I was excited when I saw this recipe from Weight Watcher Girl for bacon cheese fries. Since I'm in Canada and don't often have the same food options I usually end up tweaking recipes I see. Also I do Simply Filling so I change things for that reason as well :)
This is not Simply Filling recipe but potatoes are Simply Filling and the oil is out of my daily oils so it just ends up costing me 3pp which I think is a bargain. Also I don't use bacon bits so I used pre-cooked low sodium bacon and light cheese.
1 medium sized potato I cut it into a chip shape with a mandoline but you can cut it into fries
1 oz/30g light cheese 2pp
2 slices of president's choice low sodium pre-cooked bacon chopped 1pp
1 tsp olive oil
salt/garlic powder/pepper
non stick spray
I put the cut potato and rinsed them off with water. Dry them and then put them in a bag with the olive oil and shook the bag so the olive oil was on all the potato.
Put the potato slices on a baking sheet you've sprayed with non stick spray
Sprinkle with the salt/garlic powder/pepper
Bake in a 375 degree oven for 12 minutes then turn over and cook another 12 minutes now the time depends on the temperature of your oven and how thinly you cut your potato. Keep your eye on them.
Take out of the oven, arrange the potato on top of each other and sprinkle the cheese and the chopped bacon on
Put back in oven just to melt everything

Cheesy taco and cabbage casserole
I found a fantastic recipe from Weight Watcher girl! Click on the link for the original recipe :)
Now you know I'm in Canada and I follow simply filling I tweak things so I did change a few ingredients.
Items I changed are in red.
Cheesy taco and cabbage casserole Simply Filling plus 1pp 8 servings
1 lbs 93% ground turkey I used 1 lb extra lean ground beef
non stick spray
1 cup of fat free sour cream I used 1 cup of 0% plain Greek yogurt
1 cup diced onion
1 cup diced green onion
medium to large cabbage diced I used 2 packages of coleslaw mix
1 package of taco seasoning I used the lower sodium one
1 cup of chunky salsa
1/4c reduced fat cheese and 1/2c fat free cheese I used 4 oz of finely grated light cheese which is 1pp/serving
9x13 baking dish
Directions:
Preheat oven to 350 degrees
In a large pan brown your meat.
Throw in the Green pepper, onion, taco seasoning and salsa
Mix and let simmer for about 2 minutes I left it a bit longer than that
Spray your pan with non stick spray and put one package of cole slaw mix in the bottom.
Layer 1/2 of the meat mixture over the cole slaw mix.
spread 1/2 cup of the Greek yogurt over the meat mixture.
Spread the other bag of coleslaw mix on top.
Spread the other 1/2 of the meat mixture.
And finally the last of the Greek yogurt.
DON'T put the cheese on yet.
Cover with aluminum foil and bake for 50 minutes mine took 65 minutes.
Take the foil off and sprinkle the cheese on top and put back into the oven for 10 minutes.
8 servings simply filling plus 1pp

Apple berry cobbler Simply Filling
Loved this! The husband said it was amazing :)
Apple berry cobbler simply filling
This made 2 ramekins each was 1 portion
I took the blueberry scone recipe and omitted the blueberries and put it on top of apple/berries :)
1 small apple chopped smallish so they'd cook faster
8 frozen strawberries
1/3c leftover sugar free cranberry sauce
I put them all in a small pan. Of course you could use any berries you have on hand. Heated them until the strawberries were thawed and the apple starting to cook.
Divide between to ramekin dishes mine are the 1 cup size.
I then made this blueberry scone recipe but left out the blueberries. I took 1/3 of the recipe out and divided it between the ramekins and baked in a 350 oven for 25 minutes.
Then I added a few frozen blueberries to the rest of the recipe and poured it into a small glass baking dish to make 4 blueberry scones for later :)

