Slow cooker/pressure cooker pumpkin steel cut oats simply filling or 5pp
Some days are just busy enough that I need something quick for breakfast. I tweaked the original recipe from here.
I have to tell you that all slow cookers are different and when I read this recipe I knew that I couldn't leave mine on low for 8 hours with steel cut oats in it. It would be over cooked. So I put mine in the slow cooker after dinner and they took barely 5 hours and came out amazing. I also had a hard time finding a bowl that would hold this much and fit in my slow cooker so I improvised. I took a bowl that would fit in but not all the way in so I filled my crockpot with water to the bottom of the filled bowl. Worked great, didn't stick and came out perfect.Make sure it's a heat proof bowl!!
The smaller bowl is just what I put some in to warm up for breakfast tomorrow :) I did put 1 tsp of real maple syrup which is 0pp.
Slow cooker pumpkin steel cut oats
1 cup steel cut oats
2 cups of water
1 cup of skim milk (you could use all water but I like it a bit creamy)
1 cup of canned pumpkin
1 tsp of vanilla
2 Tbsp splenda brown sugar blend I didn't find it sweet enough and added 2 Tbsp of sf pancake syrup
2 tsp pumpkin pie mix
In a heat proof bowl that will fit in your slow cooker put all the ingredients in. I sprayed with non stick first.
Put into the slow cooker and carefully fill slow cooker with water to 1/2 way up the side of the bowl.
Cook on low for 5 hours. Or until cooked.
Makes 4 servings of 1 heaping cup
This is simply filling since the brown sugar blend dived by 4 would be 0.
The original recipe using all water and regular brown sugar is 2pp. Which if you use the splenda brown sugar blend and skim milk should still be 0pp. Or for points plus 5pp per 1 cup cooked.
Update: I made 1/2 this recipe and put it in my electric pressure cooker for 8 minutes then natural release.

Ham and egg cups
Another breakfast favorite! Simply Filling plus the cheese unless you use fat free or 5pp depending on your ingredients.
Ultra lean ham put into muffin cups. Today I filled them with 1 egg and 1 egg white, green onion and light cheese 2pp for the light cheese the rest is Simply Filling.
I put them in my toaster oven at 350 for 20 minutes.
I put different things in these every time I make them :) I love putting leftover broccoli in them.

Cornmeal or cream of wheat waffles
I love when a kitchen mistake turns out great! This was supposed to be cream of wheat but I was half asleep so I used cornmeal by accident and they still turned out great :)
Cornmeal or Cream of Wheat Waffles 100% simply filling makes 8 small waffles or 4 large ones. 2 small waffles or 1 large one would be 4pp my machine made large ones.
1 cup of cream of wheat uncooked or cornmeal
1 egg
3/4c skim milk plus 2 tbsp (don't add the extra 2 tbsp if using cornmeal)
1.5 tsp baking powder
1/2c splenda baking blend
Mix together let sit 10 minutes.
Heat your waffle iron, spray well with non stick spray or a light coating of oil

Crockpot Chili Wendy's style
Chili Simply Filling Style sorry I haven't figured out the pp for this!
I usually make this depending on what I have in the house. Today I had no chillies but I had lots of onion so that's what I used. I also add a couple of tbsp of tomato paste. I also put 2 large cans of beans in. You know me I tweak things all the time!
1 lb of extra lean ground beef
brown then put into slow cooker
then put in the pan:
1 cup of chopped onion
2 cloves of garlic
saute for 5-10 or until onion is translucent
add to crock pot
put all the rest of the ingredients in the crockpot:
1 small can of chopped green chillies
1 can of tomato sauce
1 cup of beef broth
1 tbsp chili powder or to taste
salt and pepper
1/2 tbsp cumin
2 tsp oregano
1 tsp of sugar or a sweetener
2 cans of beans whichever ones you like
cook in crockpot 6-8 hours on low or 4 hours on high depending on your crockpot

