Corn Salad 2sp

I just made an individual amount for me so if you make more than one serving it might change the points.

Corn Salad 2sp

  • 1/2c corn which I had cooked and was still warm 0sp
  • I mixed 1 tbsp light mayo/smoked paprika/garlic powder/chipotle powder, cilantro and squeeze of lime juice 0sp
  • 5 Apetina light feta cubes 1sp
  • I added some cilantro but you also add some chopped jalapeno peppers if you like it hot 
Mix the mayo etc then add to the corn and stir till coating the corn then I crumbled the feta cubes and stirred.

Yummo!!

Taco salad boats 4sp

How many sp or pp or simply filling depends on what you use. I'll show you what I used.

Taco salad boats 4sp

Endive leaves larger ones work best.
Lettuce shredded finely
tomato cut into small chunks/slices
2 small olives sliced
1/4c leftover taco meat that I'd made with lean meat
jalapeno peppers if you like spicy
1/2 oz light shredded cheese
a dob of ff plain Greek yogurt instead of sour cream
a drizzle of taco sauce

Just separate your endive leaves and fill with the ingredients of your choice.
Easy quick lunch!

Summer salad

This would be simply filling + however much avocado you use.

On points plus it worked out to 6pp

Summer Salad 1 serving you could always make more
Chopped cucumber
halved cherry tomatoes
1/2c black beans I used no salt ones
1/4c corn I used no salt ones here as well
50g avocado
lime juice, sea salt and pepper

Mix together and squeeze the lime juice, sea salt and pepper and toss gently.

Fruit and tuna salad from Hungry Girl

From Hungry Girl:

Fruit n tuna salad Simply Filling +3pp

4 cups of lettuce
1 1/2 Tbsp light mayo
1 Tbsp fat free plain Greek yogurt
salt and pepper
4 oz tuna in water drained 1 can
1/4c chopped apple
1/4c chopped grapes
1/4c chopped cucumber I just used 1 mini one
1 Tbsp craisins I used low sugar ones
2 Tbsp Bolthouse balsamic vinaigrette

Put mayo, yogurt, salt and pepper in bowl and mix well. Add all other ingredients except vinaigrette and stir to coat.

Put tuna mixture on top of lettuce in a large bowl. Drizzle with vinaigrette or serve on the side.

Simply Filling + 3pp Depending on the ingredients you use.

Big Mac Salad

I have made this a couple of time and love it!

Big Mac Salad 5pp or use extra lean beef and fat free cheese and you'd just count the dressing for SF
3 cups of chopped romaine lettuce
1/3c I used Mexican veggies ground round crumbles 2pp
30g light cheese 2pp
green onion
cherry tomatoes
2 Tbsp Kraft calorie wise thousand island dressing 1pp
1 lower sodium chopped up pickle

As with any recipe the points will depend upon the products you use.

Cold spaghetti pasta salad

Thanks to Thea-Lee Stottele for sharing her recipe!

Depending on your pasta and your sauces if  you're doing sf you'd just have to count the parmesan cheese and the shredded cheddar unless it's fat free.

So if  you use whole wheat pasta, pasta sauce with no sugar, fat free Italian dressing, parmesan cheese and light shredded cheddar cheese it would be Simply Filling + 1pp.

Or for points plus I counted 5pp for 1 cup and bulked it up by adding 1 cup of steamed broccoli that I'd cooled before adding in. A very filling lunch! Next time I might add mushrooms and peppers :)

Cold spaghetti pasta salad Makes 5x 1 cup servings 

5 oz of whole wheat thin spaghetti/spaghettini noodles cooked el dante
1/2 jar of pasta sauce I used a blue menu one
1/3c fat free Italian dressing I lowered the amount from the original recipe
1/4c parmesan cheese
1/4 tsp crushed red pepper flakes
1/4c chopped red onion
1/4c light shredded cheddar cheese
1/2 cup of cherry tomatoes cut in half
The original recipe also called for olives which I left out because of sodium

Break up your pasta before cooking and add to boiling water. Cook until just done. Drain pasta and put into large bowl. Add all other ingredients. Toss and put into the fridge for at least 2 hours I put it in overnight. Stir it up before serving.

Sweet and spicy salad with pear

Love this combo!

Salad 0pp
Pear 0pp
2 tbsp pc memories of Thailand dressing 2pp
28g prosciutto 1pp

Make the salad.
Wrap the prosciutto around pear slices and cook on a grill pan than was sprayed with non stick spray.
Top with 2 Tbsp of the dressing!

Amazing :)

Turkey or Chicken Caesar salad Simply Filling + 3pp

This salad is what I consider a good reason to use a few weekly points :)

Turkey or Chicken Caesar salad Simply Filling +3pp

Lilydale pre-cooked Turkey or Chicken breast
Romaine lettuce
2 slices of President's choice pre-cooked bacon heated in the microwave 1pp
7g President's choice sour dough Caesar croutons 1pp
2 Tbsp of President's choice blue menu light Parmesan cheese today I didn't have any so I used 15g light cheese either one is 1pp
Renee's fat free Caesar salad dressing 0pp if you don't like fat free use the light and adjust the points
Today I needed to get my oils in so I added 2 tsp olive oil to the dressing plus some lemon juice.

Hint: I put the lettuce, the Turkey and the dressing with oil in a large container with a lid and shake, shake, shake and it really helps to coat each piece of lettuce with dressing :)

Top with the cheese, crumbled bacon and croutons.

Taco salad!


