Individual baked peach oatmeal Simply Filling


Baked peach oatmeal 1 serving Simply Filling

1/2c quick oats
1 egg, or 2 egg whites or 1/4c egg substitute
1/3c skim milk
Sweetener to taste put it how much you would put in a bowl of plain oatmeal
1/2 tsp vanilla extract
1/2 tsp cinnamon
1 peach cut into cubes save some slices for on top
1/2 tsp baking powder
1/4 tsp of sugar sprinkled on top

Beat the egg, milk, vanilla together.
Put the oats in a bowl, add the cinnamon, sweetener and baking powder. Stir
Add the egg mix to the oats.
Stir in the cubes peaches.
Let sit for a few minutes to absorb some of the liquid then put into a non stick sprayed baking dish.
Put the peach slices on top and sprinkle with the sugar.

I baked in my toaster oven 325 for 23 minutes or until set.

Peach ginger almond breakfast parfait simply filling plus 1pp or 7pp

If following simply filling use skim milk

Peach ginger almond breakfast parfait SF + 1pp or 7pp
Serves 1

1/3c old fashioned oats
3/4c skim milk
1/2c water
1/4 tsp ground ginger
sweetener to taste
1/2 tsp vanilla extract

Put all in a small pan and bring to a boil and then turn down to simmer until thick and creamy. Allow to cool then put in a covered container overnight in the fridge.

Next morning assemble the parfait.

1/2c fat free vanilla yogurt
1 peach chopped
5g slivered almonds

Layer half the oatmeal mixture then the yogurt then the peach.
Repeat.
Top with slivered almonds.

Multigrain peaches and cream hot cereal simply filling

This is definitely not like instant peaches and cream oatmeal it's better :) It's a stick to your ribs chewy bowl of amazing!!

I tried making this in the microwave and I would definitely make this on the stove top. You could make double or triple and put extra in individual dishes either in the fridge or freezer to heat in the microwave a different day!

I also wouldn't buy containers of the grains but go to your bulk section or health food store bulk section and buy a cup of each for a dollar or two. That will make many breakfasts.

Multigrain peaches and cream hot cereal simply filling

2 tbsp bulgur
2 tbsp pearl barley
3 tbsp old fashion rolled oats
3/4c water
1 tsp vanilla
if the brown sugar doesn't make it sweet enough add a bit of sweetener of your choice
1/2 peach chopped
1-2 tbsp fat free cream I just used 1
1/2 tbsp brown sugar 0pp

Put the bulgur, barley, oats, water, vanilla and optional sweetener in a saucepan and cook on medium heat until boiling then keep stirring until thickened. It will still be chewy but cooked. Add the peach and cook for another minute or two.

Put into bowl. Sprinkle brown sugar and pour cream on top :)

I also made this with a banana and a bit of maple extract :)

Peach raspberry baked French toast/bread pudding! Simply Filling

2 slices of Ezekiel bread cut into cubes in Canada Ezekiel bread is SF or use whatever bread you use
1 egg
1-2 Tbsp skim milk or fat free cream you want it wet but not totally swimming in liquid a heavier bread will need more
1 tsp vanilla extract
1 packet of sweetener or sugar free syrup
1 peach chopped up
a few raspberries
I like to sprinkle either 1 tsp of sugar or 1 tsp maple syrup, or sf syrup 0pp on top to make it nice and crusty

Put the cubed bread into a bowl.
In another small bowl I beat the egg added the milk and sweetener and vanilla. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of milk. Now add the peach and the raspberries. Put into an oven proof dish. Sprinkle the sugar or drizzle the maple syrup or sf syrup on top.

I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) Sorry didn't look at the clock but around 20 minutes while I did other things.
