Banana bread donuts or bread 4sp

The points will depend upon which instant oats you use. I'm in Canada and when I was in the grocery store I picked up the quaker brown sugar and cinnamon instant oats for 4sp.

I made this in my donut/bagel pan today but they did stick even though I sprayed non stick so next time I think I will wait till they are cool to take them out or I may make it into muffins using the parchment paper liners I use. They still tasted great :) The original recipe made them into small individual banana breads but I don't have the mini containers and it also called to bake it for 40 minutes and I didn't want to wait that long.

Banana bread donuts or bread 4sp or 1sp each for the donuts. (put into the WW recipe builder)

  • 1 packet of instant oats I chose brown sugar and cinnamon 4sp
  • 1 egg
  • 1 medium banana mashed
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • cinnamon to taste
I mashed the banana with a fork and added all the other ingredients.

I baked these in a 350 oven but may use 325 next time. Might help with the sticking. I baked them for 10 minutes. If making muffins I'd probably check at 15 minutes.

Gluten free banana oat waffles Simply Filling

A friend posted this recipe from MyFitnessPal and I just had to try it!
Thanks Victoria S

Gluten free banana oat waffles Simply Filling makes 4 waffles 1 waffle is 1 serving (will depend upon your waffle maker size)

2 cups of oats
1 cup of skim milk
1.5 tsp vanilla extract
2 eggs
1 banana
1 tsp cinnamon
1 tsp baking powder
I used stevia as my sweetener but use whatever sweetener you like

I blend it all in my bullet blender.

Heat your waffle maker.
Spray with non stick.

Update: next time I'd use 1 egg and 2 egg whites and beat the egg whites until foamy and slowly stir them in to the batter. It would make them lighter and less chewy!

Strawberry banana baked French toast 4sp or simply filling!

If you have ezekiel bread in your freezer use that because it's a heartier bread and keeps it's shape and it's still 4sp or simply filling. I didn't have any left today so I used a thin bread.

Strawberry banana baked French toast 4sp or simply filling

2 slices of Ezekiel bread or thin sliced bread 4sp
2 egg whites 0sp
1/2 tbsp ff cream 0sp
1/4 tsp vanilla extract 0sp
4 strawberries sliced or chopped 0sp
1/2 medium banana sliced 0sp
sweetener to taste 0sp
1/4 tsp sugar 0sp
1/2 tbsp sf pancake syrup 0sp

mixed the egg whites, cream, vanilla and sweetener together. Set aside.
cube the bread into medium sized pieces you don't want them too small.
add the strawberries and bananas to the bread chunks.
Pour the egg white mixture over the bread and fruit and gently toss to wet all the bread cubes.
Spray a baking dish with non stick spray and pour the bread mixture into it.
Sprinkle the 1/4 tsp of sugar on top for crunch.
I baked it in my toaster oven on 350 for 20 minutes or until bread starts to brown and be crispy.
After it's cooked I drizzled 1/2 tbsp sf pancake syrup on top!
Enjoy.

Chocolate banana quinoa hot cereal Simply Filling +0sp

Chocolate banana quinoa hot cereal Simply Filling + 0sp

1/4c uncooked quinoa
1/2c skim milk
1 cup water
1/4c egg whites or 2 egg whites
sweetener to taste
banana chopped leave a few to put on the top
2 tsp unsweetened cocoa
3g hemp hearts 0sp  Optional
2g unsweetened cocao nibs 0sp Optional

Next time I'll cook it in my electric pressure cooker which would be quicker and stir in the egg white quickly when it's finished cooking. The heat will still cook it.

Put quinoa, skim milk, cocoa and water in a non stick pan.
Bring to a boil and then reduce to a simmer.
Stirring continuously add in the egg whites. You won't taste them but it adds protein and a lot of creaminess.
Cook and stir until creamy usually 14-16 minutes.
Add in most of the banana and sweetener.
Put into a bowl and add the banana and hemp/nibs if using.
Let sit to cool a bit and thicken up.
Enjoy!

Lemon cranberry banana bread

I tried this last week and tweaked a few things and it really didn't work out so I decided to try it again today.

I printed out this recipe and just tweaked a couple of things today. I replaced the sugar with sweetener and used lemon extract instead of orange. With the tweaks and making 3 mini loaves that had 6 slices each they came out to 1pp/slice.

