Creamy cherry dessert cups

These are a nice way to get some dairy in. You can use any flavor you like.

Creamy cherry dessert cups Simply Filling
1 box of sugar free jello your choice of flavors
1 cup of boiling water

Mix both together for a couple of minutes.

Add 1 cup of light yogurt I only had Vanilla so that's what I used.

Whisk together then put into individual cups.

Top with 2 Tbsp ff/light whipped cream 0pp

Giant banana chocolate chip breakfast cookie

Giant banana chocolate chip breakfast cookie Simply Filling +1pp for the chocolate chips

Warning!!! This makes a huge breakfast cookie so if you're really hungry in the morning great if not find someone to share it with :)

1/2c oatmeal
1 egg beaten
1/2 banana mashed if really small you might need 3/4 of it
1/2 tsp cinnamon
1 Tbsp sugar free pancake syrup or sweetener to taste
1/2 tsp baking powder
10 g mini semi sweet chocolate chips

Mix all together and bake in a toaster oven or regular oven for 18-20 minute or until set and starting to brown.

Creamy cauliflower or potato soup

So easy and tasty!

Creamy cauliflower soup SF add points for any additional ingredients!

1 bag of frozen cauliflower or you could use potatoes if you want probably 3 medium?
2 cups of fat free chicken broth
Salt and pepper to taste I also add garlic powder and onion
3 Tbsp fat free or ultra low fat cream cheese or light laughing cow
Green onion

My add in's today were 1 slice precooked bacon 1pp and light cheese 1pp

Simmer these until the cauliflower is tender in the chicken broth I covered with a lid but left it open a bit so it would reduce a bit of the liquid. Approximately 10 minutes after it boils. I then used a hand blender to make it smoother while leaving a few lumps :).  Then I added some ground pepper, garlic and onion powder and the cream cheese you could use laughing cow but I didn't have any.

Garnished with some green onion.

This made 3 good servings of soup.

Apple cranberry baked French toast/bread pudding! Simply Filling

2 slices of Ezekiel bread cut into cubes in Canada Ezekiel bread is SF or use whatever bread you use
1 egg, 2 egg whites or 1/4c egg substitute
1-2 Tbsp skim milk or fat free cream you want it wet but not totally swimming in liquid a heavier bread will need a bit more more. I used Ezekiel bread and needed 3 Tbsp but if you're using light bread probably 1 tbsp.
1 tsp vanilla extract
sweetener or sugar free syrup amount depending on how sweet you like things
1/2 small apple chopped up if you want really soft apple put them in the microwave for 45 seconds before adding them to the recipe. I liked mine with a little crunch still.
1/4c cranberries
I like to sprinkle either 1/2 tsp of sugar or 1 tsp maple syrup, or sf syrup 0pp on top to make it nice and crusty

Put the cubed bread into a bowl.
In another small bowl I beat the egg added the milk and sweetener and vanilla. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of milk. Now add the apple and the cranberries. Let sit for a couple of minutes. Stir again. Put into an oven proof dish. Sprinkle the sugar or drizzle the maple syrup or sf syrup on top.

I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) 20-25 minutes. I did drizzle some sugar free pancake syrup on top after it came out.

Edamame zucchini salad

I came up with this idea to take to work for dinner!

Edamame Zucchini Salad Simply Filling +1pp for the dressing

I cooked up 1/2c frozen edamame and drained them
Made some zucchini noodles with my julienne peeler
Chopped some multicolored carrots
Chopped some green onion
Sliced some cherry tomatoes
Added 2 Tbsp Bolthouse miso with ginger dressing 1pp

Caramel apple stuffed French toast


Caramel apple stuffed French toast Simply Filling plus 2pp for the Pc Greek yogurt caramel cream cheese if you used Kraft Ultra light cream cheese it would be 100% SF

2 slices of Ezekiel bread which is SF in Canada you can use whatever bread you use for Simply Filling
2 Tbsp Pc Greek yogurt caramel cream cheese it's a Canadian brand you could add sf caramel sauce to plain cream cheese

1 apple sliced and sauteed in a pan with non stick spray
cinnamon added to the apple while cooking
1 egg or 2 egg whites or 1/4c egg substitute with a little skim milk added, a bit of sweetener and 1/2 tsp cinnamon

Saute the sliced apple in a pan with non stick spray and set aside.