Pineapple upside down pancakes simply filling
Oh my these taste great!
Pineapple upside down pancakes simply filling
1/2c quick oats uncooked
1/2 tsp baking powder
sweetener to taste 1-2 packets
2-3 slices of canned pineapple depends on how many pancakes you make blot them with a paper towel so the're not too wet
1/4c light yogurt sugar free I used vanilla
1 egg or 1/4 egg substitute or 2 egg whites whichever you prefer I used 1 egg today
1/2 tbsp brown sugar 0pp
Mix everything except pineapple and brown sugar in a bullet or use a stick blender. Let sit a couple of minutes as it gets thicker when you wait a few minutes.
You can make 2 - 3 pancakes depending on the size :) I made 2 today.
Pour 1/3- 1/2 of the batter in a non stick sprayed heated pan. Now put 1 of the pineapple rings on top.
There are 2 ways to finish them.
1. you can spread some of the brown sugar on top. Give the tops a quick spray with non stick and turn over after the bottom half has browned. Cook until browned then very carefully, because the sugar makes them sticky, turn over.
2. don't put the brown sugar on yet. Turn over and when cooked put them on a baking sheet, sprinkle the pineapple tops with the brown sugar and put under broiler for a minute or two or until browned. I haven't tried this method but it should work fine.
I used #1 method. Even if they don't turn over perfectly they taste divine :)
I topped my with a drizzle of 1 Tbsp of sugar free pancake syrup.

Giant chocolate banana breakfast cookie Simply Filling or 6sp
1/2 c quick oats
1 egg beaten
1/2 a banana mashed with a fork plus a few slices to put on the top
1/2 tbsp - 1 tbsp unsweetened cocoa powder depending on how strong a cocoa flavor you like
sweetener to taste
1/2 tsp baking powder
1/2 tsp turbinado sugar sprinkled on top makes it nice and crunchy :) 0pp
Spray non stick in a small round dish mine looks like a mini pie dish.
Bake at 375 for 17-20 minutes or until firm to the touch.
Enjoy!

Berry whip Simply Filling
Berry whip Simply Filling 2 servings or 1/3 for me and 2/3 for the hubs which is how it went today :)
1c frozen fruit of your choice today I made strawberry but I also love blueberry or cherry
1c fat free cottage cheese
drizzle of skim milk if needed
That's it!
Put the frozen fruit it first followed by the cottage cheese.
I just put this in my nutri bullet and whip it. If it's hard to get it started add a little skim milk.
This tastes just like cool whip and berries :) You can add a little sweetener if the fruit isn't very sweet.

Slow cooker pumpkin cheesecake 5pp
I won't copy out the whole recipe again so go HERE to find the recipe for this pumpkin cheesecake.
The only thing I did differently was because of the size of my slow cooker I put water in the bottom then I have a glass round baking dish that fits perfect and stays on top so that what I used and it came out great.
1/8 of the whole thing is just 5pp which is fantastic for cheesecake. I served it with some light whipped cream 0pp and 1 tsp real maple syrup 0pp :)
The first slice was a pain to get out but after that it was easy sailing!

Stuffing Simply Filling + 1pp
I tried Weight Watchers Girl stuffing today. One problem is that we don't get the sausage crumbles. So what's a Canadian to do?? I was going to use lilydale turkey breakfast sausage because they're 1pp each but they didn't have any!!! BUT President's Choice Blue Menu original pork breakfast sausage is only 1pp/sausage or 2pp/2 sausages or 3pp/3 sausages. Call me a happy camper :) So I used 7 which only adds 1pp/serving. I also used my Ezekiel bread which is SF rather than the light because it is denser and I thought it would be more filling. Oh and the original recipe from Weight Watcher girl is 2pp/serving for those counting points using light bread.
Stuffing Simply Filling + 1pp/serving for the sausage
6 slices of Ezekiel bread which is SF in Canada or 8 slices of light bread left out overnight to dry
5 Tbsp egg substitute
2 Tbsp of Becel reduced calorie pro active margarine which when divided between servings is 0pp
1 tsp salt
2 tsp poultry seasoning
7 president's choice blue menu original pork breakfast sausage without the casings cooked and crumbled
black pepper to taste
1 and 1/2 cup of fat free chicken broth
2 cups of diced celery
1 and 1/2 cups of diced onions
I used a 9x13 baking dish. Sprayed with non stick spray.
Preheat oven to 350
Break the bread into cubes.
Put your celery, onions, salt and pepper, poultry seasoning and broth in a small pot and bring to boil. Simmer on medium for about 10 minutes.
Take off of the stove and add the sausage, egg substitute and light margarine.
Pour the entire mixture over the bread and mix until all the bread is covered and moist. If it's a heavier bread like Ezekiel make sure to get all the bread moist. Add a bit more broth if you need to.
Bake covered with aluminum foil for 10 minutes.
Remove the foil and bake for an additional 20 minutes or until tops lightly brown.
Fluff mixture with fork.
Serve.
Makes 6 servings Simply Filling plus 1pp

