This was so good the hubs had 2 servings :)

Berry cobbler


Berry cobbler 2pp or simply filling

You could use any fruit for this but today I used frozen blueberries and frozen cherries.

Frozen fruit approximately 1/2 cup you could also use fresh fruit
1/4 cup of quick oats ground into flour
sweetener
1/2c approximately of diet clear soda I used diet 7up

Spray a 1 cup ramekin or baking dish with non stick spray
put the fruit in
mix the oatmeal and sweetener I used 1 packet
put the oatmeal on top of the fruit evenly
pour the pop slowly over the oatmeal if it fizzes let it settle before pour more on
I gave a quick spray of butter flavoured pam on top

I didn't do it this time but next time I'll sprinkle a little course sugar on top :) 0pp

I baked this in a 350 toaster oven for 30 minutes

This isn't overly sweet which is why I like it.

Strawberry banana baked oatmeal


Strawberry banana baked oatmeal simply filling or 5pp

1/3c quick or minute oats uncooked
1/4 egg substitute or 2 egg whites
1 tbsp skim milk
1 tsp vanilla
1/2 tsp baking powder
sweetener to taste
1 banana mashed but keep a couple of slices to put on top
1/4c sliced strawberries keep a couple to put on top
1/2 tsp sugar to put on top

Mix the oats, egg, milk, baking powder, mashed banana and sweetener together.

Spray a ramekin or baking dish with non stick then pour mixture in.

Top with banana and strawberry slices then sprinkle sugar on top.

I put mine in my toaster oven at 375 for 20 -25 minutes or until puffed up and firm to the touch. You could always cook it in the oven the night before when cooking dinner and warm it up in the microwave the next morning.

Tuna noodle casserole


Tuna noodle casserole from Thea-Lee Stottele

8 servings = 6pp
6 large servings=8pp

2 small cans of tuna drained
1 12oz bag of mixed vegetables frozen
1 cup of reduced fat sour cream I just used 0% plain Greek yogurt
1 can fat free cream of chicken soup
3 oz dry weight of no yolk noodles cooked
1/2c Italian bread crumbs
1 1/2c light shredded cheese
1/4c parmesan cheese
2 tsp Montreal chicken seasoning
1tsp red pepper flaked which I left out because the husband can't eat them. I added some to mine after!
2 tbsp light margarine or butter
1/2c skim milk or fat free cream I used fat free cream because I don't have a lot of milk left :)

Preheat oven the recipe called for 400 but my oven runs hot so I used 375.

In a large saucepan over medium heat add cream of chicken soup, fat free cream and sour cream. Add the Montreal chicken seasoning and pepper flakes. Stir till mixture gets warm not bubbly.

Add drained tuna and mix, next add the mixed vegetables and keep stirring over low heat. Mixed it cooked noodles and stir. Add in 1 cup of the cheese and gently stir. Remove from heat and pour into a pam sprayed large casserole dish.

Sprinkle the other 1/2c cheese and the parmesan cheese evenly over the top.

In a small bowl melt the butter/marg and in another small dish put the Italian bread crumbs. When butter is melted pour over the bread crumbs and stir to make a crumbly mixture. Spread this over the top of the casserole.

Cover casserole and cook for 40 minutes. Uncover and place under broiler for 3 minutes to crisp the top.

Cut into either 6 or 8 equal pieces and enjoy!

Chocolate, peanut butter and banana baked oatmeal


Chocolate, peanut butter and banana baked oatmeal 6pp or simply filling +1pp

1/3c quick or minute oats uncooked
1/4c egg sub, 2 egg whites or 1 egg
1/4c skim milk
1/2 tsp baking powder
sweetener to taste
1 tbsp unsweetened cocoa powder
2 tbsp pb2
1 banana mashed most of it but keep a couple of slices to put on top
1 tsp sugar to sprinkle on top makes it nice and crunchy

Mix everything together except the flew slices of banana and the sugar. Put into a non stick sprayed ramekin dish then top with the banana slices and the sugar.

I put mine in my toaster oven at 375 for 20 -25 minutes or until puffed up and firm to the touch. You could always cook it in the oven the night before when cooking dinner and warm it up in the microwave the next morning.

Strawberries and cream stuffed French toast


Strawberries and cream stuffed French toast 4pp or simply filling

2 slices of light bread
1/3c egg substitute
1 tbsp skim milk
I used 1/3c frozen strawberries that I thawed overnight in the fridge
2 Tbsp cream cheese I use 95% fat free
sweetener to taste
cinnamon I use Saigon cinnamon as it has a fantastic taste

In a small bowl mix the cream cheese with sweetener I used 1/2 packet.
Spread it evenly between the 2 slices of bread.
Make a layer of strawberries on top of the cream cheese on 1 slice of bread. Put the other slice of bread cream cheese down on top of the strawberries.

Now mix the egg, cinnamon and some sweetener in a container or bowl where the bread can lay flat.

Put the bread with the cream cheese and strawberries in to soak up some of the egg then carefully turn over and let the other side soak some up. This only takes a minute.

Spray your pan with non stick and when heated carefully lay the bread in it. Wait for that side to get nice and brown then carefully flip over and brown the other side.

Serve with a Tbsp of sf pancake syrup 0pp or real syrup 1pp

Chocolate caramel iced cappuccino 2pp

Updated! Huge chocolate caramel iced cappuccino

2pp when you use 1/2 serving of light whipped cream

1/2c very strong cold coffee
1/2c non fat milk
1.5 tbsp dry chocolate  pudding mix
2 packages of sweetener
1 tsp vanilla
a squirt of sugar free caramel syrup
1 cup of ice cubes
1/2 serving of light whipped cream

Blend everything but the whipped cream together. Pour into glass and top with whipped cream and a bit of cocoa powder.

