Cherry almond baked French toast
Cherry almond baked French toast Simply Filling + 1pp or 7pp all depends on the bread you use.
2 slices of Ezekiel bread
1/4c egg substitute or egg whites or if doing simply filling 1 egg beaten
2-3 Tbsp skim milk you want to make the bread wet but not too soggy
sweetener to taste
1/2c frozen cherries thawed
1/2 tsp vanilla extract or almond extract
7 grams of slivered almonds
1/2 tsp of turbinado sugar or large grain sugar to sprinkle on top for crunch :)
Cut the bread into cubes.
Mix the egg, milk, vanilla extract and sweetener together then pour over the bread cubes. Toss carefully to wet all the cubes.
Add the cherries saving a few to put on top.
Spray a small baking dish with non stick spray.
Pour the bread mixture in.
Top with a couple of the cherries, the almonds and lastly the sugar.
I baked mine in my toaster oven at 375 for 20-25 minutes or until browned.

Peach ginger almond breakfast parfait simply filling plus 1pp or 7pp
If following simply filling use skim milk
Peach ginger almond breakfast parfait SF + 1pp or 7pp
Serves 1
1/3c old fashioned oats
3/4c skim milk
1/2c water
1/4 tsp ground ginger
sweetener to taste
1/2 tsp vanilla extract
Put all in a small pan and bring to a boil and then turn down to simmer until thick and creamy. Allow to cool then put in a covered container overnight in the fridge.
Next morning assemble the parfait.
1/2c fat free vanilla yogurt
1 peach chopped
5g slivered almonds
Layer half the oatmeal mixture then the yogurt then the peach.
Repeat.
Top with slivered almonds.
Enjoy

Fruit and tuna salad from Hungry Girl
From Hungry Girl:
Fruit n tuna salad Simply Filling +3pp
4 cups of lettuce
1 1/2 Tbsp light mayo
1 Tbsp fat free plain Greek yogurt
salt and pepper
4 oz tuna in water drained 1 can
1/4c chopped apple
1/4c chopped grapes
1/4c chopped cucumber I just used 1 mini one
1 Tbsp craisins I used low sugar ones
2 Tbsp Bolthouse balsamic vinaigrette
Put mayo, yogurt, salt and pepper in bowl and mix well. Add all other ingredients except vinaigrette and stir to coat.
Put tuna mixture on top of lettuce in a large bowl. Drizzle with vinaigrette or serve on the side.
Simply Filling + 3pp Depending on the ingredients you use.

1/8 tsp cinnamon
1/8 tsp salt which I don't add

optional: 2 drops of almond extract

Chocolate raspberry coconut crepes
Original recipe from Hungry girl but I tweaked a couple of things. Original recipe was 8pp this is 7pp.
Chocolate raspberry coconut crepes 1 serving of 2 crepes simply Filling plus 3pp or if following points plus 7pp
1/2c egg whites
2 Tbsp chocolate protein powder which I didn't have so I used a plain whey protein powder and added unsweetened cocoa powder and some sweetener
1/8 tsp vanilla extract
1/8 tsp cinnamon
Whisk altogether until smooth. This is the crepe batter.
Pour 1/2 into a 10 inch pan and tilt the skillet. Will be thin. Carefully flip when first side is browned.
Make second crepe.
1/4c fat free vanilla yogurt
1 1/2 Tbsp shredded coconut
1 Tbsp of chocolate chips I used Krisda no sugar made with stevia
Mix well.
Gently fold in raspberries.
1 cup of raspberries
Put half of mixture into each of the crepes. Fold over and enjoy!

Cabbage roll casserole
I was inspired by this recipe :) Then had to do it my way the easy way! It turned out even better than I thought it would. The hubs also loved it.
Cabbage roll casserole 100% Simply Filling without the cheese and the points would depend upon what cheese you use and how much. I used 4 oz finely shredded so it was SF+1pp
When I put it in the recipe builder it came to 7pp/serving It makes 8 big servings. The only points are from the beef, the cheese and the brown rice.
Here's how I did it:
1 lb of extra lean ground beef
2 cups of cooked brown rice (I cheat and use the one that takes 10 minutes to cook)
2 packages of shredded cabbage/coleslaw mix
Sea salt to taste
1 medium onion chopped
1 large can of pureed tomatoes
2 cloves of garlic
1/2 tsp dried thyme
1 and 1/2 tsp smoked paprika
Shredded light cheese
Cook the ground beef until cooked and broken up in a large pan. Take out of the pan put in a large bowl and put the onions in to brown. When they're just about brown add the garlic and the spices. Put it in the same bowl as the beef. Add the tomato puree and about 1/2c of water to rinse the can out and add to the mix also add in the rice and stir well. Put aside.
Now wipe out the pan you cooked the beef in and if you want you can add a tsp of oil I just sprayed it with a little olive oil and add one bag of cabbage at a time (mine couldn't hold both of them) and cook and stir until it's beginning to soften about 5-8 minutes I did sprinkle mine with some sea salt. If you've just cooked one bag put the cooked one aside while you cooked the second bag.
Now spray a 9x11" pan with non stick or olive oil.
When I layered this it looked like I was stretching out the ingredients pretty thin but look how it came out :)
Anyway... layer 1/2 the cabbage in the container followed by one half of the beef/rice mix. Repeat.
Cover (I used foil) and bake in a 350 degree oven for 40-45 minutes. Take out and take cover off. Sprinkle cheese on top and pop back in the oven for 10-15 minutes.
Makes 8 big servings and freezes well!

1/4c uncooked oatmeal
1/4c cornmeal
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt (I don't add this)
sweetener to taste
1/2c Greek yogurt or fat free cottage cheese (if using regular yogurt just use 1/4c)
1 egg white
I put everything in my bullet mixer if using cottage cheese otherwise you can just stir together! Let sit 10 minutes although I've let them sit a couple of minutes and it's been fine. Cook as you would for any pancakes. Spray non stick or use oil (add pp or can be part of simply filling oil allowance)

Banana Egg Pancakes
This is a very simple recipe and very tasty!
Banana Egg Pancakes 100% simply filling or this is where it gets a little crazy. The e-tools when I added this in came to 7 pp or if you add it in as separate ingredients it comes to 4pp. (bacon not included :) I added 2 pts for the bacon)
1 banana mashed
2 eggs beaten
Add both together. That's it!
Spray your pan with non stick and cook up like regular pancakes. They are a bit delicate so make sure it's browned before you try to flip them.
Feel free to choose a topping or eat them as is.
For this recipe I made a blueberry topping. I put 1/4c of frozen blueberries in a microwave safe measuring cup, added 1/2 tbsp water and 1/2 tsp corn starch, 1 pkg of truvia as my blueberries weren't very sweet. Microwave for a minute stir and microwave again for 30 seconds or until bubbly and thickened. 100% simply filling and 0pp
