Baked chocolate raspberry breakfast donuts SF or 3sp

No they're not really donuts just baked oatmeal but they were cute and very tasty. I added some chopped banana to mine today because I had some bananas that I need to use up. They looked much better in person. The sun was beaming in the window this morning 🌞

Baked chocolate raspberry breakfast donuts SF or 3sp

1/3c quick oats
1 egg
2 Tbsp skim milk
1/2 tsp baking powder
2 tsp dark unsweetened cocoa powder
10 raspberries
1 packet of sweetener (I used to use 2 but I'm cutting back on sweetness)

Mix dry ingredients together.
Mix wet ingredients together.
Add both and stir in raspberries.

I spooned it into 4 donut pan sections.
Baked at 325 for 10 minutes but check to make sure they're set.
Serve with raspberries and Sugar Free syrup if you like.

Apple pie oatmeal simply filling or 5sp

Made this today and it's one of those recipes where I was thinking mmm, mmm, mmm delicious :)

Apple pie oatmeal simply filling or 5sp

1/2 cup oatmeal 5sp
1/3 cup of unsweetened almond breeze 0sp or 1/3c skim milk for simply filling
2/3 cup of water 0sp
Scoopable apple pie 0sp
1 Tbsp sugar free syrup 1sp

I added the oatmeal, the almond breeze and the water together and cooked it in the microwave for 1 minute and 45 seconds depending on your microwave. You could also cook on the stove.
I put the scoopable apple pie on top and put it back in the microwave for 25 seconds.
Topped with the syrup.

Blueberry crisp oatmeal Simply Filling +2sp

Made this today and it was delish!

1/3 cup of old fashioned oats cooked (you could use whatever kind you have) I added sweetener
1/3 cup frozen blueberries thawed
Topping
1/4 cup of uncooked old fashioned oats
1-2 tsp light margarine (1sp) you may be able to use 1 tsp but it's the same points
1/2 Tbsp brown sugar (1sp)
Mix the oatmeal with the marg and sugar by hand.
Spread out on a non stick pan (I use non stick foil) and put into the toaster oven on 375 until browned and crispy it does take a few minutes but it's oh so good :)

Make the oats and top with blueberries and then the crisp topping! Enjoy

Apple Cranberry Baked Oatmeal Simply Filling

This tasted amazing this morning! Takes a couple of extra minutes for the apple but so worth it for the taste :)

Apple Cranberry Baked Oatmeal Simply Filling 1 serving
If doing smart points use 1/4c egg whites instead of the egg and it's 4sp in the recipe builder

1/2 an apple chopped not too small or too big :)
1/2 tsp cinnamon
olive oil spray or non stick spray
my apple was very tart so I sprinkled a little sweetener on it

Warm a non stick frying pan. Spray with olive oil or non stick. Add the apple and sprinkle with cinnamon and sweetener if using. Saute until starting to soften and brown. Put aside.

1/3c quick oats
1 egg beaten or 1/4c egg substitute
1/4 cup of light vanilla yogurt
1/2 tsp baking powder
Sweetener to taste put what you would normally put in a bowl of oatmeal
1/3c cranberries I used frozen that I had thawed overnight
1/4 tsp turbinado sugar or regular sugar 0sp

Mix all ingredient except the sugar. Add in the cranberries and the apple mixture.

Sprinkle the sugar on top.

Spray a 1c ramekin dish with non stick or olive oil.
Pour in the mixture.

I baked in my toaster oven at 375 for 20 minutes.

Gluten free banana oat waffles Simply Filling

A friend posted this recipe from MyFitnessPal and I just had to try it!

Gluten free banana oat waffles Simply Filling makes 4 waffles 1 waffle is 1 serving (will depend upon your waffle maker size)

2 cups of oats
1 cup of skim milk
1.5 tsp vanilla extract
2 eggs
1 banana
1 tsp cinnamon
1 tsp baking powder
I used stevia as my sweetener but use whatever sweetener you like

I blend it all in my bullet blender.

Heat your waffle maker.
Spray with non stick.

