If you are in the U.S and have ff cheese or leave off the cheese (oh the horror) they would be Simply Filling. I used light cheese so I added 1sp.
Taco boats Simply filling (depends on the cheese you use)
Endive leaves
Leftover taco meat mix (I froze it for later)
Plain fat free Greek yogurt or fat free sour cream
Salsa
Green onions
Jalepeno's
1/3 serving of finely grated light cheese 1sp
Warm up the taco meat. Put into endive leaves. Add the other ingredients and voila easy peasy lunch or appetizer :)

White bean and kale soup 0sp
I made this in my instant pot on slow cooker but you could also use the soup setting for 15 minutes or until veggies are cooked and broth is amazing :)
My husband absolutely loved this soup and it will be made again!

White bean and kale soup 0sp Serving size 1 1/2 cups
- 1 medium onion chopped
- 1 large carrot chopped small
- 1 celery stalk chopped
- 4 cloves of garlic (I used a garlic press for them) Use less if you don't like garlic
- 15oz can of fire roasted diced tomatoes or diced tomatoes with seasonings
- 4 cups of chicken broth low sodium (I used some that I had made)
- 1 tsp thyme dried
- 1 bay leaf
- 2 cans of white kidney beans drained and rinsed
- 4 cups of chopped kale (no stalk)
- ground black pepper
- you could add salt depending on the broth you use but I didn't need any as it was very flavorful
Add it all the other ingredients except the salt and pepper.
Put in the slow cooker for 4 hours depending on your slow cooker.
Add salt and pepper to taste.
Enjoy!

Polenta rounds!
Whether it's SF depends on the ingredients you put on top!
First I sliced 2 rounds of polenta that I buy in a tube.
Put then in a waffle maker or you could just fry in a non stick pan. Leave until crispy.
Today I added:
Some baby spinach that I also put in the waffle maker to wilt it a bit just for a minute.
2 tbsp Wholesome goat cheese 1sp
18 grams of prosciutto 1sp
I also added some fresh fig on top 0sp
Next time I may drizzle a tsp of honey on top which would be 1sp
You could have fun with this and change all the ingredients!
You could use sweet potato slices
Cream cheese would be awesome
Extra lean ham
Caramalized onion
So today mine were Simply Filling +2sp

Taco salad boats 4sp
How many sp or pp or simply filling depends on what you use. I'll show you what I used.
Taco salad boats 4sp
Endive leaves larger ones work best.
Lettuce shredded finely
tomato cut into small chunks/slices
2 small olives sliced
1/4c leftover taco meat that I'd made with lean meat
jalapeno peppers if you like spicy
1/2 oz light shredded cheese
a dob of ff plain Greek yogurt instead of sour cream
a drizzle of taco sauce
Just separate your endive leaves and fill with the ingredients of your choice.
Easy quick lunch!

Fruit and tuna salad from Hungry Girl
From Hungry Girl:
Fruit n tuna salad Simply Filling +3pp
4 cups of lettuce
1 1/2 Tbsp light mayo
1 Tbsp fat free plain Greek yogurt
salt and pepper
4 oz tuna in water drained 1 can
1/4c chopped apple
1/4c chopped grapes
1/4c chopped cucumber I just used 1 mini one
1 Tbsp craisins I used low sugar ones
2 Tbsp Bolthouse balsamic vinaigrette
Put mayo, yogurt, salt and pepper in bowl and mix well. Add all other ingredients except vinaigrette and stir to coat.
Put tuna mixture on top of lettuce in a large bowl. Drizzle with vinaigrette or serve on the side.
Simply Filling + 3pp Depending on the ingredients you use.

