Eggs Benedict Simply filling or 5sp or 5pp

I wanted to come up with a recipe that a little fancy. Good to make on the weekend when you have the time make it. Or Valentines day <3 If I had any baby spinach in the house I might have sauteed it and put it between the ham and the egg.

I cooked the sauce while I was cooking the potato.

I made a large slice of potato.
Spray a pan with butter spray then cooked the potato until soft. Turn over so both sides are browned.
This is the base instead of bread. You could also just use a slice of leftover sweet potato and just brown it.

When the sauce is nearly done I added one slice of free from black forest ham in the same pan as the potato to warm it up.

Take the sauce off of the pan and set aside. If it's too thick I added just a tsp or so of warm water to thin.

Add a little vinegar to the simmering water and slowly add a raw egg and cooked until desired hard/softness.

To assemble put the potato slice on a plate, ham and then egg. Spoon half the recipe for the Hollandaise sauce on top. I just put freshly ground pepper on top but you could do dill or parsley.



I didn't want a lot of sauce so I came up with this recipe which I'd use for two eggs.

Hollandaise sauce 2 servings sf, 2sp or 2pp Original recipe from food.com 
1 egg yolk
1/3c plain yogurt
3/4 tsp lemon juice
1/4 tsp dijon mustard
salt and pepper to taste
optional fresh dill or parsley

Beat the lemon juice, yogurt and egg well. No lumps.
Heat very slowly over hot water while stirring. I put a metal strainer over a pot of simmering water and put a metal bowl in it as I don't have a double boiler.

It does take a while to thicken but low and slow is the way to go.
Take off the heat and stir the mustard, salt and pepper.

Serve over ham and poached egg

Pumpkin cranberry baked oatmeal simply filling + 0sp



Pumpkin cranberry baked oatmeal 5pp, or simply filling or 4sp

1/3c uncooked quick oats
1/4c egg whites or 2 egg whites
1/4c skim milk
1/4c pure pumpkin
1/2 tsp pumpkin pie spice I like a lot so you may want less
sweetener to taste depends on how sweet you like it 1-2 packets
1/2 tsp baking powder
1/4c frozen or fresh whole or chopped cranberries
1/4 tsp sugar to sprinkle on top for a bit of crunch

I mixed all except the sugar. Put it into a ramkin or small baking dish. I oil mine first or use non stick spray. Sprinkle sugar on top. Update I let it sit a few minutes to soak up the liquid. 

I baked mine in my toaster oven at 375 for 25 minutes. You could bake this in the oven if you're cooking something else and then reheat in the microwave.

Egg, feta, tomato mini quiches

I saw this and was inspired to come up with my own recipe :)

I ate the whole serving and loved it!

Egg, feta, tomato mini quiches 5pp or Simply Filling plus whatever cheese you use

1 egg
2 egg whites
1 oz feta cheese crumbled or goat cheese
5 fresh basil leaves finely sliced although you could use dried
1 1/2 cocktail size tomatoes or you could use roma or even large cherry tomatoes
sea salt and ground pepper to taste

Beat the egg and the egg whites then add the crumbled cheese and the basil, salt, pepper.
I used parchment paper in muffin tins which are amazing because food never sticks to them but you could use oil.
Fill 3 muffin tins about 1/2 to 2/3 of the way full.
Place 1/2 piece of the cocktail tomatoes into each muffin tin.

I baked mine in my toaster oven at 375 for 23 minutes. When they are puffed up and slightly brown they are done :)

Big Mac Salad

I have made this a couple of time and love it!

Big Mac Salad 5pp or use extra lean beef and fat free cheese and you'd just count the dressing for SF
3 cups of chopped romaine lettuce
1/3c I used Mexican veggies ground round crumbles 2pp
30g light cheese 2pp
green onion
cherry tomatoes
2 Tbsp Kraft calorie wise thousand island dressing 1pp
1 lower sodium chopped up pickle

As with any recipe the points will depend upon the products you use.

Strawberry banana baked oatmeal


Strawberry banana baked oatmeal simply filling or 5pp

1/3c quick or minute oats uncooked
1/4 egg substitute or 2 egg whites
1 tbsp skim milk
1 tsp vanilla
1/2 tsp baking powder
sweetener to taste
1 banana mashed but keep a couple of slices to put on top
1/4c sliced strawberries keep a couple to put on top
1/2 tsp sugar to put on top

Mix the oats, egg, milk, baking powder, mashed banana and sweetener together.

Spray a ramekin or baking dish with non stick then pour mixture in.

Top with banana and strawberry slices then sprinkle sugar on top.

I put mine in my toaster oven at 375 for 20 -25 minutes or until puffed up and firm to the touch. You could always cook it in the oven the night before when cooking dinner and warm it up in the microwave the next morning.

