One pot chicken chow mein Simply Filling

I had a couple of chicken breasts in the fridge and I wanted some inspiration on what to cook with them. So I went on google and found this recipe.

I didn't want to cook that much and I wanted to make it even easier so I definitely tweaked it quite a bit.

I also used my electric pressure cooker but you could use a slow cooker or do it on the stove top. I wanted to make it quick so this is how I made it.

One pot chicken chow mein Simply Filling

2 chicken breasts cuts into small cubes
1/2 package of whole wheat spaghettini  or you could use any shape of whole wheat pasta I broke my in half for smaller pieces
2 cups chicken broth I made my own and used that
1 tsp olive oil which I'm not sure why that's in there
2 tbsp low sodium soy sauce
2 cloves of garlic which I didn't have so I just used powdered
a couple of drops of fish sauce which isn't necessary but I like it
Instead of sugar I added one sweetener
1 package of frozen mixed Asian vegetables
Chopped green onion

I didn't but you might want to spray non stick on your pan first.

Put the broth, chicken, pasta, soy sauce, olive oil, garlic and sweetener in pot.
I cooked it on the rice setting for 10 minutes.
Released the steam and stirred.
Added the Asian vegetables which mine were partly thawed.
Cooked for another 2 minutes.
Released the steam and voila
Dinners ready.
Served with chopped onion on the top.

thanks for sharing!!!!! If they want to keep as much as possible SF, they would have to use whole wheat pasta (and count the other if they use that), olive oil isn't SF..........and corn is no longer SF (if corn is in the Asian vegetables).........some veggies are no longer SF and corn is one of them :)

I used whole wheat pasta and I respectfully have to disagree and say corn is still a no count food! I just checked on my weight watcher tracker and it's a green circle.
