Banana chocolate chip baked French toast Simply Filling + 1sp

Banana chocolate chip baked French toast/bread pudding simply filling + 1sp I used a bread that was 4sp for 2 slices of bread so the smart points were 5sp!

Banana chocolate chip baked French toast

2 slices of Ezekiel bread or 3 slices light bread for simply filling or 2 slices of bread of your choice cut into cubes
1/4c egg substitute or 2 egg whites or 1 egg
2 Tbsp skim milk you may need more depending on the bread. You want it really wet but all the liquid soaked up in the bread cubes.
Sweetener I used 1 pkt
1 banana 3/4 mashed the other sliced thinly
50 mini semi sweet chocolate chips 1sp
pinch of sugar 0sp

Put the cubed bread into a bowl.
In another small bowl add egg subsitiute, skim milk, sweetener and the mashed banana. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of milk. Now add all but a couple of the banana slices and most of the chocolate chips leaving a few to sprinkle on top. Put into an oven proof dish. Put the extra banana slices and chocolate chips on top and sprinkle the sugar on top

I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) Sorry didn't look at the clock but around 25 minutes while I did other things. Time depends on what kind of bread you use the denser the bread it will take a little longer.

The directions say "if too dry add another tbsp of almond breeze". What do you mean another? I don't see almond breeze in the list of ingredients. I really want to make this but am confused about that and what if I don't have almond breeze? Thanks.

That's because I used to use almond milk! Now I just use skim :)