Think of the possibilities: cocoa/white chocolate chip, banana pecan, pumpkin cranberry, lemon poppyseed etc

Lemon cranberry banana bread

Ingredients
1 cup of all purpose flour
1/2 cup of whole wheat flour
1/2c sweetener that measures like sugar
1/2 tsp vanilla vanilla extract
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup of egg substitute or 2 eggs
1/2 cup of unsweetened apple sauce
3 mashed very ripe bananas approximately 1 cup
1 tsp of lemon extract
1 cup of fresh or frozen cranberries cut in half
1 tbsp lemon zest

Directions:
mix together all dry ingredients
in a separate bowl mix eggs, applesauce, vanilla extract, lemon extract, lemon zest and mashed bananas
stir banana mixture into dry mixture then fold in cranberries
do not over stir, stir just till dry ingredients are incorporated
baked in 3 mini pans for 30 minutes at 350 degrees
loaves are done when toothpick comes out clean.

3 mini loaves 6 slices each

Chocolate peanut butter banana oatmeal pancakes

Chocolate peanut butter banana oatmeal pancakes Simply Filling +1pp for the pb2

Update: I didn't have cottage cheese and used yogurt and it worked out fine, I also increased the cocoa because I love a strong chocolate flavor. You could also use dark cocoa to do the same thing.

1/2c oats personally I count it as SF but use pp if you don't
1/2 tsp baking powder
1/4c cottage cheese
1 egg or 1/4c egg substitute or 2 egg whites
1.5 tbsp Pb2 1pp
2 tsp unsweetened cocoa 0pp
sweetener to taste I used 2 packets
Banana sliced
Sugar free pancake syrup 0pp
Skim  milk if needed

Put the oats, baking powder, cottage cheese, 1 egg, 2 tsp of cocoa powder, sweetener in a bullet or blender. Let sit for 5 minutes. If it's too thick add in a bit of skim milk.

Cook pancakes in a non stick sprayed pan and right after you've done that take a few banana slices and gently push them into the top of the pancakes.

Top with syrup and the rest of the banana :)

Banana muffins 1pp!

Thanks to my online friend Ida for passing along this recipe! Original recipe is here
I love these Tulip parchment papers which were in the discount bin :)

Banana muffins 1pp depending which sweetener you use.

I did tweak a couple of things.

3 ripe bananas mashed
1 cup of splenda baking sweetener a friend has used 1/2 stevia and 1/2c splenda brown sugar blend which increases pp to 2pp/muffin. 1/2c splenda and 1/2c sugar would be 2pp/muffin.
1/2c unsweetened applesauce
I added one egg because it seemed pretty dry divided between 11 muffins doesn't add pp
3/4c all purpose flour
1/2c whole wheat flour
1/2 tsp salt
1 1/2 tsp baking soda I used 1 tsp baking soda and 1/2 tsp baking powder

Mix all together and bake in a 350 degree oven for 20 minutes.Mine took 18 minutes

Makes 12 muffins Using my trusty ice cream scoop which measures 1/4c I came out with 11 muffins

Banana chocolate chip baked French toast Simply Filling + 1sp

Banana chocolate chip baked French toast/bread pudding simply filling + 1sp I used a bread that was 4sp for 2 slices of bread so the smart points were 5sp!

Banana chocolate chip baked French toast

2 slices of Ezekiel bread or 3 slices light bread for simply filling or 2 slices of bread of your choice cut into cubes
1/4c egg substitute or 2 egg whites or 1 egg
2 Tbsp skim milk you may need more depending on the bread. You want it really wet but all the liquid soaked up in the bread cubes.
Sweetener I used 1 pkt
1 banana 3/4 mashed the other sliced thinly
50 mini semi sweet chocolate chips 1sp
pinch of sugar 0sp

Put the cubed bread into a bowl.
In another small bowl add egg subsitiute, skim milk, sweetener and the mashed banana. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of milk. Now add all but a couple of the banana slices and most of the chocolate chips leaving a few to sprinkle on top. Put into an oven proof dish. Put the extra banana slices and chocolate chips on top and sprinkle the sugar on top

I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) Sorry didn't look at the clock but around 25 minutes while I did other things. Time depends on what kind of bread you use the denser the bread it will take a little longer.