Beat the egg/egg whites/or egg substitute with a little skim milk, a bit of sweetener and 1/2 tsp of cinnamon.

Take 2 slices of Ezekiel or other power food bread and spread the 1 tbsp of the caramel cream cheese on each slice. Put the sauteed apple on one slice of bread on top of the cream cheese and top with the other slice of bread.

Carefully dip both sides in the egg mixture.

Cook in a non stick sprayed pan until brown on one side also give a quick spray of non stick on the top of the bread and then turn over and cook the other side.

Serve with sugar free pancake syrup or sugar free caramel syrup.

Taco salad!


Taco salad Simply Filling + points for additional extras

  • Romaine lettuce
  • cherry tomatoes
  • green onion
  • 55g avocado 2pp
  • fat free cheese if you use light cheese which I do that would add 2pp for 1oz/30g
  • extra lean ground beef or turkey that I purposely had leftover to use for the salad
  • a bit of taco seasoning sorry I just added maybe a tsp? I have also used vegetarian crumbles which were good.
  • salsa
  • 0% plain Greek yogurt or ff sour cream
  • hot sauce or jalapeno peppers

Chop the lettuce then add the other ingredients. Simply Filling plus whatever extra's you choose to add.

Breakfast roll ups!

Love these and they're easy to grab and carry when you're on the go in the morning :)

Breakfast roll up Simply Filling

2 eggs or 1 egg and 2 egg whites or 1/2c egg substitute or all egg whites whatever you like to use!
Canadian bacon or extra lean ham
fat free cheese if you want to keep it Simply Filling or light cheese if you don't mind using your points
1 light flatout I love these because they are BIG but if you don't have any a tortilla would work but wouldn't hold as much so maybe just 1 egg etc

Today: I used some chopped green pepper, onion, jalapeno and I like them cooked so I lightly sauteed them before I added them to the roll up :) ham, a slice of processed fat free cheese and 1 egg 2 egg whites

Other possible additions: fresh or leftovers
chopped peppers
chopped onions
chopped spinach
mushrooms
chopped tomato
jalapeno peppers
or any other veggies you have leftover or in the fridge :) This is a great way to eat them up

stuffed pepper casserole


Stuffed pepper casserole special thanks to Jeanne C for passing it along :) Simply Filling

8 servings

3 peppers diced
1/2 large onion diced
2 tsp olive oil
1 lb extra lean ground turkey or beef
1 large can of diced tomatoes
1 small can of tomato paste
2 bags of 90 second brown rice or leftover brown rice
salt/pepper/garlic/italian seasoning
fat free cheese Jeanne used mozzerella I used 4 oz light cheddar as we don't get ff cheese here it added 1pp/portion

Saute peppers and onions in the olive oil. Meanwhile cook the extra lean turkey or beef. I added seasoning to the meat when cooked. Then add the pepper and onions and the rice. Mix well and put into pan. Top with the cheese. Put in a 400 degree oven for 10 minutes or until cheese is nice and melty :)

Apple fritter pancakes


Apple fritter pancakes Simply Filling

1/3c of oat flour which is just oats put into a blender until it looks like flour
1/2 tsp baking powder
1/4c 0% Greek yogurt or you could use light but I'd use a little less so that it's not too runny
1 egg, 2 egg whites or 1/4c egg substitute I used an egg
1 tsp vanilla
1/2 tsp cinnamon or apple pie spice
sweetener
apple rings made from a cored apple and sliced on a mandoline or thinly cut 1/4 inch or so

Combine the oat flour and all the other ingredients except the apple rings. Add a bit of skim milk if too thick.