Cold spaghetti pasta salad
Thanks to Thea-Lee Stottele for sharing her recipe!
Depending on your pasta and your sauces if you're doing sf you'd just have to count the parmesan cheese and the shredded cheddar unless it's fat free.
So if you use whole wheat pasta, pasta sauce with no sugar, fat free Italian dressing, parmesan cheese and light shredded cheddar cheese it would be Simply Filling + 1pp.
Or for points plus I counted 5pp for 1 cup and bulked it up by adding 1 cup of steamed broccoli that I'd cooled before adding in. A very filling lunch! Next time I might add mushrooms and peppers :)

5 oz of whole wheat thin spaghetti/spaghettini noodles cooked el dante
1/2 jar of pasta sauce I used a blue menu one
1/3c fat free Italian dressing I lowered the amount from the original recipe

1/4 tsp crushed red pepper flakes
1/4c chopped red onion
1/4c light shredded cheddar cheese
1/2 cup of cherry tomatoes cut in half
The original recipe also called for olives which I left out because of sodium
Break up your pasta before cooking and add to boiling water. Cook until just done. Drain pasta and put into large bowl. Add all other ingredients. Toss and put into the fridge for at least 2 hours I put it in overnight. Stir it up before serving.

Meatball spinach tortellini soup
I saw a recipe on skinnytaste.com which I tweaked.
I cheated and bought the lean Italian meatballs from president's choice blue menu which really made this an easy and quick put together soup.
Meatball spinach tortellini soup 6 servings of 1 1/2c and each has 4 meatballs 7pp per serving
For Simply Filling the only ingredients I would count would be the tortellini and parmesan cheese if you choose put it on. Points depend on which tortellini you buy.
president's choice blue menu lean Italian meatballs 24 or 4 per serving
2 tsp olive oil
2 stalks of celery chopped
1 small onion chopped
2 cloves garlic minced
1 large carrot peeled and I used my julienne peeler to shred it
2x 900 ml or 30oz boxes of lower sodium chicken broth
100g olivieri tortellini three cheese
3 cups of baby spinach torn
Melt butter then saute celery, onion, carrot and garlic until veggies are beginning to soften.
Add broth and increase temperature until boiling.
Reduce heat and add the meatballs and the tortellini.
Simmer for 7-8 minutes or according to directions on your tortellini.
Add the baby spinach and simmer for a minute or two.
You may like to add parmesan cheese on top once it's in the bowls that would be an extra 1pp
Makes 6 x 1.5c servings
7pp per serving without the parmesan cheese
This was so good the hubs had 2 servings :)

Chicken orzo soup
I was given permission by Thea-Lee Stottle
Chicken orzo soup makes 8x1 cup servings
Simply filling if you use chicken breast an whole wheat orzo or 3pp for 1 cup
2 cups of cooked chicken or turkey
2 x 32oz containers of fat free low sodium chicken broth or a chicken carcass boiled for the broth
4oz or 1/2 cup of uncooked orzo pasta
1 12oz bag of frozen mixed vegetables
1/4c flour to thicken
1 chopped onion
1 celery stalk chopped
1 tbsp poultry seasoning
1 tbsp dried rosemary
Check the flavor and add chicken bouillion if needed. I didn't need it
Now you can make this in a pan or do what I did and throw everything in the crockpot except the orzo put that in 30 minutes before you want it ready :)
Cook on low for 6-8 hours
Doesn't show in the picture but it's got loads of veggies/chicken and pasta!

Cheesy bacon chips simply filling + 3pp
I was excited when I saw this recipe from Weight Watcher Girl for bacon cheese fries. Since I'm in Canada and don't often have the same food options I usually end up tweaking recipes I see. Also I do Simply Filling so I change things for that reason as well :)
This is not Simply Filling recipe but potatoes are Simply Filling and the oil is out of my daily oils so it just ends up costing me 3pp which I think is a bargain. Also I don't use bacon bits so I used pre-cooked low sodium bacon and light cheese.
1 medium sized potato I cut it into a chip shape with a mandoline but you can cut it into fries
1 oz/30g light cheese 2pp
2 slices of president's choice low sodium pre-cooked bacon chopped 1pp
1 tsp olive oil
salt/garlic powder/pepper
non stick spray
I put the cut potato and rinsed them off with water. Dry them and then put them in a bag with the olive oil and shook the bag so the olive oil was on all the potato.
Put the potato slices on a baking sheet you've sprayed with non stick spray
Sprinkle with the salt/garlic powder/pepper
Bake in a 375 degree oven for 12 minutes then turn over and cook another 12 minutes now the time depends on the temperature of your oven and how thinly you cut your potato. Keep your eye on them.
Take out of the oven, arrange the potato on top of each other and sprinkle the cheese and the chopped bacon on
Put back in oven just to melt everything