Update: next time I'd use 1 egg and 2 egg whites and beat the egg whites until foamy and slowly stir them in to the batter. It would make them lighter and less chewy!

Blueberry raspberry oatmeal parfait Simply Filling

You could make this the night before but I prefer the oatmeal room temperature.
The ezekiel original cereal that I sprinkled on top is a power food here in Canada.

Blueberry raspberry oatmeal parfait Simply Filling

1/3c oatmeal
1/3c water
sweetener to taste
1/2 tsp vanilla extract

Add all together and cook in microwave for about a minute and 25 seconds or until water is absorbed. Let sit to cool.

When cool stir in 1 tbsp ff cream.

1/3c blueberries
1/3c raspberries
3/4 c light vanilla or other flavored yogurt
1 tbsp original Ezekiel yogurt

I used a mason jar and put 1/2 of the oatmeal in the bottom, followed by 1/2 of the yogurt and 1/2 of both berries.

Repeat.

On top sprinkle the cereal.

Berry oatmeal muffins Simply Filling

These muffins are not the light very sweet kind. They are filling and do not set off my sweet cravings.

I was looking at a baked oatmeal that someone posted but tweaked it and did a lot of changes to it.

Berry oatmeal muffin Simply Filling

2 cups of oatmeal I used quick oats
1 1/2 tsp baking powder
1 Tbsp chia seeds
1 tsp cinnamon
Sweetener to taste I used 1/4c of a baking blend sweetener
1 tsp vanilla extract
1 cup of skim milk
1/3 cup of light vanilla yogurt
2 egg whites or 1/4 cup of liquid egg whites
1 1/2 cup of berries fresh if you want I used a frozen mix of blueberries, cherries and mango
1 tsp of turbinado sugar to sprinkle on top which add up to 0sp divided between muffins

I mixed all the liquid ingredients and then added them to the dry ingredients.
When I use frozen berries I add them to the dry ingredient and toss to coat them. Then add the liquid ingredients.

Let sit for a few minutes for the oatmeal to soak up some liquid.

I divided between 10 cups and sprinkled with the sugar.

I cooked approximately 18-20 minutes in my toaster oven and broiled them for a bit to brown the tops.

Put onto a cooling rack to cool.

Freeze any uneaten for later use.

Mini gingerbread muffins

I'm experimenting with putting the points for SF, PP and Smart Points when I can. We'll see how it goes. Let me know if this is something you'd like me to do. I am getting the #'s from the nutritional stats

Mini gingerbread muffins SF or 3pp or 3sp for 2 mini muffins

1/2c oats
2 egg whites or 1/4c of boxed egg whites
1/2 tsp baking powder
1/4c fat free Greek yogurt I used plain but you can use vanilla
sweetener to taste I used 2 packets
1 tsp of gingerbread spice if you don't like it as gingery just use less
1 tsp molasses

Mix all together.
Spray muffin tins or use silicone muffin cups which I did.
Divide between 4 cup.
Bake in a 375 oven for 12 minute or until set. I used my toaster oven.

1 serving is 2 muffins.
You can freeze the other 2 for a different day.

Oatmeal cornmeal pancakes Simply Filling

I saw the recipe on Face Book and wrote it down. Thanks Mary Jane Petersen!

Oatmeal cornmeal pancakes 2 servings  Simply Filling or 3 sp with freestyle or 4sp 

1/4c quick oats
1/4c corn meal
1 tbsp splenda or sweetener to taste
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 cup ff plain yogurt I used vanilla
1 egg beaten
1/8 tsp or more of cinnamon
non stick spray

Makes 4 pancakes. I used 2 as a serving which are SF or 4sp

Mix altogether. Let sit a couple of minutes then use the batter as you normally would.

Baked blueberry almond oatmeal Simply filling + 1sp 

1/3c quick oats uncooked
1/4c blueberries plus a couple to put on top
1 egg beaten or 2 egg whites or 1/4c egg substitute
1/4c skim milk
1/4 tsp almond extract
1/2 tsp baking powder
sweetener to taste
5g slivered almonds
1/4 tsp sugar to sprinkle on top 0sp

Add everything but the almonds and the 1/2 tsp sugar in a bowl.
Spray a ramekin or small baking dish with non stick spray.
Put the mixture in the bowl. Add a couple of blueberries on top, the almonds and the sugar.

