Oatmeal cornmeal pancakes Simply Filling

I saw the recipe on Face Book and wrote it down. Thanks Mary Jane Petersen!

Oatmeal cornmeal pancakes 2 servings  Simply Filling or 3 sp with freestyle or 4sp 

1/4c quick oats
1/4c corn meal
1 tbsp splenda or sweetener to taste
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup ff plain yogurt I used vanilla
1 egg beaten
1/8 tsp or more of cinnamon
non stick spray

Makes 4 pancakes. I used 2 as a serving which are SF or 4sp

Mix altogether. Let sit a couple of minutes then use the batter as you normally would.

Cottage cheese oatmeal pancakes simply filling or 6pp for the whole recipe

1/3 cup oatmeal uncooked
1/3 cup fat free cottage cheese
1/4 cup egg whites
1/2 tsp baking powder
1 tsp vanilla
1 packets sweetener I used Truvia

Add cottage cheese, egg whites, baking powder, vanilla and sweetener and oats to bullet or blender. Blend till smooth.
Make sure to brown before turning over carefully.
I added a sliced banana but you could leave it out or add other fruits.

Sausage oatmeal pancakes Simply Filling +2pp

For some reason I just think sausage and pancakes go together :)

So I came up with this recipe.

Sausage pancakes with sugar free syrup Simply Filling +2pp

2 lilydale turkey breakfast sausages cut into half length wise
1/2c quick oats uncooked
1/2 tsp baking powder
1/4c 0% plain Greek yogurt
1 large egg or 2 egg whites
1 tsp vanilla extract
1 tbsp splenda baking granular or whatever sweetener you use
sugar free pancake syrup

I had previously cooked the sausage so I just cut them length wise in half.

I put all ingredients except the sausage and the syrup in my bullet.

Made 4 long shaped pancakes in pan then put a sausage on top of each one.
Cook until bottom is browned then flip over.
Top with sugar free syrup

Pineapple upside down pancakes simply filling

Oh my these taste great!

Pineapple upside down pancakes simply filling

1/2c quick oats uncooked
1/2 tsp baking powder
sweetener to taste 1-2 packets
2-3 slices of canned pineapple depends on how many pancakes you make blot them with a paper towel so the're not too wet
1/4c light yogurt sugar free I used vanilla
1 egg or 1/4 egg substitute or 2 egg whites whichever you prefer I used 1 egg today
1/2 tbsp brown sugar 0pp

Mix everything except pineapple and brown sugar in a bullet or use a stick blender. Let sit a couple of minutes as it gets thicker when you wait a few minutes.

You can make 2 - 3 pancakes depending on the size :) I made 2 today.

Pour 1/3- 1/2 of the batter in a non stick sprayed heated pan. Now put 1 of the pineapple rings on top.

There are 2 ways to finish them.
1. you can spread some of the brown sugar on top. Give the tops a quick spray with non stick and turn over after the bottom half has browned. Cook until browned then very carefully, because the sugar makes them sticky, turn over.
2. don't put the brown sugar on yet. Turn over and when cooked put them on a baking sheet, sprinkle the pineapple tops with the brown sugar and put under broiler for a minute or two or until browned. I haven't tried this method but it should work fine.

I used #1 method. Even if they don't turn over perfectly they taste divine :)

I topped my with a drizzle of 1 Tbsp of sugar free pancake syrup.

Pina colada pancakes Simply Filling

1/2c of quick oats
1/4c egg substitute or 1 egg or 2 egg whites
1/4c light yogurt I used Astro 0% pineapple passion
1/2 tsp baking powder
2g unsweetened coconut I put 1/2 in the mix and half sprinkled on top 0pp
1/4c chopped pineapple which is all I had next time I'd use crushed pineapple
1/4 tsp coconut extract
If you use plain yogurt you might want to add some sweetener

Mix all together saving a little coconut and pineapple to put on top.

Cook as you normally would cook pancakes

Chocolate peanut butter banana oatmeal pancakes


Chocolate peanut butter banana oatmeal pancakes Simply Filling +1pp for the pb2

Update: I didn't have cottage cheese and used yogurt and it worked out fine, I also increased the cocoa because I love a strong chocolate flavor. You could also use dark cocoa to do the same thing.

1/2c oats personally I count it as SF but use pp if you don't
1/2 tsp baking powder
1/4c cottage cheese
1 egg or 1/4c egg substitute or 2 egg whites
1.5 tbsp Pb2 1pp
2 tsp unsweetened cocoa 0pp
sweetener to taste I used 2 packets
Banana sliced
Sugar free pancake syrup 0pp
Skim  milk if needed

Put the oats, baking powder, cottage cheese, 1 egg, 2 tsp of cocoa powder, sweetener in a bullet or blender. Let sit for 5 minutes. If it's too thick add in a bit of skim milk.

Cook pancakes in a non stick sprayed pan and right after you've done that take a few banana slices and gently push them into the top of the pancakes.