Lilydale pre-cooked Turkey or Chicken breast
Romaine lettuce
2 slices of President's choice pre-cooked bacon heated in the microwave 1pp
7g President's choice sour dough Caesar croutons 1pp
2 Tbsp of President's choice blue menu light Parmesan cheese today I didn't have any so I used 15g light cheese either one is 1pp
Renee's fat free Caesar salad dressing 0pp if you don't like fat free use the light and adjust the points
Today I needed to get my oils in so I added 2 tsp olive oil to the dressing plus some lemon juice.
Hint: I put the lettuce, the Turkey and the dressing with oil in a large container with a lid and shake, shake, shake and it really helps to coat each piece of lettuce with dressing :)
Top with the cheese, crumbled bacon and croutons.

Copy cat Panera's autumn squash soup
From Nicole Fritter Stone
1 butternut squash
1 medium onion
2 medium apples
olive oil or olive oil spray
15oz can of pure pumpkin
2 cups of vegetable broth
1/2 cup of skim milk or 1/2c light coconut milk if you use the coconut milk add 2pp/serving
2 Tbsp honey
1/4 tsp curry powder
1/2 tsp cinnamon
salt and pepper to taste
Preheat oven to 450 degrees.
Spray 13x9 inch baking pan with olive oil spray
Peel, seed and cut up squash into cubes
Peel and quarter onion
Peel, core and cut up apples
Place chopped squash, onion and apples in pan
Spray with another spray or two of olive oil spray
Cook for 20-30 minutes or until all are tender
Let cool for 15 minutes or until cool
Put cooled cooked squash, onion and apple into food processor and puree
In a large pot put puree, pumpkin, broth and milk
Blend and bring to low boil over medium heat.
Add honey and spices.
Simmer for 10 minutes.
My copy-cat Panera Autumn Squash Soup turned out so darn good, I must say! The honey is dispersed over about 10 one cup servings, but could be subbed with sweetener. (I like the sweetness of the honey mixed with the full flavors of the squash, onions, and apples.)
I'm choosing not to count the one point the WW recipe maker states when I plug this all in, because the amount of honey is not enough for me, personally, to worry about. You may choose to count it towards your daily 7/weekly 49. If so, it is 1 point for 1 cup.
(If you wanted an even creamier version, sub skim milk with light unsweetened coconut milk. According to the recipe maker, the addition of unsweetened light coconut milk makes each cup 2 pp's)

Edamame zucchini salad
I came up with this idea to take to work for dinner!
Edamame Zucchini Salad Simply Filling +1pp for the dressing
I cooked up 1/2c frozen edamame and drained them
Made some zucchini noodles with my julienne peeler
Chopped some multicolored carrots
Chopped some green onion
Sliced some cherry tomatoes
Added 2 Tbsp Bolthouse miso with ginger dressing 1pp

Taco salad!
Taco salad Simply Filling + points for additional extras
- Romaine lettuce
- cherry tomatoes
- green onion
- 55g avocado 2pp
- fat free cheese if you use light cheese which I do that would add 2pp for 1oz/30g
- extra lean ground beef or turkey that I purposely had leftover to use for the salad
- a bit of taco seasoning sorry I just added maybe a tsp? I have also used vegetarian crumbles which were good.
- salsa
- 0% plain Greek yogurt or ff sour cream
- hot sauce or jalapeno peppers
Chop the lettuce then add the other ingredients. Simply Filling plus whatever extra's you choose to add.