Dip the apple rings on at a time and cook on a non stick sprayed griddle or large skillet until browned then turn and cook on the other side.

I drizzled them with sugar free pancake syrup you could also use caramel syrup or just dust with some powdered sugar :)

Double chocolate raspberry baked oatmeal


Double chocolate raspberry baked oatmeal simply filling plus 2sp for the chocolate

1/3c oatmeal
1/4c egg substitute or 1 egg or 2 egg whites
3 Tbsp skim milk
1/2 tsp baking powder
1 heaping tsp of cocoa powder
8g white chocolate chips
10 raspberries
sweetener to taste 1-2 packets you could use maple syrup, sf pancake syrup also

Mix everything except the raspberries and chocolate chips and let sit for a few minutes. Gently stir in the raspberries and the chocolate chips leaving a couple of both to put on the top. Pour into a non stick sprayed ramekin dish. Put a couple of raspberries and chocolate chips on top. Bake in a toaster oven at 350 for 25 minutes or until browned.

You could also bake it in the oven when you're cooking something else and heat it up in the microwave when you want to eat it.

Banana muffins 1pp!

I love these Tulip parchment papers which were in the discount bin :)

Banana muffins 1pp depending which sweetener you use.

I did tweak a couple of things.

3 ripe bananas mashed
1 cup of splenda baking sweetener a friend has used 1/2 stevia and 1/2c splenda brown sugar blend which increases pp to 2pp/muffin. 1/2c splenda and 1/2c sugar would be 2pp/muffin.
1/2c unsweetened applesauce
I added one egg because it seemed pretty dry divided between 11 muffins doesn't add pp
3/4c all purpose flour
1/2c whole wheat flour
1/2 tsp salt
1 1/2 tsp baking soda I used 1 tsp baking soda and 1/2 tsp baking powder

Mix all together and bake in a 350 degree oven for 20 minutes.Mine took 18 minutes

Makes 12 muffins Using my trusty ice cream scoop which measures 1/4c I came out with 11 muffins

Spring rolls with crab and Light spicy peanut satay sauce Simply Filling plus 3pp

rice wraps x 2= 2pp

veggies julienned I chose carrot, red pepper, cucumber and green onion

imitation crab you could also use chicken, shrimp, beef whatever you like.
2 Tbsp Pc Blue menu light spicy peanut satay sauce 1pp This is a Canadian brand.

Fill a round container with warm water. I just used an old frying pan.

Put a slightly damp tea towel on the counter. It helps to keep the wraps moist.

One at a time put the rice wraps in the warm water and gently submerge to get water over it. Leave for a minute or so or when touched it feels very soft. Gently take out keeping the shape and lay on the tea towel. Gently unravel if it's stuck together.

Lay the veggies and the meat of choice on the wrap and gently roll up like an egg roll. Cut in half and voila a spring roll :)

I promise after you've done it a couple of times it gets easier and just takes a couple of minutes!

Pumpkin cranberry stuffed French toast Simply Filling

2 slices Ezekiel bread which is simply filling in Canada or any other simply filling type bread

2 tbsp Kraft ultra low fat cream cheese
a few shakes of pumpkin pie spice
just a pinch  of sweetener

2 tbsp cranberry sauce that I made using sweetener instead of sugar 0pp or if using Canned cranberry sauce 1 1/2 Tbsp would be 1pp

1/4c pumpkin
1/4c egg substitute or 1 egg or 2 egg whites
1/2 tsp pumpkin pie spice
sweetener I used 1/2 packet

sugar free pancake syrup or your choice of drizzle mine is 0pp

Mix the pumpkin/egg/pumpkin spice and sweetener and put into a container you can dip your bread into. I use a square plastic container.

Mix the cream cheese/pumpkin pie spice/sweetener. Or just sprinkle the sweetener and pumpkin spice on the cream cheese after you've spread it on the bread.

Take your 2 slices of bread and spread each with the cream cheese mixture. Spread the cranberry sauce on one side and top with the other slice of bread so the cranberry/cream cheese is in the middle.