Top with syrup and the rest of the banana :)

Apple fritter pancakes


Apple fritter pancakes Simply Filling

1/3c of oat flour which is just oats put into a blender until it looks like flour
1/2 tsp baking powder
1/4c 0% Greek yogurt or you could use light but I'd use a little less so that it's not too runny
1 egg, 2 egg whites or 1/4c egg substitute I used an egg
1 tsp vanilla
1/2 tsp cinnamon or apple pie spice
sweetener
apple rings made from a cored apple and sliced on a mandoline or thinly cut 1/4 inch or so

Combine the oat flour and all the other ingredients except the apple rings. Add a bit of skim milk if too thick.

Dip the apple rings on at a time and cook on a non stick sprayed griddle or large skillet until browned then turn and cook on the other side.

I drizzled them with sugar free pancake syrup you could also use caramel syrup or just dust with some powdered sugar :)

Protein pumpkin pancakes

A fellow Weight Watcher sent me this recipe and as soon as I saw it I knew I had to try it :) 100% Simply filling!

I have to be honest here. I wasn't too fussy about these. It was a texture thing. They are like the banana egg ones but I like those a lot better. Anyway try them if you like.

Protein pumpkin pancakes Simply Filling or 4pp
1/4c oats ground into flour or just put all ingredients and blend
6 egg whites
1/4c pure pumpkin puree not pumpkin pie filling
2 tsp baking powder
1/2 tsp pumpkin pie spice
a little vanilla extract
sweetener to taste

Made 5 pretty big pancakes for me

Oatmeal Pancakes

Oatmeal Pancakes Simply Filling or 6pp if you use egg whites

1/2c quick oats uncooked
1/2 tsp baking powder
1/4c ff cottage cheese
1 large egg or 2 egg whites
1 tsp vanilla extract
1 tbsp splenda baking granular or whatever sweetener you use
(I added a couple of tbsp of skim milk to make it a bit thinner)
I also added sliced banana I put them on top of the mix when I first put them in the pan.

Put all ingredients in blender or use immersion blender. Cook on a non stick/or non stick sprayed pan. Be careful turning them. Make sure to wait until they are cooked before trying to flip them.

Makes 3 pancakes that are very filling :)

The best simplyfilling pancakes

That's the name of them :) I found the recipe here

The best simplyfilling pancakes 100% simply filling or 7pp

1/4c uncooked oatmeal
1/4c cornmeal
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt (I don't add this)
sweetener to taste
1/2c Greek yogurt or fat free cottage cheese (if using regular yogurt just use 1/4c)
1 egg white

I put everything in my bullet mixer if using cottage cheese otherwise you can just stir together! Let sit 10 minutes although I've let them sit a couple of minutes and it's been fine. Cook as you would for any pancakes. Spray non stick or use oil (add pp or can be part of simply filling oil allowance)

Fluffy lemon ricotta pancakes from Weight Watchers

Fluffy lemon ricotta pancakes from Weight watchers.

I use Greek yogurt instead of the Ricotta cheese and milk with a tsp of vinegar or lemon juice instead of the buttermilk and they still turn out great. Yes I tweak things a lot :)

Fluffy Lemon Ricotta Pancakes ( I make 1/2 of this recipe eat 1 serving and freeze the rest)
1 1/2c all purpose flour (I use white whole wheat flour)
1 tsp baking soda
1/2 tsp salt (I just use a pinch because I'm watching my sodium)
1 cup of buttermilk (I use milk plus 1 tsp of lemon juice or vinegar)
2 large eggs yolks and whites separated into separate bowls
2 tbsp sugar
2 tbsp of lemon zest to save time I just used a tsp of lemon extract
1/2c part skim ricotta cheese (I use plain Greek yogurt)
Non stick spray or olive oil in a spritzer

Mix flour, baking soda and salt together.
In a large bowl mix buttermilk, egg yolks and sugar, lemon zest and ricotta cheese.
In a separate bowl beat egg whites with an electric mixer (I just used my aerolatte) beat until soft peaks form.
Add dry ingredients into the buttermilk ingredients then very gently fold in the egg whites until just mixed.

Use 1/4c of mix to make one pancake.

2 pancakes is one serving 5pp update according to the weight watchers site this recipe for smart points is calculated at 6sp :) 

I served them with a lemon ginger fruit dip for the topping.

Banana Egg Pancakes

This is a very simple recipe and very tasty!

Banana Egg Pancakes 100% simply filling or this is where it gets a little crazy. The e-tools when I added this in came to 7 pp or if you add it in as separate ingredients it comes to 4pp. (bacon not included :) I added 2 pts for the bacon)

1 banana mashed
2 eggs beaten

Add both together. That's it!

Spray your pan with non stick and cook up like regular pancakes. They are  a bit delicate so make sure it's browned before you try to flip them.

Feel free to choose a topping or eat them as is.

For this recipe I made a blueberry topping. I put 1/4c of frozen blueberries in a microwave safe measuring cup, added 1/2 tbsp water and 1/2 tsp corn starch, 1 pkg of truvia as my blueberries weren't very sweet. Microwave for a minute stir and microwave again for 30 seconds or until bubbly and thickened. 100% simply filling and 0pp
