Blueberry raspberry oatmeal parfait Simply Filling

You could make this the night before but I prefer the oatmeal room temperature.
The ezekiel original cereal that I sprinkled on top is a power food here in Canada.

Blueberry raspberry oatmeal parfait Simply Filling

1/3c oatmeal
1/3c water
sweetener to taste
1/2 tsp vanilla extract

Add all together and cook in microwave for about a minute and 25 seconds or until water is absorbed. Let sit to cool.

When cool stir in 1 tbsp ff cream.

1/3c blueberries
1/3c raspberries
3/4 c light vanilla or other flavored yogurt
1 tbsp original Ezekiel yogurt

I used a mason jar and put 1/2 of the oatmeal in the bottom, followed by 1/2 of the yogurt and 1/2 of both berries.

Repeat.

On top sprinkle the cereal.

Berry oatmeal muffins Simply Filling

These muffins are not the light very sweet kind. They are filling and do not set off my sweet cravings.

I was looking at a baked oatmeal that someone posted but tweaked it and did a lot of changes to it.

Berry oatmeal muffin Simply Filling

2 cups of oatmeal I used quick oats
1 1/2 tsp baking powder
1 Tbsp chia seeds
1 tsp cinnamon
Sweetener to taste I used 1/4c of a baking blend sweetener
1 tsp vanilla extract
1 cup of skim milk
1/3 cup of light vanilla yogurt
2 egg whites or 1/4 cup of liquid egg whites
1 1/2 cup of berries fresh if you want I used a frozen mix of blueberries, cherries and mango
1 tsp of turbinado sugar to sprinkle on top which add up to 0sp divided between muffins

I mixed all the liquid ingredients and then added them to the dry ingredients.
When I use frozen berries I add them to the dry ingredient and toss to coat them. Then add the liquid ingredients.

Let sit for a few minutes for the oatmeal to soak up some liquid.

I divided between 10 cups and sprinkled with the sugar.

I cooked approximately 18-20 minutes in my toaster oven and broiled them for a bit to brown the tops.

Put onto a cooling rack to cool.

Freeze any uneaten for later use.

Berry cobbler cup simply filling


Single serve Berry cobbler cup Simply Filling or 1sp or 1pp

1 1/2 tbsp skim milk
2 tbsp of oat flour which is just oats ground up into flour
1 packet of truvia or other sweetener
1/4 tsp vanilla
1/4 tsp baking powder
1/3c of berries of your choice I used a mixture of blueberry and raspberry and blackberries
1/4 tsp sugar 0pp
Butter flavored spray

Coat a small baking dish with non stick spray
Put your berries in the dish
In a small bowl add the milk, oat flour, sweetener and baking powder and stir let sit a few minutes to absorb some of the liquid. pour on top of the berries.
Quick spray of butter flavored pam on top.
Sprinkle the sugar on top as it gives a nice bit of crunchiness

I put this in my toaster oven while I made lunch for approximately 15-18 minutes or until lightly browned.

Apple berry cobbler Simply Filling

Loved this! The husband said it was amazing :)

Apple berry cobbler simply filling
This made 2 ramekins each was 1 portion

I took the blueberry scone recipe and omitted the blueberries and put it on top of apple/berries :)

1 small apple chopped smallish so they'd cook faster
8 frozen strawberries
1/3c leftover sugar free cranberry sauce

I put them all in a small pan. Of course you could use any berries you have on hand. Heated them until the strawberries were thawed and the apple starting to cook.

Divide between to ramekin dishes mine are the 1 cup size.

I then made this blueberry scone recipe but left out the blueberries. I took 1/3 of the recipe out and divided it between the ramekins and baked in a 350 oven for 25 minutes.

Then I added a few frozen blueberries to the rest of the recipe and poured it into a small glass baking dish to make 4 blueberry scones for later :)

Berry whip Simply Filling

Berry whip Simply Filling 2 servings or 1/3 for me and 2/3 for the hubs which is how it went today :)

1c frozen fruit of your choice today I made strawberry but I also love blueberry or cherry
1c fat free cottage cheese
drizzle of skim milk if needed

That's it!
Put the frozen fruit it first followed by the cottage cheese.
I just put this in my nutri bullet and whip it. If it's hard to get it started add a little skim milk.

This tastes just like cool whip and berries :) You can add a little sweetener if the fruit isn't very sweet.

Berry whip!

This is one of my favorite desserts/snacks :) Don't let the ingredients fool you it tastes amazing and you can't taste the cottage cheese!

1/2c fat free cottage cheese
1/2c frozen fruit I chose cherries today
skim milk the amount depends on which fruit you use
1 packet of sweetener

Put all in a bullet and blend until all mixed. Keep scraping down the sides and add milk as you need it. I would start with maybe 1/8th of a cup.  Enjoy