Baked custard
I've tried a couple of recipes for baked custard and this is the one I'm using right now.
Baked custard 100% simply filling or 2 pts if I make 4
I haven't tried using egg substitute which would make them even less points
2eggs
1/4c splenda
pinch of salt
1 tsp vanilla
1/4c instant skim milk powder
1 1/2c skim milk scalded (hot but not boiling)
nutmeg to sprinkle on top
I mixed the eggs, splenda, salt, vanilla in a small bowl. Then I put the skim milk in a saucepan and put it on medium heat until between warm and hot, but not boiling. When warm enough I added the instant milk powder. Take off of the heat. Whisk while very slowly adding the egg mixture. Pour into 4 medium sized oven proof bowls. Put bowls in a pan that has high sides. Pour very hot water into the pan until it's 2/3 of the way up the side of the bowls. Carefully put into a 350 preheated oven. I used my toaster oven. 20 minutes or until set and if you put a sharp knife in the middle it will come out clean.
Before I put them in the oven.
Cooked.

Chocolate covered cherry smoothie!
I saw this recipe and had to try it :) Of course I tweaked it a little bit!
Chocolate covered cherry protein smoothie simply filling or 3pp depending on the cottage cheese you use.
1/2c fat free cottage cheese
2 tbsp instant non fat milk powder
sweetener to taste
1 tbsp unsweetened cocoa powder
1/2c frozen cherries
4 ice cubes more if you need it thicker
1/2c water
Put all in a blender and enjoy! The cottage cheese makes it nice and creamy

One of my favorite breakfasts!
Chocolate banana baked oatmeal 100% simplyfilling or 5pp for the basic ingredients plus the unsweetened cocoa powder and the banana
1/3c uncooked oatmeal
1/4c egg substitute or 1 egg or 2 egg whites
1/4c skim milk
1/2 tsp baking powder
sweetener to taste
Today I added 1 small banana chopped (kept a couple of slices to put on top) and 2 tsp unsweetened cocoa powder
Mix all together and put in a medium sized sprayed with non-stick ramekin dish.
I baked it in my toaster oven on 350 for 25 minutes or until puffed up and firm to the touch. You can also bake it in the oven when you're cooking something else and warm it up in the microwave.

Buffalo chicken salad
I sometimes forget how good salads can be and I'm not talking just lettuce and bottled salad dressing!
Buffalo chicken salad without 75g of avocado it would be 100% simplyfilling with the avocado it's 3pp which is still a good deal :)
Mixed salad greens approximately 3 cups
Leftover chicken breast (I use the store rotisserie chicken)
cherry tomatoes
75g avocado (3pp)
2 tsp olive oil (to get my 2 oils in for the day)
buffalo wing hot sauce
For the dressing just mix the oil with the buffalo wing sauce. If you don't need any more oil for the day just use the buffalo wing sauce.

1/4c uncooked oatmeal
1/4c cornmeal
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt (I don't add this)
sweetener to taste
1/2c Greek yogurt or fat free cottage cheese (if using regular yogurt just use 1/4c)
1 egg white
I put everything in my bullet mixer if using cottage cheese otherwise you can just stir together! Let sit 10 minutes although I've let them sit a couple of minutes and it's been fine. Cook as you would for any pancakes. Spray non stick or use oil (add pp or can be part of simply filling oil allowance)

Mushrooms (to go on or beside steak)
These are a great side dish! Very easy to make. I count the olive oil as my 2 tsp allowable/day on simplyfillling.
package of button mushrooms we love this so it just makes 2 good portions
1 tbsp olive oil
light soy sauce (sorry I don't measure but approximately 1/4c)
2 cloves of garlic chopped
Put olive oil and soy sauce in a pan on medium heat.
Put mushrooms in and stir to coat mushrooms in sauce.
Add garlic.
Simmer until cooked and stir every now and then to turn the mushrooms. I find the mushrooms are done when they've soaked up most of the soy sauce.

