Chocolate banana muffins 1sp each


Chocolate banana muffins 12 regular size 1sp each or 24 mini muffins 1sp for 3

  • 1c whole grain pc buttermilk waffle pancake mix 11sp or kodiak waffle mix
  • 2 Tbsp unsweetened cocoa powder 1
  • 1 tsp baking powder 0sp
  • 4 medium bananas 0sp
  • 2 eggs 0sp
  • 1 tsp vanilla extract 0sp
Mix everything except the pancake mix in the blender then gently add the pancake mix with a spoon.

Spray 12 muffin tin or use parchment or silicone muffin pans or 24 mini muffin tin

Bake in a 350 degree oven for approx 15 minutes or until toothpick comes out clean for full size or 10 minutes or less for the mini muffins. Do not overcook.

Slow cooker cheesy meatloaf 1sp

Thanks again to connect's @barbieb1 for another sweet recipe!

Slow cooker cheesy meatloaf 8 servings/1sp per serving or 3sp for 2 servings

1 lb extra lean ground turkey 0sp
1/2 large onion finely chopped 0sp
1 egg 0sp
1 Tbsp garlic 0sp
2 Tbsp canned tomato paste 1sp
1/2c uncooked quick oats 4sp
1/2 tsp salt 0sp
1/2 tsp black pepper 0sp
1/4c almond milk 0sp
1/2c light cheese 6sp (original recipe had 3 laughing cow portions on top but I didn't have any)

Instructions

  • line slow cooker with foil to use as a handle
  • in large bowl using a fork mix together eggs, onion, garlic, milk, and tomato paste
  • stir in oats, salt, and pepper
  • add chicken and mix till blended. don't overmix or it will be tough
  • form into a loaf shape and place on top of foil the mixture will be very moist
  • keep 1" away from sides
  • cover and cook on low for 2 1/2 hours
  • remove cover and put cheese on top
  • cook for another 15 mins until cheese is melted

Double chocolate walnut kodiak muffins

Thanks again to @barbieb1 on Canadian weight watchers connect!

Double chocolate walnut kodiak muffins 1sp for 1/ 3sp for 2
Makes 6

2 ripe bananas mashed 0sp
2 eggs 0sp
1 Tbsp unsweetened cocoa 0sp
1/4c swerve sweetener 0sp
1/2c Kodiak buttermilk power protein waffle mix 5sp
7g walnuts 1sp
8g mini semi sweet chocolate chips 2sp

Mix bananas, eggs, cocoa and sweetener together. I used my hand blender.

Gently fold in the Kodiak powder.

Divide into 6 muffin wells. I use parchment paper liners.

Top with the walnuts and chocolate chips.

Bake at 350 for 20 minutes for my oven but when you start to smell the amazing muffins then check with a toothpick. Original recipe called for 25-30 minutes.

Very important to let cool because they taste the best when cooled.

Limey coconut Kodiak muffins


Limey coconut Kodiak muffins 1=1sp 2=2sp Thank you to @Barbieb1 for sharing her recipe.

2 eggs
2 Tbsp lime juice
Almost 1/2c unsweetened applesauce (put lime juice in measuring cup and fill with applesauce until it's at the 1/2 c mark
2 envelopes of true lime (if you have it does give a great lime taste)
1 tbsp quick oats
1/4c swerve sweetener (if you use splenda 1=1sp 2=3sp)
1/2c Kodiak waffle mix
1 tbsp unsweetened coconut
lime zest

Place the applesauce, lime juice mix in a bowl and add eggs, true lime, oats and sweetener.

Mix well.

Gently fold in Kodiak waffle mix.

Divide batter into 6 muffin wells. I use parchment liners because nothing ever sticks to them :)

Distribute coconut and lime zest on the top of the muffins.

Bake at 350 for 25-30 minutes.

Mason jar cheesecakes 1sp

I made this recipe that my buddy @lysall on Canadian weight watchers connect posted.


Mason jar cheesecakes 1sp

3 eggs 0sp
3c fat free plain Greek yogurt 0sp
1 Tbsp vanilla extract 1sp
1 package of sugar free fat free cheesecake pudding mix 4sp
2 Tbsp granular sweetener or whichever one you use 0sp

Mix all together.

I didn't use the right small mason jar as I didn't have 4 of them available so I use the next biggest size.
Divide mixture between 4 mason jar.
Take a baking pan and put the 4 mason jars in it and then pour water around the mason jars to half way full.
Put into a 325 oven for 40 minutes.

Take out and let cool then put into the fridge for 2 hours.

You can use any fruit topping but I used frozen strawberries that I add a tbsp of water and microwaved until hot then stirred in a mixture of 1 tsp cornstarch and 2 tsp of water. Put back into the microwave until hot and thick. Let cool.

When cheesecakes are cool top with the fruit mixture.

Berry cobbler cup simply filling


Single serve Berry cobbler cup Simply Filling or 1sp or 1pp

1 1/2 tbsp skim milk
2 tbsp of oat flour which is just oats ground up into flour
1 packet of truvia or other sweetener
1/4 tsp vanilla
1/4 tsp baking powder
1/3c of berries of your choice I used a mixture of blueberry and raspberry and blackberries
1/4 tsp sugar 0pp
Butter flavored spray

Coat a small baking dish with non stick spray
Put your berries in the dish
In a small bowl add the milk, oat flour, sweetener and baking powder and stir let sit a few minutes to absorb some of the liquid. pour on top of the berries.
Quick spray of butter flavored pam on top.
Sprinkle the sugar on top as it gives a nice bit of crunchiness

I put this in my toaster oven while I made lunch for approximately 15-18 minutes or until lightly browned.
