I was excited when I saw this recipe from Weight Watcher Girl for bacon cheese fries. Since I'm in Canada and don't often have the same food options I usually end up tweaking recipes I see. Also I do Simply Filling so I change things for that reason as well :)
This is not Simply Filling recipe but potatoes are Simply Filling and the oil is out of my daily oils so it just ends up costing me 3pp which I think is a bargain. Also I don't use bacon bits so I used pre-cooked low sodium bacon and light cheese.
1 medium sized potato I cut it into a chip shape with a mandoline but you can cut it into fries
1 oz/30g light cheese 2pp
2 slices of president's choice low sodium pre-cooked bacon chopped 1pp
1 tsp olive oil
salt/garlic powder/pepper
non stick spray
I put the cut potato and rinsed them off with water. Dry them and then put them in a bag with the olive oil and shook the bag so the olive oil was on all the potato.
Put the potato slices on a baking sheet you've sprayed with non stick spray
Sprinkle with the salt/garlic powder/pepper
Bake in a 375 degree oven for 12 minutes then turn over and cook another 12 minutes now the time depends on the temperature of your oven and how thinly you cut your potato. Keep your eye on them.
Take out of the oven, arrange the potato on top of each other and sprinkle the cheese and the chopped bacon on
Put back in oven just to melt everything