Lemon cranberry banana bread
I tried this last week and tweaked a few things and it really didn't work out so I decided to try it again today.
I printed out this recipe and just tweaked a couple of things today. I replaced the sugar with sweetener and used lemon extract instead of orange. With the tweaks and making 3 mini loaves that had 6 slices each they came out to 1pp/slice.
Think of the possibilities: cocoa/white chocolate chip, banana pecan, pumpkin cranberry, lemon poppyseed etc
Lemon cranberry banana bread
Ingredients
1 cup of all purpose flour
1/2 cup of whole wheat flour
1/2c sweetener that measures like sugar
1/2 tsp vanilla vanilla extract
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup of egg substitute or 2 eggs
1/2 cup of unsweetened apple sauce
3 mashed very ripe bananas approximately 1 cup
1 tsp of lemon extract
1 cup of fresh or frozen cranberries cut in half
1 tbsp lemon zest
Directions:
mix together all dry ingredients
in a separate bowl mix eggs, applesauce, vanilla extract, lemon extract, lemon zest and mashed bananas
stir banana mixture into dry mixture then fold in cranberries
do not over stir, stir just till dry ingredients are incorporated
baked in 3 mini pans for 30 minutes at 350 degrees
loaves are done when toothpick comes out clean.

Romaine lettuce
2 slices of President's choice pre-cooked bacon heated in the microwave 1pp
7g President's choice sour dough Caesar croutons 1pp
2 Tbsp of President's choice blue menu light Parmesan cheese today I didn't have any so I used 15g light cheese either one is 1pp
Renee's fat free Caesar salad dressing 0pp if you don't like fat free use the light and adjust the points
Today I needed to get my oils in so I added 2 tsp olive oil to the dressing plus some lemon juice.
Hint: I put the lettuce, the Turkey and the dressing with oil in a large container with a lid and shake, shake, shake and it really helps to coat each piece of lettuce with dressing :)
Top with the cheese, crumbled bacon and croutons.

cauliflower hash browns Simply Filling style
Now I'm not one of those people who like replacing mashed potatoes with cauliflower. No thank you just give me the potatoes :)
However I love these cauliflower hash browns. It is what it is. It's also simply filling!
Cauliflower hash browns
Cauliflower broken into small pieces. I cut the stems off.
Olive oil today I used 2 tsps for my daily healthy oils
Seasonings I love using some sea salt, pepper, smoked paprika and a bit of garlic
It's that easy. The secret is the sea salt and the smoked paprika definitely worth buying if you haven't already got it.
Just put all in a pan and fry away. Keep cooking till really nice and browned. Today I added some onion but I usually don't.

Roasted butternut squash with pecans and blue cheese
This is amazing if you like blue cheese :) I will be making this again
Original recipe is here but I tweaked it quite a bit.

I buy the already peeled and cut squash so I used 1/2 of the packet
1 tsp of olive oil
3/4 tsp of honey
sea salt and pepper
7g pecan bits 1pp
22g blue cheese crumbled 2pp
Put the squash in a ziplock and drizzle with 1 tsp of olive oil, sea salt and pepper. Close bag and toss. This is the secret to making a tsp of oil go a long way :)
I like to use the non stick foil. So I just put the cubes of squash on there. Or a non stick pan/ or pan sprayed with non stick or a bit of olive oil.
I cooked in my toaster oven for 20 minutes then turned them over and cooked for another 15 minutes or until cooked. Sprinkle the pecans and drizzle the honey over everything. Pop back in the oven for 5 minutes.
Take out of the oven and put into a bowl. Let sit a few minutes to cool down a little then sprinkle the blue cheese crumbles on. Toss all together and enjoy :)