Carefully put the sandwich in the pumpkin mixture and let sit a minute then carefully turn over and let the other side sit a minute.

In a frying pan spray with non stick and put the sandwich in the pan that has been heated to medium hot. When browned on one side carefully turn over and brown the other side.

Cut in half and drizzle with syrup.

Cherry chocolate breakfast parfait! Simply Filling


Cherry chocolate breakfast parfait Simply Filling

1/3c oats
1/3c water
1/2 of a banana mashed with a fork
1 tsp of dark unsweetened cocoa if using the light you may need a bit more
sweetener to taste I used 2 packets

1/2c fat free Vanilla Greek yogurt or light vanilla yogurt

1/2c of cherries I use frozen and thaw them

Cook the oatmeal, cocoa and the water in the microwave for 1 1/2 minutes or cook on stove top. Add in the mashed banana and sweetener.

Now layer the oatmeal mixture, yogurt and cherries. I usually make 2 layers of each in a mason jar.

Enjoy!

You could make this the night before but I prefer to make it just before I eat it.
Beware this is really filling which is great if you have a busy day :) If you don't have as big of an appetite as I do just use 1/4c oats.

Shepherds Pie

This is one of those days when I wanted to make something filling fast! I have made it totally from scratch before but decided on short cuts today. I would also normally put light grated cheese on top but I'm out since tomorrow is grocery day.

Sorry I'm one of those people that doesn't always measure things. Especially if they're Simply Filling. A dash of this and that :)

Shepherds Pie simply filling plus 2pp for the light laughing cow and the gravy mix

1 lb extra lean ground beef
2 cups frozen mixed veggies
1 package of low sodium beef gravy mix
1 cup of water with a couple of tbsp taken out :) I wanted a little less than I usually use
a shake of onion powder
potatoes I used 3 medium if using a square pan I'd use 4
2 light laughing cow cheese wedges and a couple of tbsp of skim milk or fat free 1/2 & 1/2 or more depending on the potato you use

Boil the potatoes until soft.
Brown the beef and put aside.
When the potatoes are done drain and add the light laughing cows and the milk/cream you may need more depending on the type/size of your potato. I also added a little sea salt. Mash with a mixer or masher until smooth or a few lumps if you like that :)
In a medium pan add the water and the gravy mix and cook until thickened. Add the cooked beef, the frozen veggies and the onion powder.

Now you can either make individual shepherds pie or put in one square pan.
Spread the beef/veggie/gravy mix on the bottom then put the potatoes on top. Smooth the potatoes and I sprinkled some smoked paprika on top for color since I had no cheese.

I totally forgot to add bake it in a 350 oven for approx 30 minutes or until lightly browned on top :)

I made 3 portions but if you put into a pan you could get 4.

Of course I tweaked it just a little bit :)

Egg roll in a bowl Simply Filling plus 1pp for the stir fry sauce

Instead of grated cabbage I just bought a bag of coleslaw and used 1/2 of the bag
Extra lean ground beef cooked I was cooking some up for something else and just took a bit of it for lunch :)
Chopped green onion
2 tsp olive oil to get my oils in for today
I also added some red pepper flakes because I like it spicy
Kikoman stir fry sauce 1 tbsp 1pp
A splash of lower sodium soy sauce

Stir fry the cabbage in the oil until starting to soften. Add the stir fry sauce, red pepper if using and continue to cook until fully cooked. After putting in the dish add the green onion and a splash of soy sauce.

You could also use leftover pork, chicken, beef, shrimp, crab or add bean sprouts and keep it vegetarian!

Strawberry banana baked oatmeal Simply Filling

1/3c oatmeal
1/4c egg substitute or 1 egg or 2 egg whites
3 Tbsp skim milk
1/2 tsp baking powder
sweetener to taste 1-2 packets you could use maple syrup, sf pancake syrup also
1/2  banana chopped
chopped strawberries approximately 4 small ones cut into 4 pieces
1/2 tsp vanilla extract
1/2 tsp turbinado sugar or regular sugar 0pp to sprinkle on top before baking

Mix altogether and let sit for a few minutes. Pour into a non stick sprayed ramekin dish. Sprinkle with sugar. Bake in a toaster oven at 350 for 25 minutes or until browned.

