Shepherds Pie

This is one of those days when I wanted to make something filling fast! I have made it totally from scratch before but decided on short cuts today. I would also normally put light grated cheese on top but I'm out since tomorrow is grocery day.

Sorry I'm one of those people that doesn't always measure things. Especially if they're Simply Filling. A dash of this and that :)

Shepherds Pie simply filling plus 2pp for the light laughing cow and the gravy mix

1 lb extra lean ground beef
2 cups frozen mixed veggies
1 package of low sodium beef gravy mix
1 cup of water with a couple of tbsp taken out :) I wanted a little less than I usually use
a shake of onion powder
potatoes I used 3 medium if using a square pan I'd use 4
2 light laughing cow cheese wedges and a couple of tbsp of skim milk or fat free 1/2 & 1/2 or more depending on the potato you use

Boil the potatoes until soft.
Brown the beef and put aside.
When the potatoes are done drain and add the light laughing cows and the milk/cream you may need more depending on the type/size of your potato. I also added a little sea salt. Mash with a mixer or masher until smooth or a few lumps if you like that :)
In a medium pan add the water and the gravy mix and cook until thickened. Add the cooked beef, the frozen veggies and the onion powder.

Now you can either make individual shepherds pie or put in one square pan.
Spread the beef/veggie/gravy mix on the bottom then put the potatoes on top. Smooth the potatoes and I sprinkled some smoked paprika on top for color since I had no cheese.

I totally forgot to add bake it in a 350 oven for approx 30 minutes or until lightly browned on top :)

I made 3 portions but if you put into a pan you could get 4.

I use clubhouse low sodium packets of powdered gravy mix