Kale Salad
Since the hubs isn't a fan of kale and I love it I made this kale salad for one :)
Original recipe is from Dr. Weil's site
Kale Salad simply filling or 4pp
Approximately 3 cups of kale torn (no stems as they're tough)
1 tbsp lemon juice
2 tsp olive oil
Minced garlic or powdered garlic to taste (I love garlic so no one comes near me for a while after this)
Sea salt and pepper to taste
Hot pepper flakes to taste or leave out
2 tbsp light parmesan cheese mine is 50 calories for 2 tbsp
2 tbsp light bread crumbs
Mix together the lemon juice, olive oil, garlic, salt, pepper and pepper flakes. Drizzle over the kale and massage in with the hands. Sounds weird but it really does help to make the kale tender. Leave for a few minutes then sprinkle the parmesan cheese and bread crumbs and toss those in.
Serve and enjoy

My favourite salad dressing: Raw Honey Mustard
The first time I made this it was the only salad dressing I used for weeks :) I love it. It's 1pt/tbsp but it really is worth it. There's a lot of flavor in this. I used olive oil.

Raw Honey Mustard Salad Dressing

Ingredients
- 3 to 4 tablespoons of Raw Honey
- ½ cup Dijon style mustard (I used a Dijon with horseradish)
- ¼ cup grapeseed oil (you can use olive oil too)
- ¼ teaspoon garlic powder (I used a California Blend)
- salt and lemon juice (about ½ to 1 teaspoon)
Directions
- Place honey, mustard, oil, garlic powder in the container of your blender.
- Blend until it all incorporates.
- Taste, then add salt and lemon juice starting with ¼ teaspoon as a time until you get the taste you prefer. I used ½ teaspoon salt and 1½ teaspoons lemon juice
- Enjoy and store in refrigerator
- Yields: 1 cup

Spaghetti and Meatballs
I came across this recipe!
Update: I only used 1 egg and it was fine :)
A simple tweak to use light bread for the bread crumbs and whole wheat pasta which kept it simply filling. I also used light parmesan cheese which when divided into the servings came to 0pp. Emily has calculated 2 big meatballs and 1/3c sauce is 5pp, pasta would be extra.
I did add extra parmesan cheese on top so I counted that as 1pp.
Hubs comments: this is really good and nice big meatballs :)

1/2-1 banana mashed depending on the size
pinch of salt
sweetener to taste I didn't need any with my very ripe banana
1/2c fat free Greek yogurt plus sweetener to taste and a tsp of vanilla extract
Cherries (I used frozen which I had thawed)
Cook the oatmeal and the water on the stove or in the microwave for 1.3-1.5 minutes or until oatmeal is softened. Add mashed banana and sweetener. I let it cool a bit before I continued on.
Layer the oatmeal, yogurt and cherries.

Banana bites
I love this as a quick and tasty snack!
Cut bananas into thick slices and freeze for 15 minutes or however long you want :) Freeze them on wax paper or a plastic container something that will let them come off easily.
Take them out and dip the ends in light yogurt and then dip them in whatever you like. Today I chose chopped walnuts and maple flakes. Then put them back in the freezer for 10 minutes or so.
Enjoy.
Since I use very little yogurt so I just counted 1pt for the walnuts and 0pt for the maple flakes. You could use mini chocolate chips, sprinkles anything you like. Just adjust the pts for whatever you choose.

Since I use very little yogurt so I just counted 1pt for the walnuts and 0pt for the maple flakes. You could use mini chocolate chips, sprinkles anything you like. Just adjust the pts for whatever you choose.
The banana and the yogurt are Simply filling.