Taco salad Simply Filling + points for additional extras

  • Romaine lettuce
  • cherry tomatoes
  • green onion
  • 55g avocado 2pp
  • fat free cheese if you use light cheese which I do that would add 2pp for 1oz/30g
  • extra lean ground beef or turkey that I purposely had leftover to use for the salad
  • a bit of taco seasoning sorry I just added maybe a tsp? I have also used vegetarian crumbles which were good.
  • salsa
  • 0% plain Greek yogurt or ff sour cream
  • hot sauce or jalapeno peppers

Chop the lettuce then add the other ingredients. Simply Filling plus whatever extra's you choose to add.

Tuna and pasta salad simply filling

Made this for lunch today! Very good :)

Ingredients:
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 cans of chunk light tuna packed in water and drained
  • 3 cups, pre-cooked whole grain pasta
  • 1 cup frozen peas, defrosted
  • 2 tbsp Kraft fat free miracle whip
  • 1/2 cup fat free plain Greek yogurt
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
The only thing I did differently was to use 3 Tbsp mayo and I also used apple cider vinegar as that was all I had. I also put a pinch of sweetener in because I don't like it too tangy.

Sweet, spicy and salty salad with peach

I made this for lunch today and it was amazing!

Salad 0pp
23gm prosciutto 1pp
1/2 peach sliced 0pp
2 Tbsp pc memories of Thailand sauce which I use as a dressing 2pp

I took small pieces of the prosciutto and wrapped them around the peach slices. Put them in a hot pan sprayed with a little non stick until the prosciutto was a little browned.

Popped them on top of mixed salad greens and topped with the spicy sauce.

All for 3pp!

Beet salad

This is sooooo good! If you like beets. :)

Beet Salad Simply Filling

2 beets roasted, peeled and grated
2 tbsp fat free mayo or whichever mayo you use :)
green onion
salt/pepper to taste
I added a bit of no salt lemon pepper to it as well

mix all together and refrigerate for at least 30 minutes

You could also add grated apple!

Edamame carrot salad

Edamame carrot avocado salad (didn't have any avocado so made it without this time) Simply Filling or 4pp without the avocado. You could also add any other protein you'd like.

Baby spinach or lettuce
1/4c organic edamame cooked
ribbons of carrot made with a potato peeler :)
2 tsp olive oil
lime juice
garlic finely chopped or garlic powder
cilantro
Bragg's aminos or low sodium soy sauce or tamari sauce

Buffalo chicken salad

I sometimes forget how good salads can be and I'm not talking just lettuce and bottled salad dressing!

Buffalo chicken salad without 75g of avocado it would be 100% simplyfilling with the avocado it's 3pp which is still a good deal :)

Mixed salad greens approximately 3 cups
Leftover chicken breast (I use the store rotisserie chicken)
cherry tomatoes
75g avocado (3pp)
2 tsp olive oil (to get my 2 oils in for the day)
buffalo wing hot sauce

For the dressing just mix the oil with the buffalo wing sauce. If you don't need any more oil for the day just use the buffalo wing sauce.

Kale Salad

Since the hubs isn't a fan of kale and I love it I made this kale salad for one :)

Original recipe is from Dr. Weil's site

Kale Salad simply filling or 4pp
Approximately 3 cups of kale torn (no stems as they're tough)
1 tbsp lemon juice
2 tsp olive oil
Minced garlic or powdered garlic to taste (I love garlic so no one comes near me for a while after this)
Sea salt and pepper to taste
Hot pepper flakes to taste or leave out
2 tbsp light parmesan cheese mine is 50 calories for 2 tbsp
2 tbsp light bread crumbs

Mix together the lemon juice, olive oil, garlic, salt, pepper and pepper flakes. Drizzle over the kale and massage in with the hands. Sounds weird but it really does help to make the kale tender. Leave for a few minutes then sprinkle the parmesan cheese and bread crumbs and toss those in.

Serve and enjoy

This time I added cherry tomatoes and pork tenderloin :)

Taco Salad

Taco Salad Simply Filling or just count the points for the vegetarian crumbles/beef, cheese and Greek yogurt

Lettuce for the salad part
I use Gardein or Yves Mexican meatless crumbles
Shredded cheese if not fat free count points
Green onion
Salsa
Cherry tomatoes
Greek Yogurt or Sour Cream (I mix mine with cilantro, lime juice and sea salt)

This time I made a Power Taco Salad by using baby kale and baby spinach instead of lettuce :)

Green Beans with Mushrooms and Olives

This is one of those recipes that I come across that just sounds plain weird. Take my word though that if you like green beans, mushrooms and olives you're going to love this!

I make this the day before I'm going to have it because the longer it marinates the better it  is.

I don't use beech mushrooms just because I couldn't find them so I just use whatever ones I can find.

Green beans with Mushrooms and olives serves 4     4pp or SF +1pp

1 lb fresh green beans with ends trimmed
1 pkg 8oz of mushrooms I chop them in half depending on the size
2 tbsp of good quality olive oil
garlic (original recipe calls for garlic salt but I like less salt so I use chopped garlic)
Black pepper and salt to taste
1/2c sliced green olives with pimento (keep about 1 tbsp of the olive juice)
1/4c green onions sliced thin

Heat olive oil in pan. Add green beans, garlic, sea salt and pepper and cook 5-6 minutes or until softened and bright green.  Add mushrooms and olives and olive juice. Toss. Cook for another 2 minutes.  Serve hot or cold ( I love it cold) and top with green onions.

You could make it less points with less oil but it really is worth every point :)

*Simply Filling +1pp for the olives (calculating the olive oil as part of the GHG) per serving or

*4pp per serving
