Tried something new this morning and I loved it!
Apple peanut butter breakfast wrap! Simply filling plus whatever syrup and peanut butter you use if doing smart points just add whatever ingredients you use
Light flat out
1 apple chopped
1.5 tbsp sugar free pancake syrup
cinnamon
1/2 tbsp peanut butter I use natural
I sprayed my flatout on one side with pam you could just brush a little olive oil on it
I sprinkled on top of the oil with splenda mixed with cinnamon
Meanwhile saute the apple in a non stick pan with 1 tbsp sugar free syrup and cinnamon.
Turn the flatout over so you have the plain side facing up and put the sauteed apple in the middle.
Roll up the flatout.
I cooked the flatout in a non stick pan to crispy it up :)
Serve with warmed peanut butter and 1/2 tbsp of sugar free pancake syrup

Pumpkin chocolate chip muffins Simply Filling +1sp
Update I made these with fresh cranberries and put it in the recipe builder and they came out to 2sp each or Simply Filling.
I saw a few recipes for pumpkin muffins and I really wanted to make one that was simply filling and not such a heavy wet type of muffin. I experimented a couple of times an this is what I came up with.
Yes I use ground oats for the flour and yes I count it as SF. Just what works for me and you can do whatever works for you :)
Pumpkin chocolate chip muffins 6 muffins Simply Filling +1 sp or 4 smart points according to my calculator
I always keep a container of already ground oatmeal in my cupboard so it's quick to use.
1/2c canned pure pumpkin
1 egg
1 egg white
1/3c Greek yogurt
1 tsp of pumpkin spice or more if you like
sweetener to taste I used 1/4c baking splenda but use whatever works for you
1/2 tsp baking powder
1/2 tsp baking soda
1 cup of already ground oats
2 Tbsp pure mini semi sweet chocolate chips divided into 6 is 1sp/muffin or 1/2c frozen cranberries cut in half for simply filling
I used a hand blender to blend the pumpkin, egg, egg white, pumpkin spice, sweetener and yogurt together.
In a small bowl mix the oat flour, baking powder and baking soda together.
Add the dry ingredients into the wet ingredients.
Do not overmix
Fold in the mini chocolate chips into the batter.
I use parchment paper muffin liners which work perfectly every time. I lined a foil muffin cup tray with the liners and divided the batter between the 6 cups.
I baked them in my toaster oven on 350 for 18-20 minutes. Don't overcook them. I used a toothpick to check to see if they were done.
Enjoy!

Individual baked peach oatmeal Simply Filling
Baked peach oatmeal 1 serving Simply Filling
1/2c quick oats
1 egg, or 2 egg whites or 1/4c egg substitute
1/3c skim milk
Sweetener to taste put it how much you would put in a bowl of plain oatmeal
1/2 tsp vanilla extract
1/2 tsp cinnamon
1 peach cut into cubes save some slices for on top
1/2 tsp baking powder
1/4 tsp of sugar sprinkled on top
Beat the egg, milk, vanilla together.
Put the oats in a bowl, add the cinnamon, sweetener and baking powder. Stir
Add the egg mix to the oats.
Stir in the cubes peaches.
Let sit for a few minutes to absorb some of the liquid then put into a non stick sprayed baking dish.
Put the peach slices on top and sprinkle with the sugar.
I baked in my toaster oven 325 for 23 minutes or until set.

Corn tortilla chips! Simply Filling
After being asked how I make these a lot I decided to make a post about them!
Corn tortilla chips Simply Filling
1. Corn tortilla's In Canada it's hard to find light corn tortillas but I found old mill ones that are 2 for 100 calories and 1 gram of fat for both! Good enough for me :)
2. Either and olive oil spray or butter flavored pam
3. Spices: you can use whatever you like but I love using a low sodium taco seasoning mix
I keep my tortillas in the freezer and take a couple out a little while before I need them so they can thaw. It doesn't take long.
Lightly spray them with pam or whatever you are using. It helps the seasoning to stick.
Sprinkle them with your seasoning.
Take a pizza cutter or scissors and cut into triangles.
Put them on a non stick pan. I use non stick foil.
I bake them in my toaster oven at 325 for around 8-10 minutes. Just keep checking until they are crisp. Watch because they can over cook quickly.
Enjoy with your favorite dip or salsa.

Easy shepherd's pie Simply Filling +0sp
O.k I've had many requests to share this dish. It's not exactly a recipe and I didn't write it down because it was a last minute quick dish I came up with.
Easy Shepherd's pie Simply Filling 6 servings
1. Extra lean ground beef
2. I used 2 can's of mixed vegetables drained but you could use frozen ones
3. 1 package of low sodium club house brown gravy mix which is 0sp when divided between servings
4. 1 cup of water
5. Potatoes peeled, cut into chunks, cooked in boiling water then mashed with a bit of fat free cream and 1 Tbsp I can't believe it's butter light which again is 0sp when divided between servings and salt
6. Onion sliced
7. Smoked paprika
Brown the ground beef in a non stick pan. When cooked take out and put into a bowl.
Put onions in the same pan and cook till starting to brown. Then add the meat back into the pan,
Add the cup of water and sprinkle the gravy mix all over and stir until thickened.
Add the mixed vegetables.
Pour the mix into a baking pan. I use a square pyrex dish but whatever you have.
Spread the mashed potatoes on top then sprinkle with smoked paprika.
Put into a 325 degree oven, I just used my toaster oven, for 30 minutes or until piping hot.
Cut into 6 portions

Frozen Strawberry Margarita SF 0sp
Some people count blended fruit but I personally don't do it often so I don't count it as points.
Frozen Strawberry Margarita SF 0sp
1 1/2 cups of frozen sliced strawberries
1 cup of diet 7up
1 tsp sugar free strawberry jello mix
A squeeze of lime juice
I put everything in my bullet and voila a perfect summer drink.
If it's not thick enough just add a few more frozen sliced strawberries.

Polenta rounds!
Whether it's SF depends on the ingredients you put on top!
First I sliced 2 rounds of polenta that I buy in a tube.
Put then in a waffle maker or you could just fry in a non stick pan. Leave until crispy.
Today I added:
Some baby spinach that I also put in the waffle maker to wilt it a bit just for a minute.
2 tbsp Wholesome goat cheese 1sp
18 grams of prosciutto 1sp
I also added some fresh fig on top 0sp
Next time I may drizzle a tsp of honey on top which would be 1sp
You could have fun with this and change all the ingredients!

Cream cheese would be awesome

Caramalized onion
So today mine were Simply Filling +2sp