Baked strawberry banana French Toast


Baked strawberry banana French Toast 5pp or simply filling

3 slices of light bread cut into cubes or other bread that counts as a power food I also use Ezekiel but only 2 slices
1/4c egg substitute
2 tbsp skim milk or more the bread need to be wet but not soaking
sweetener
1 banana mashed save a couple of slices to put on top before you mash it
1/3 cup sliced strawberries I used frozen ones that I took out of the freezer the night before
1/2 tsp sugar to sprinkle on top

Mix egg sub, milk and mashed banana all together.

Pour over the bread cubes and toss so you moisten all bread cubes.

 Put everything into a non stick sprayed baking dish. Top with banana slices and sprinkle of sugar.

I cooked it in my toaster oven at 375 for 20-25 minutes or until browned and crispy.

Slow cooker pumpkin cheesecake 5pp


I won't copy out the whole recipe again so go HERE to find the recipe for this pumpkin cheesecake.

The only thing I did differently was because of the size of my slow cooker I put water in the bottom then I have a glass round baking dish that fits perfect and stays on top so that what I used and it came out great.

1/8 of the whole thing is just 5pp which is fantastic for cheesecake. I served it with some light whipped cream 0pp and 1 tsp real maple syrup 0pp :)

The first slice was a pain to get out but after that it was easy sailing!

Brownie waffles

Made this and it was amazing :) It's also Simply Filling for those doing that!
Look what else I made with this recipe! I just added a drizzle more skim milk to make it a little thinner, added 1/2 chopped banana and it made 2 of these mini bundt cakes :) 

Brownie waffles 6pp, 7sp or 100% Simply Filling

Brownie waffles which are also simply filling
1/2c oats ground in blender
1 egg white I used 1/8c liquid egg whites
1 Tbsp unsweetened cocoa powder
1/2 tsp baking powder
sweetener
1/4c skim milk
1/4c light vanilla yogurt

mix all together
spray non stick on the waffle maker
made 2 in my waffle maker or one huge one :)

Update: I made these into pancakes and they were fantastic! I added a dash more of milk and a 1/4 tsp more of baking powder.

Apple cranberry oatmeal breakfast parfait


Apple Cranberry breakfast oatmeal parfait: 5pp or 100% Simply Filling
1/3c oats
1/2c light yoghurt (I used light vanilla)
1 apple chopped
cinnamon or pumpkin pie spice
I had some leftover sugar free cranberry sauce
1/2 banana mashed
stevia or other sweetener

Add water to the oats and cook until softened. I put mine in the microwave for 45 seconds. Add the mashed banana. Put aside. Add sweetener if you want I find it sweet enough without.

Take the apple and cinnamon and cook it in the  microwave for a minute or two until softened. Time would depend upon the type of apple you use. I added a couple of drops of stevia.

I used vanilla yogurt and added a little maple extract.

Now put half the yogurt in the bottom of whatever container/bowl you are using, then put 1/2 the oatmeal mixture, then 1/2 the apple mixture, I also put a little cranberry sauce on top (maybe a tbsp). Repeat.

I haven't made this the night before but I'm sure you could.

French toast with peanut butter/banana/chocolate

Had this today and it was amazing :)

French toast with peanut butter/banana/chocolate 5pp or simply filling plus 2pp

2 slices light bread
2 egg whites plus a tbsp skim milk, cinnamon and sweetener whisked together
banana slices
1/2 tbsp peanut butter warmed up
8g mini semi sweet chocolate chips
1 tbsp sugar free syrup

Dip the bread in the egg white mixture and cooked in a sprayed non stick pan. When brown turn over and brown the other side.
Put banana on top of the french toast, drizzle the 1/2 tbsp warmed peanut butter, sprinkle the chocolate chips on top and top with either a tbsp of sugar free syrup or 1 tsp of real maple syrup both 0pp.

Mexican breakfast wrap

Mexican breakfast wrap Simply Filling + 1pp for the cheese or 5pp

1 low carb high fibre small tortilla (I always counted these as Simply Filling)
1/3c fat free refried beans
1 egg
15g light cheese
salsa

Warm up the tortilla in one pan while cooking the egg in another one. Or warm up the tortilla and keep warm while cooking the egg. Spread warmed fat free refried beans on the tortilla, top with the egg and sprinkle the cheese on top and then a dob of salsa on top :)

Slow cooker meatballs and marinara

Update I put this in the ww recipe builder just the sauce and the meatballs made with extra lean ground chicken, 1/4c egg substitute and no skim milk as I didn't need it. With 2 meatballs/serving and it came out to 3sp/serving. The pasta is extra.

Using light bread for the bread crumbs and the light parmesan cheese divided by the servings comes to 0sp. So it would be SF + 0sp when using whole wheat pasta

I only needed to tweak it just a little to be simply filling :)

I replaced the bread crumbs the first time with light bread crumbs and this time with ground oats. I also used light parmesan cheese and no extra oil. Both ways came out great. This recipe makes big meatballs!! Ralph and I both love this. It also freezes well for a quick dinner.