Spring rolls with crab and Light spicy peanut satay sauce Simply Filling +3pp
Spring rolls with crab and Light spicy peanut satay sauce Simply Filling plus 3pp
rice wraps x 2= 2pp
veggies julienned I chose carrot, red pepper, cucumber and green onion
imitation crab you could also use chicken, shrimp, beef whatever you like.
2 Tbsp Pc Blue menu light spicy peanut satay sauce 1pp This is a Canadian brand.
Fill a round container with warm water. I just used an old frying pan.
Put a slightly damp tea towel on the counter. It helps to keep the wraps moist.
One at a time put the rice wraps in the warm water and gently submerge to get water over it. Leave for a minute or so or when touched it feels very soft. Gently take out keeping the shape and lay on the tea towel. Gently unravel if it's stuck together.
Lay the veggies and the meat of choice on the wrap and gently roll up like an egg roll. Cut in half and voila a spring roll :)
I promise after you've done it a couple of times it gets easier and just takes a couple of minutes!

Instead of grated cabbage I just bought a bag of coleslaw and used 1/2 of the bag
Extra lean ground beef cooked I was cooking some up for something else and just took a bit of it for lunch :)
Chopped green onion
2 tsp olive oil to get my oils in for today
I also added some red pepper flakes because I like it spicy
Kikoman stir fry sauce 1 tbsp 1pp
A splash of lower sodium soy sauce
Stir fry the cabbage in the oil until starting to soften. Add the stir fry sauce, red pepper if using and continue to cook until fully cooked. After putting in the dish add the green onion and a splash of soy sauce.
You could also use leftover pork, chicken, beef, shrimp, crab or add bean sprouts and keep it vegetarian!

Zucchini pizza Simply Filling plus 0pp if you use fat free cheese
This would be 100% simply filling if you use fat free cheese. I don't so I count 2pp for the cheese. I brushed a little olive on the zucchini before I grilled it because I need to get my oils in today. Don't know whether you'd have to do that.

Zucchini the bigger you choose the bigger the slices for the pizza simply filling
I sprinkled the slices with a little sea salt and pepper
1/8c pizza sauce the one I used is 0pp
5 slices Butterball Turkey Pepperoni 0pp
30g light cheese 2pp when you shred really fine this was a lot of cheese I could have used 15g
Jalapeno peppers 0pp

This is a knife and fork kind of pizza :) You would have to like zucchini to enjoy this but it made a nice change.
I put the zucchini on my grill pan and cooked till browned. Topped with the pizza sauce and other toppings and put under the broiler for a few minutes or you could just baked them for 8 to 10 minutes. Let sit for a few minutes then enjoy.

Tuna and pasta salad simply filling
Made this for lunch today! Very good :)

Ingredients:
- 1 cup diced onion
- 1 cup diced celery
- 2 cans of chunk light tuna packed in water and drained
- 3 cups, pre-cooked whole grain pasta
- 1 cup frozen peas, defrosted
- 2 tbsp Kraft fat free miracle whip
- 1/2 cup fat free plain Greek yogurt
- 1 tbsp red wine vinegar
- Salt and pepper to taste
The only thing I did differently was to use 3 Tbsp mayo and I also used apple cider vinegar as that was all I had. I also put a pinch of sweetener in because I don't like it too tangy.

Zucchini noodles
I used a julienne peeler to make zucchini noodles
1/2c classico tuscan style olive and garlice pasta sauce 2pp,
parmesan cheese 1pp,
1 tsp lemon olive oil and 1 tsp reg olive oil
Simply Filling +3pp
I put the olive oils in a frying pan and sauteed the zucchini noodles. Warmed the sauce the microwave and put it on top of the "noodles" and topped with parmesan cheese. So good!!

1 pkg (16oz) dried split peas
2 cups of lean ham or back bacon diced
1 c carrot diced (didn't have any this time)
1/2c onion diced
1 cup of celery diced
2 garlic cloves minced

1/4 tsp dried marjoram
1/4 tsp dried thyme
ground pepper
6 cups of low sodium fat free chicken broth (you can use water) add more if you want it thinner
salt to taste at the end of the cooking time
