Oatmeal cornmeal pancakes Simply Filling

I saw the recipe on Face Book and wrote it down. Thanks Mary Jane Petersen!

Oatmeal cornmeal pancakes 2 servings  Simply Filling or 3 sp with freestyle or 4sp 

1/4c quick oats
1/4c corn meal
1 tbsp splenda or sweetener to taste
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup ff plain yogurt I used vanilla
1 egg beaten
1/8 tsp or more of cinnamon
non stick spray

Makes 4 pancakes. I used 2 as a serving which are SF or 4sp

Mix altogether. Let sit a couple of minutes then use the batter as you normally would.

Baked blueberry almond oatmeal Simply filling + 1sp 

1/3c quick oats uncooked
1/4c blueberries plus a couple to put on top
1 egg beaten or 2 egg whites or 1/4c egg substitute
1/4c skim milk
1/4 tsp almond extract
1/2 tsp baking powder
sweetener to taste
5g slivered almonds
1/4 tsp sugar to sprinkle on top 0sp

Add everything but the almonds and the 1/2 tsp sugar in a bowl.
Spray a ramekin or small baking dish with non stick spray.
Put the mixture in the bowl. Add a couple of blueberries on top, the almonds and the sugar.

I baked my in a 375 degree toaster oven for 25 minutes.

Makes 1 serving
If you leave off the almonds it's Simply Filling 0sp

Chocolate banana quinoa hot cereal Simply Filling + 0sp

1/4c uncooked quinoa
1/2c skim milk
1 cup water
1/4c egg whites or 2 egg whites
sweetener to taste
banana chopped leave a few to put on the top
2 tsp unsweetened cocoa
3g hemp hearts 0sp  Optional
2g unsweetened cocao nibs 0sp Optional

Next time I'll cook it in my electric pressure cooker which would be quicker and stir in the egg white quickly when it's finished cooking. The heat will still cook it.

Put quinoa, skim milk, cocoa and water in a non stick pan.
Bring to a boil and then reduce to a simmer.
Stirring continuously add in the egg whites. You won't taste them but it adds protein and a lot of creaminess.
Cook and stir until creamy usually 14-16 minutes.
Add in most of the banana and sweetener.
Put into a bowl and add the banana and hemp/nibs if using.
Let sit to cool a bit and thicken up.

One pot chicken chow mein Simply Filling

I had a couple of chicken breasts in the fridge and I wanted some inspiration on what to cook with them. So I went on google and found this recipe.

I didn't want to cook that much and I wanted to make it even easier so I definitely tweaked it quite a bit.

I also used my electric pressure cooker but you could use a slow cooker or do it on the stove top. I wanted to make it quick so this is how I made it.

One pot chicken chow mein Simply Filling

2 chicken breasts cuts into small cubes
1/2 package of whole wheat spaghettini  or you could use any shape of whole wheat pasta I broke my in half for smaller pieces
2 cups chicken broth I made my own and used that
1 tsp olive oil which I'm not sure why that's in there
2 tbsp low sodium soy sauce
2 cloves of garlic which I didn't have so I just used powdered
a couple of drops of fish sauce which isn't necessary but I like it
Instead of sugar I added one sweetener
1 package of frozen mixed Asian vegetables
Chopped green onion

I didn't but you might want to spray non stick on your pan first.

Put the broth, chicken, pasta, soy sauce, olive oil, garlic and sweetener in pot.
I cooked it on the rice setting for 10 minutes.
Released the steam and stirred.
Added the Asian vegetables which mine were partly thawed.
Cooked for another 2 minutes.
Released the steam and voila
Dinners ready.
Served with chopped onion on the top.

Baked pumpkin cranberry French toast/bread pudding Simply Filling

2 slices of bread I used Ezekiel which is a no count food on Simply Filling
1 egg or 2 egg whites or 1/4c egg substitute
1/4c canned pure pumpkin
2 tbsp skim milk
1/2 tsp pumpkin spice
sweetener of your choice
1/4c cranberries
1/4 tsp sugar to sprinkle on top for crunch 0sp

Cut bread into chunks. Mix the egg, pumpkin, milk, spice and sweetener together in a bowl.
Put the bread mixture and cranberries into the bowl and toss until the bread has soaked up the wet ingredients.

Grease or spray non stick into a small individual baking dish.

Put the bread mixture into the dish and sprinkle the sugar on top.

I bake mine in my toaster oven at 325 for 20-25 minutes or until nicely brown and crunchy on top :)