I baked my in a 375 degree toaster oven for 25 minutes.

Makes 1 serving
If you leave off the almonds it's Simply Filling 0sp

Pumpkin cranberry baked oatmeal simply filling + 0sp



Pumpkin cranberry baked oatmeal 5pp, or simply filling or 4sp

1/3c uncooked quick oats
1/4c egg whites or 2 egg whites
1/4c skim milk
1/4c pure pumpkin
1/2 tsp pumpkin pie spice I like a lot so you may want less
sweetener to taste depends on how sweet you like it 1-2 packets
1/2 tsp baking powder
1/4c frozen or fresh whole or chopped cranberries
1/4 tsp sugar to sprinkle on top for a bit of crunch

I mixed all except the sugar. Put it into a ramkin or small baking dish. I oil mine first or use non stick spray. Sprinkle sugar on top. Update I let it sit a few minutes to soak up the liquid. 

I baked mine in my toaster oven at 375 for 25 minutes. You could bake this in the oven if you're cooking something else and then reheat in the microwave.

Chocolate salted caramel oatmeal

I made this today and it was sooooo good :) Definitely will be having again!

Chocolate salted caramel oatmeal 7pp or SF + 2pp

1/2c oats I used quick oats today
1/2 cup of water
1/2 cup of milk or almond milk
1 Tbsp of cocoa I use dark cocoa
sweetener to taste I used 2 packets
1/2 Tbsp chocolate chips
1/2 Tbsp of caramel dip I used marzetti I put it in the microwave for 6 seconds to warm it up
pinch of coarse salt I used kosher

Put the oats, water, milk, cocoa and sweetener in a small pot and bring to a simmer. Simmer for a few minutes until thickened.
Pour oat mixture into a bowl and top with the chocolate chips, caramel and salt.

Lemon Cherry Almond overnight oats

Made this the night before and it was delish!

Lemon cherry almond overnight oats Simply Filling +1pp or 8pp

1/2c uncooked oats
1 individual container of 0% lemon Greek yogurt
3/4c frozen no sugar cherries thawed
1/3c skim milk or almond milk
5g slivered almonds
sweetener if desired I used some because I like it sweet

The night before:
take out the cherries to thaw in the fridge overnight
mix the oats/yogurt/milk/sweetener in a separate container and put in the fridge overnight

Next morning:
layer the oat mixture and the cherries x 2
top with the slivered almonds

Overnight pumpkin flax oat bowl from hungry girl

If you're doing simply filling it's Simply Filling  2pp
Points plus it's 6pp

Found this on Hungry Girl and tweaked it a bit.

Overnight pumpkin flax oats
1/2c fat free vanilla Greek yogurt
1/4c old fashioned oats
1/3c canned pure pumpkin
2 Tbsp unsweetened vanilla almond milk
1 Tbsp ground flax meal
2 sweeteners
1/2 tsp pumpkin pie spice
1/4 tsp vanilla extract
8 grams of slivered almonds

Mix all ingredients except almonds in a medium bowl or jar, cover and refrigerate overnight.
Next morning stir and top with almonds.

Peach ginger almond breakfast parfait simply filling plus 1pp or 7pp

If following simply filling use skim milk

Peach ginger almond breakfast parfait SF + 1pp or 7pp
Serves 1

1/3c old fashioned oats
3/4c skim milk
1/2c water
1/4 tsp ground ginger
sweetener to taste
1/2 tsp vanilla extract

Put all in a small pan and bring to a boil and then turn down to simmer until thick and creamy. Allow to cool then put in a covered container overnight in the fridge.

Next morning assemble the parfait.

1/2c fat free vanilla yogurt
1 peach chopped
5g slivered almonds

Layer half the oatmeal mixture then the yogurt then the peach.
Repeat.
Top with slivered almonds.