Fluffy lemon ricotta pancakes from Weight watchers.
I use Greek yogurt instead of the Ricotta cheese and milk with a tsp of vinegar or lemon juice instead of the buttermilk and they still turn out great. Yes I tweak things a lot :)
Fluffy Lemon Ricotta Pancakes ( I make 1/2 of this recipe eat 1 serving and freeze the rest)
1 1/2c all purpose flour (I use white whole wheat flour)
1 tsp baking soda
1/2 tsp salt (I just use a pinch because I'm watching my sodium)
1 cup of buttermilk (I use milk plus 1 tsp of lemon juice or vinegar)
2 large eggs yolks and whites separated into separate bowls
2 tbsp sugar
2 tbsp of lemon zest to save time I just used a tsp of lemon extract
1/2c part skim ricotta cheese (I use plain Greek yogurt)
Non stick spray or olive oil in a spritzer
Mix flour, baking soda and salt together.
In a large bowl mix buttermilk, egg yolks and sugar, lemon zest and ricotta cheese.
In a separate bowl beat egg whites with an electric mixer (I just used my aerolatte) beat until soft peaks form.
Add dry ingredients into the buttermilk ingredients then very gently fold in the egg whites until just mixed.
Use 1/4c of mix to make one pancake.

I decided to try Weight Watchers Lemon Ginger Fruit Dip when I was having Fluffy lemon ricotta pancakes. I thought it would make a nice topping.

Sugar free fudgesicles
These have been such a hit here this summer :) The hubs and I both love them!
Very simple. Another way to get some dairy in.
Take a package of sugar free chocolate pudding. Make it with skim milk as per the instructions. Put into popsicle molds (mine cost $2). Leave for 3 hours or so.
Run the bottom part under water while pulling on the stick gently.

Mexican Dip
Mexican Dip 100% Simply Filling or 1pp per serving
1c fat free Greek yogurt
1/2c salsa
1/2c cilantro
1/2 red onion chopped
1/2 tsp cumin
1/2 tsp salt
you could also add jalapeno pepper for a bit more of a kick :)

Smashed potatoes
Smashed potatoes 100% Simply Filling
Small new potatoes
Olive oil
Garlic fresh or powdered
Sea salt
Black pepper
herbs of your choice
Boil your potatoes until just done. You can also cook them in the microwave but be sure to prick them with a fork before cooking so they don't explode.
Place on a pan (I use non stick foil to make cleaning up easy). Take a potato masher and gently push down on each one until smashed :). Drizzle olive oil on top, sprinkle garlic powder, sea salt, pepper and whatever herbs you like on top. I cook these in my toaster oven if I have nothing else in the big oven. Cook until crisp and browned. I like to flip them over to get both sides crisp.
You may notice I didn't put how many potatoes or how much olive oil. Well I'm only cooking for two and I do measure my oil but it depends of how many oil servings I have already used that day. Or if I've even had any yet :) I'm doing Simply Filling so I am allowed 2 tsp of olive oil without have to count them.
So if you're counting points then measure your potatoes and your oil. Remember if you're making enough for two that you'll divide the oil amount in two.

Lemon meringue cups
This is a nice light dessert/snack that also a nice way to get some dairy in! In this picture I made lime meringue :)

1 cup of boiling water
1-2 cups of light vanilla yogurt (If you want it firmer use less yogurt. I usually use 1 1/2c of yogurt)
Add jello packet to the boiling water and stir for a while, then add the yogurt and stir for another couple of minutes. Put into small cups and place into the refrigerator until set.
Points will depend on a lot of things. How much yogurt you use and how many cups you make. I usually make 4 good size cups and since I'm doing Simply Filling they are 100% simply filling.
If you're not doing simply filling then figure our many points the amount of yogurt you are using is then divided them by the number of cups you use. If you use a light yogurt it should come out to 1-2 pts per serving depending on what yogurt you use and how much you use.