Baked strawberry banana French Toast


Baked strawberry banana French Toast 5pp or simply filling

3 slices of light bread cut into cubes or other bread that counts as a power food I also use Ezekiel but only 2 slices
1/4c egg substitute
2 tbsp skim milk or more the bread need to be wet but not soaking
sweetener
1 banana mashed save a couple of slices to put on top before you mash it
1/3 cup sliced strawberries I used frozen ones that I took out of the freezer the night before
1/2 tsp sugar to sprinkle on top

Mix egg sub, milk and mashed banana all together.

Pour over the bread cubes and toss so you moisten all bread cubes.

 Put everything into a non stick sprayed baking dish. Top with banana slices and sprinkle of sugar.

I cooked it in my toaster oven at 375 for 20-25 minutes or until browned and crispy.

Frozen cappuccino

I made this with my lunch today and it was so good! I think I'll try it next time with some Starbucks caramel coffee and chocolate pudding mix :)

Skinny cappuccino 2pp when you use 1/2 serving of light whipped cream

1 cup of ice cubes

Put everything into a blender or bullet. I served it with 1/2 servings of light whipped cream 0pp and a sprinkle of cocoa powder on top.

Makes 1 servings for 2pp

Cheesy broccoli potatoes

I have been doing points plus for the last week or two and I'm not sure how much longer but for right now I will be posting a few recipes with points plus that are not simply filling.

Cheesy broccoli potatoes 6 big servings 6pp/serving

1 pkg shredded raw potatoes
1/3c + 1 tbsp I used becel calorie reduced pro active margarine
1 can reduced fat cream of broccoli soup
1 onion chopped
1/2c fat free or light sour cream
1 1/2c shredded light cheddar cheese
I pkg of broccoli I just bought a bag of fresh cut broccoli

Mix the soup, the margarine and the sour cream together. Add the potatoes, 1 cup of the cheese, the onion and the broccoli and mix together.

Spray a 9x11 pan with non stick spray. Pour the mixture in and spread out. Sprinkle the remaining 1/2c of light cheese on top. Put into a 375 oven for 45 minutes then pop under the broiler for a couple of minutes if  you want to brown it up.




Chicken orzo soup

I was given permission by Thea-Lee Stottle

Chicken orzo soup makes 8x1 cup servings
Simply filling if you use chicken breast an whole wheat orzo or 3pp for 1 cup

2 cups of cooked chicken or turkey
2 x 32oz containers of fat free low sodium chicken broth or a chicken carcass boiled for the broth
4oz or 1/2 cup of uncooked orzo pasta
1 12oz bag of frozen mixed vegetables
1/4c flour to thicken
1 chopped onion
1 celery stalk chopped
1 tbsp poultry seasoning
1 tbsp dried rosemary
Check the flavor and add chicken bouillion if needed. I didn't need it

Now you can make this in a pan or do what I did and throw everything in the crockpot except the orzo put that in 30 minutes before you want it ready :)

Cook on low for 6-8 hours
Doesn't show in the picture but it's got loads of veggies/chicken and pasta!

Individual pumpkin chocolate chip cupcake

Easy Single-Serve Pumpkin Chocolate Chip Cupcake

Ingredients

3 tbsp whole wheat flour
1 tbsp canned pure pumpkin (not pie filling!)
1 pinch cinnamon or pumpkin pie spice
1/4 tsp baking powder
1 pinch salt
1/2 tbsp chocolate chips (or more for taste!)
1-2 sweetener packets (I use the pink stuff)
1 tbsp + 1 tsp milk (I use non-fat)
1/4 tsp vanilla extract

Just mix all ingredients and I put into a parchment paper cupcake paper liner and put into the microwave for 1 minute.

Chocolate banana cake in a bowl=1 serving= simply filling+2pp or 5pp

This recipe was given to me by a friend :) Today I made mine in parchment paper cup liners so I could take with me to work.

Chocolate banana cake in a bowl if you eat it all it's simply filling+2pp or 5pp
1 banana mashed
2 Tbsp pb2 or pb2 with chocolate
1/4c egg substitute
2 Tbp cocoa powder unsweetened
2 sweeteners

Mix all ingredients together and put into a bowl that's sprayed with non stick and microwave for 2-2.5 minutes.

That's it!

Sweet and spicy salad with pear

Love this combo!

2 tbsp pc memories of Thailand dressing 2pp
28g prosciutto 1pp

Make the salad.
Wrap the prosciutto around pear slices and cook on a grill pan than was sprayed with non stick spray.
Top with 2 Tbsp of the dressing!

Amazing :)

Sausage oatmeal pancakes Simply Filling +2pp

For some reason I just think sausage and pancakes go together :)

So I came up with this recipe.

Sausage pancakes with sugar free syrup Simply Filling +2pp

2 lilydale turkey breakfast sausages cut into half length wise
1/2c quick oats uncooked
1/2 tsp baking powder
1/4c 0% plain Greek yogurt
1 large egg or 2 egg whites
1 tsp vanilla extract
1 tbsp splenda baking granular or whatever sweetener you use
sugar free pancake syrup

I had previously cooked the sausage so I just cut them length wise in half.

I put all ingredients except the sausage and the syrup in my bullet.

Made 4 long shaped pancakes in pan then put a sausage on top of each one.
Cook until bottom is browned then flip over.
Top with sugar free syrup