You could also bake it in the oven when you're cooking something else and heat it up in the microwave when you want to eat it.

Pizzelle ice cream sandwich 2pp

These are pizzelles. They come in original, caramel, chocolate, lemon and
anise flavors. 2 of them are 1pp!

I took 2 of the pizzelles 1pp. In a small bowl I mixed 3 Tbsp ultra light Cool Whip 1pp and 1 tsp sf banana pudding mix 0pp together. Then I spread it on one of the pizzelles and put the other pizzelle on top. Pop it into the freezer and voila an ice cream sandwich :) For 2pp
I will be coming up with some new ideas for these soon!

Giant pumpkin chocolate chip breakfast cookie
Simply Filling plus 1pp for the chocolate chips

1/2c oatmeal
1 egg
1/4c pumpkin
1/2 - 1 tsp pumpkin pie spice I love pumpkin pie spice so I use a tsp
1 tbsp sugar free maple syrup
1/2 tsp baking powder
10g mini chocolate chips 1pp

Mix altogether. I sprayed a small round dish and baked it in my toaster oven at 375 for 17 minutes. This was in a new toaster oven. My old one took 20 minutes. Generally I cook until I can start to smell it :) Yep the smell of warm pumpkin!

Other add in's I'm going to try another day are instead of chocolate chips I'll try craisins or raisins :)

I was asked what I cook it in. This is the dish I use and I put a knife next to it to give you an idea of the size.

Pumpkin waffles Simply Filling

I woke up this morning and decided to try my hand at making pumpkin waffles :)

Pumpkin waffles Simply Filling
1/2c oatmeal ground up in a bullet or blender
1 egg
1/2 tsp pumpkin spice
1/2 tsp baking powder
1/4c pure pumpkin
1/4c light yogurt
sweetener to taste I used stevia but you could use whichever sweetener you like

Mix all wet ingredient together. Stir into the dry ingredients and let sit a few minutes.

This made 2 waffles. I topped mine with raspberries, a little 0% plain Greek yogurt mixed with a pinch of stevia and some pumpkin pie spice and a drizzle of sf syrup.

Cornbread muffins! Simply Filling

I made these this morning to have one for breakfast. It was so good :)

Cornbread


Directions:

Mix dry ingredients in a medium bowl.
Mix liquid ingredients in a small bowl.
Gently fold the wet into the dry. 
I made them into 6 muffins.
Bake at 375 for 15-20 minutes.

1 tsp vanilla extract
1 packet of sweetener or sugar free syrup
1 peach chopped up
a few raspberries
I like to sprinkle either 1 tsp of sugar or 1 tsp maple syrup, or sf syrup 0pp on top to make it nice and crusty

Banana stuffed French toast simply filling

2 slices Ezekiel bread or whatever power food bread you use. In Canada Ezekiel is considered Simply Filling
1 small banana or 1/2 a large one sliced
2 tbsp fat free or Kraft Ultra low fat cream cheese
cinnamon and a little sweetener
1 egg beaten with 2 tbsp skim milk, cinnamon and a pinch of sweetener and put into container or plate that the bread slices can fit into
1 tsp maple syrup 0pp or sugar free syrup

spread the cream cheese on both slices of bread
sprinkle with cinnamon and sweetener

put the sliced banana on one slice of bread on top of the cream cheese
lay the other slice of bread cream cheese side down on top of the other slice of bread
carefully lay the banana sandwich in the egg mixture for a minute or two then carefully turn it over to let the other side soak in it for a minute or two

spray a pan with non stick spray or oil and turn burner on medium

lay the banana sandwich in the pan until browned then carefully turn over to let the other side brown.

top with 1 tsp maple syrup 0pp or sugar free syrup

could also drizzle with sugar free caramel sauce