Slow cooker meatballs and marinara

100% Simply Filling (the amount of light parmesan cheese in the meatballs is 0pp when divided between 16) or 5pp
Pasta would be counted separately (it is Simply Filling as well)
AlsoI add 1/2 Tbsp parmesan on top and count that as 0pp

For the meatballs: Makes 20 big meatballs
1/2c light bread crumbs or  ground oatmeal (I just put it in the nutribullet)
1/4c light parmesan cheese
1 Tbsp Italian seasoning
1/2 tsp garlic powder
1 eggs
1/4c skim milk
1 lb 95% lean ground beef

Mix all together and I just popped them in the toaster oven or you could cook in a skillet. Just till browned do not have to be cooked through.

For the sauce: I just put all this in the slow cooker and added the browned meatballs to it.
2 cloves of garlic
1 small onion chopped
28oz can of crushed tomatoes
8 oz tomato sauce (I added a little bit more as it was really thick)
6 oz tomato paste
1 tsp dried basil (could use 2 tbsp of fresh but I don't have any around)
2 tsp Italian seasoning
1 tsp of salt
sweetener a pinch
1 bay leaf

Put all in the slow cooker and cook on low for 8 hours.

Serve over whole wheat spaghetti noodles.

Spaghetti and Meatballs

I came across this recipe!

Update: I only used 1 egg and it was fine :)

A simple tweak to use light bread for the bread crumbs and whole wheat pasta which kept it simply filling. I also used light parmesan cheese which when divided into the servings came to 0pp. Emily has calculated 2 big meatballs and 1/3c sauce is 5pp, pasta would be extra.

I did add extra parmesan cheese on top so I counted that as 1pp.

Fluffy lemon ricotta pancakes from Weight Watchers

Fluffy lemon ricotta pancakes from Weight watchers.

I use Greek yogurt instead of the Ricotta cheese and milk with a tsp of vinegar or lemon juice instead of the buttermilk and they still turn out great. Yes I tweak things a lot :)

Fluffy Lemon Ricotta Pancakes ( I make 1/2 of this recipe eat 1 serving and freeze the rest)
1 1/2c all purpose flour (I use white whole wheat flour)
1 tsp baking soda
1/2 tsp salt (I just use a pinch because I'm watching my sodium)
1 cup of buttermilk (I use milk plus 1 tsp of lemon juice or vinegar)
2 large eggs yolks and whites separated into separate bowls
2 tbsp sugar
2 tbsp of lemon zest to save time I just used a tsp of lemon extract
1/2c part skim ricotta cheese (I use plain Greek yogurt)
Non stick spray or olive oil in a spritzer

Mix flour, baking soda and salt together.
In a large bowl mix buttermilk, egg yolks and sugar, lemon zest and ricotta cheese.
In a separate bowl beat egg whites with an electric mixer (I just used my aerolatte) beat until soft peaks form.
Add dry ingredients into the buttermilk ingredients then very gently fold in the egg whites until just mixed.

Use 1/4c of mix to make one pancake.

2 pancakes is one serving 5pp update according to the weight watchers site this recipe for smart points is calculated at 6sp :) 

I served them with a lemon ginger fruit dip for the topping.

Baked individual oatmeal recipe

I have started this blog as a way to keep track of new recipes/concoctions I come up with and wish to share with my Facebook group Weight Watchers and Us.

I am doing Simply Filling so that's what the points will show but I'll also try to figure out regular pp when I can.

If you have any questions please comment or e-mail me and I will answer as soon as I can.

The first recipe I'll share is my version of Baked Oatmeal. I make a basic recipe and change the add in's depending on the time of year and what I'm craving.



The Basic Baked Oatmeal: 100% simply filling or 4pp for the basic recipe using egg substitute and almond breeze
1/3c oatmeal uncooked I use quick oats 3pp. I wouldn't use instant but rolled oats might work, I haven't tried them.
1/4c skim milk or almond breeze AB would be 0pp
1/4c egg substitute or one egg Egg substitute would be 1pp
1/2 tsp baking powder 0pp
sweetener of your choice opp
I usually add 1 tsp of coarse sugar/turbinado sugar on top for crunch and because it's 0pp

To that I'll add any one of these add in's: usually just 1/4 - 1/3c of fruit
chopped apple/cranberries, cinnamon
cocoa/chopped banana
canned pumpkin/cranberries, pumpkin pie spice
blueberries/mango

Mix and put into a sprayed 1c ramekin.

I bake these in my toaster oven while I'm enjoying my coffee :) 350 for 25 minutes or until puffed up and starting to brown.

Corn Salad 2sp

I just made an individual amount for me so if you make more than one serving it might change the points. Corn Salad 2sp 1/2c corn which...
