Pumpkin cranberry stuffed French toast Simply Filling
2 slices Ezekiel bread which is simply filling in Canada or any other simply filling type bread
2 tbsp Kraft ultra low fat cream cheese
a few shakes of pumpkin pie spice
just a pinch of sweetener
2 tbsp cranberry sauce that I made using sweetener instead of sugar 0pp or if using Canned cranberry sauce 1 1/2 Tbsp would be 1pp
1/4c pumpkin
1/4c egg substitute or 1 egg or 2 egg whites
1/2 tsp pumpkin pie spice
sweetener I used 1/2 packet
sugar free pancake syrup or your choice of drizzle mine is 0pp
Mix the pumpkin/egg/pumpkin spice and sweetener and put into a container you can dip your bread into. I use a square plastic container.
Mix the cream cheese/pumpkin pie spice/sweetener. Or just sprinkle the sweetener and pumpkin spice on the cream cheese after you've spread it on the bread.
Take your 2 slices of bread and spread each with the cream cheese mixture. Spread the cranberry sauce on one side and top with the other slice of bread so the cranberry/cream cheese is in the middle.
Carefully put the sandwich in the pumpkin mixture and let sit a minute then carefully turn over and let the other side sit a minute.
In a frying pan spray with non stick and put the sandwich in the pan that has been heated to medium hot. When browned on one side carefully turn over and brown the other side.
Cut in half and drizzle with syrup.