Banana Egg Pancakes 100% simply filling or this is where it gets a little crazy. The e-tools when I added this in came to 7 pp or if you add it in as separate ingredients it comes to 4pp. (bacon not included :) I added 2 pts for the bacon)
1 banana mashed
2 eggs beaten
Add both together. That's it!
Spray your pan with non stick and cook up like regular pancakes. They are a bit delicate so make sure it's browned before you try to flip them.
Feel free to choose a topping or eat them as is.
For this recipe I made a blueberry topping. I put 1/4c of frozen blueberries in a microwave safe measuring cup, added 1/2 tbsp water and 1/2 tsp corn starch, 1 pkg of truvia as my blueberries weren't very sweet. Microwave for a minute stir and microwave again for 30 seconds or until bubbly and thickened. 100% simply filling and 0pp

Pumpkin French Toast
These could also be made with mashed banana :)
I used weight watchers bread for this recipe.
Pumpkin French Toast 100% simply filling (1 tsp maple syrup is 0pts) or 3pp
2 slice light bread
1/4c canned pumpkin
1/4c egg substitute or 1 egg (I calculated with the egg substitute) I've also used egg whites for this
2 tbsp of skim milk or almond breeze
pumpkin pie spice (sorry I don't measure)
sweetener to taste
1 tsp of real maple syrup
Whisk the pumpkin, egg substitute, skim milk, pumpkin pie spice and sweetener together and put into a container that will fit your bread. Dip the bread into the mix and turn over and dip again. One slice at a time. Put into a non stick sprayed pan and don't try to turn until it's browned on one side. Flip and brown the other side. Serve with a tsp of real maple syrup.
Alternate topping: a handful of frozen cranberries put into a small saucepan with a tbsp of water and sweetener to taste. Bring to a boil and simmer for a few minutes until it begins to thicken to the consistency of cranberry sauce. 0pp 100% simply filling

Green Beans with Mushrooms and Olives
This is one of those recipes that I come across that just sounds plain weird. Take my word though that if you like green beans, mushrooms and olives you're going to love this!

I make this the day before I'm going to have it because the longer it marinates the better it is.
I don't use beech mushrooms just because I couldn't find them so I just use whatever ones I can find.
Green beans with Mushrooms and olives serves 4 4pp or SF +1pp
1 lb fresh green beans with ends trimmed
1 pkg 8oz of mushrooms I chop them in half depending on the size
2 tbsp of good quality olive oil
garlic (original recipe calls for garlic salt but I like less salt so I use chopped garlic)
Black pepper and salt to taste
1/2c sliced green olives with pimento (keep about 1 tbsp of the olive juice)
1/4c green onions sliced thin
Heat olive oil in pan. Add green beans, garlic, sea salt and pepper and cook 5-6 minutes or until softened and bright green. Add mushrooms and olives and olive juice. Toss. Cook for another 2 minutes. Serve hot or cold ( I love it cold) and top with green onions.
You could make it less points with less oil but it really is worth every point :)
*Simply Filling +1pp for the olives (calculating the olive oil as part of the GHG) per serving or
*4pp per serving

Baked individual oatmeal recipe
I have started this blog as a way to keep track of new recipes/concoctions I come up with and wish to share with my Facebook group Weight Watchers and Us.
I am doing Simply Filling so that's what the points will show but I'll also try to figure out regular pp when I can.

The first recipe I'll share is my version of Baked Oatmeal. I make a basic recipe and change the add in's depending on the time of year and what I'm craving.
The Basic Baked Oatmeal: 100% simply filling or 4pp for the basic recipe using egg substitute and almond breeze
1/3c oatmeal uncooked I use quick oats 3pp. I wouldn't use instant but rolled oats might work, I haven't tried them.
1/4c skim milk or almond breeze AB would be 0pp
1/4c egg substitute or one egg Egg substitute would be 1pp
1/2 tsp baking powder 0pp
sweetener of your choice opp
I usually add 1 tsp of coarse sugar/turbinado sugar on top for crunch and because it's 0pp
To that I'll add any one of these add in's: usually just 1/4 - 1/3c of fruit
chopped apple/cranberries, cinnamon
cocoa/chopped banana
canned pumpkin/cranberries, pumpkin pie spice
blueberries/mango
Mix and put into a sprayed 1c ramekin.
I bake these in my toaster oven while I'm enjoying my coffee :) 350 for 25 minutes or until puffed up and starting to brown.