Black Forest oatmeal from Hungry Girl

Found this great recipe from Hungry Girl

Black Forest oatmeal Simply Filling + 1pp or 7pp

1/2c old fashioned oats which you must use for this
1 Tbsp unsweetened cocoa
1/8 tsp cinnamon
1/8 tsp salt which I don't add
1 cup almond breeze if doing simply filling you can use skim milk
1 cup water
2 sweeteners
1/3c chopped cherries frozen or fresh
1/2 Tbsp mini chocolate chips or regular chocolate chips
optional: 2 drops of almond extract

Add oats, cocoa, salt, milk and water and almond extract if using into a sauce pan and bring to boil. Lower heat to simmer and stir for 12-15 minutes or until thick and smooth.

Take of off heat stir in sweetener and pour into bowl to cool a bit and thicken even more.

Top with cherries and chocolate chips.

Berry cobbler cup simply filling


Single serve Berry cobbler cup Simply Filling or 1sp or 1pp

1 1/2 tbsp skim milk
2 tbsp of oat flour which is just oats ground up into flour
1 packet of truvia or other sweetener
1/4 tsp vanilla
1/4 tsp baking powder
1/3c of berries of your choice I used a mixture of blueberry and raspberry and blackberries
1/4 tsp sugar 0pp
Butter flavored spray

Coat a small baking dish with non stick spray
Put your berries in the dish
In a small bowl add the milk, oat flour, sweetener and baking powder and stir let sit a few minutes to absorb some of the liquid. pour on top of the berries.
Quick spray of butter flavored pam on top.
Sprinkle the sugar on top as it gives a nice bit of crunchiness

I put this in my toaster oven while I made lunch for approximately 15-18 minutes or until lightly browned.

Berry cobbler


Berry cobbler 2pp or simply filling

You could use any fruit for this but today I used frozen blueberries and frozen cherries.

Frozen fruit approximately 1/2 cup you could also use fresh fruit
1/4 cup of quick oats ground into flour
sweetener
1/2c approximately of diet clear soda I used diet 7up

Spray a 1 cup ramekin or baking dish with non stick spray
put the fruit in
mix the oatmeal and sweetener I used 1 packet
put the oatmeal on top of the fruit evenly
pour the pop slowly over the oatmeal if it fizzes let it settle before pour more on
I gave a quick spray of butter flavoured pam on top

I didn't do it this time but next time I'll sprinkle a little course sugar on top :) 0pp

I baked this in a 350 toaster oven for 30 minutes

This isn't overly sweet which is why I like it.

Strawberry banana baked oatmeal


Strawberry banana baked oatmeal simply filling or 5pp

1/3c quick or minute oats uncooked
1/4 egg substitute or 2 egg whites
1 tbsp skim milk
1 tsp vanilla
1/2 tsp baking powder
sweetener to taste
1 banana mashed but keep a couple of slices to put on top
1/4c sliced strawberries keep a couple to put on top
1/2 tsp sugar to put on top

Mix the oats, egg, milk, baking powder, mashed banana and sweetener together.

Spray a ramekin or baking dish with non stick then pour mixture in.

Top with banana and strawberry slices then sprinkle sugar on top.

I put mine in my toaster oven at 375 for 20 -25 minutes or until puffed up and firm to the touch. You could always cook it in the oven the night before when cooking dinner and warm it up in the microwave the next morning.

Chocolate, peanut butter and banana baked oatmeal


Chocolate, peanut butter and banana baked oatmeal 6pp or simply filling +1pp

1/3c quick or minute oats uncooked
1/4c egg sub, 2 egg whites or 1 egg
1/4c skim milk
1/2 tsp baking powder
sweetener to taste
1 tbsp unsweetened cocoa powder
2 tbsp pb2
1 banana mashed most of it but keep a couple of slices to put on top
1 tsp sugar to sprinkle on top makes it nice and crunchy

Mix everything together except the flew slices of banana and the sugar. Put into a non stick sprayed ramekin dish then top with the banana slices and the sugar.

I put mine in my toaster oven at 375 for 20 -25 minutes or until puffed up and firm to the touch. You could always cook it in the oven the night before when cooking dinner and warm it up in the microwave the next morning.