Baked cream cheese spaghetti casserole

I tweaked it to be more Simply Filling :) It ended up Simply Filling plus 1pp for the PC blue menu Parmesan cheese that is 1pp for 2 Tbsp!
Baked cream cheese spaghetti casserole Simply Filling +1pp
12oz uncooked whole wheat spaghetti
1 can of President's choice tomato sauce with basil that has no sugar
1 lb extra lean ground beef
2 tsp Italian seasoning
1 clove of garlic minced or garlic powder
1 package of Kraft 95% fat free cream cheese
1/2 cup of President's choice blue menu light Parmesan cheese
Preheat oven to 350
Brown the ground beef until cooked and drain any fat.
Stir in tomato sauce. Set aside.
Cook spaghetti noodles according to package. Drain and put in a large bowl. Add cream cheese, Italian seasoning and garlic. Stir until spaghetti is thoroughly coated with cream cheese.

I tweaked it to be more Simply Filling :) It ended up Simply Filling plus 1pp for the PC blue menu Parmesan cheese that is 1pp for 2 Tbsp!
Baked cream cheese spaghetti casserole Simply Filling +1pp
12oz uncooked whole wheat spaghetti
1 can of President's choice tomato sauce with basil that has no sugar
1 lb extra lean ground beef
2 tsp Italian seasoning
1 clove of garlic minced or garlic powder
1 package of Kraft 95% fat free cream cheese
1/2 cup of President's choice blue menu light Parmesan cheese
Preheat oven to 350
Brown the ground beef until cooked and drain any fat.
Stir in tomato sauce. Set aside.
Cook spaghetti noodles according to package. Drain and put in a large bowl. Add cream cheese, Italian seasoning and garlic. Stir until spaghetti is thoroughly coated with cream cheese.

Sugar Free Crockpot pumpkin apple butter simply filling
This is the original recipe here
I tweaked it just a bit as my crock runs hot so I made it the same way as I made the crockpot pumpkin steel cut oats. Just be sure to use a bowl that's oven proof.
Here's the oat recipe to show how I used my slow cooker

1 large apple chopped small as I like to leave the apple chunks in the finished butter
1 cup of unsweetened apple sauce
1/4c sugar free pancake syrup
1/2c sweetener that measure like sugar
1 tsp Saigon cinnamon as it's a stronger cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp ground ginger I actually used 1 tsp but I like it very gingery
1 tsp vanilla
1/2 tsp lemon juice
I didn't add any salt
I mixed all together and put into my bowl inside of my crockpot and cooked on high for 2 hours then turned on low stirring every now and then for another 3 hours or until it's a darker color and the apple is soft.

I decided to play around with making an apple crisp which I love. Of course you can use other fruits like peaches, cherries, plums etc.
This is not overly sweet and has a crisp topping. Best eaten while still warm.
It's Simply Filling plus 0pp for the syrup and margarine
1 serving

Sweetener of your choice
1/3c quick oats
1/2 Tbsp of water

30g light shredded cheese 2pp
Lou's peameal bacon chopped and cooked
Broccoli I just steamed some in my Weight Watchers steamer but you could use leftover
I sprayed the potato with non stick and rubbed it over the potato skin then sprinkled with a bit of sea salt. Pierced each side 4 times with a fork. Put into a 350 oven for approximately an hour or until the skin is crisp and it's cooked inside. I love doing it in the oven because it makes the skin nice and crispy.
Let cook a bit until you can handle it comfortably.
I slice mine in half across as it was a huge potato :) Carefully scoop the cooked potato out of the skin keeping the skin as intact as possible.
Put the cooked potato in a bowl. Sorry I didn't measure but I added approximately 2 Tbsp of fat free cream and 1 tsp of becel pro-active light margarine. I used my hand blender to mash it all together. I added a little sea salt/pepper/powdered garlic and 1/2 the sliced green onion.
Now add the potato mix back into the skins.
Top with the broccoli/bacon/green onion and finish with the cheese.
Put back into the oven until the cheese is melted and the potato is heated through.
1/2 would be a great lunch and the whole potato is a very filling dinner :)

Salisbury steak with mushroom gravy Simply Filling or 5sp or 8pp
I found this recipe and decided to tweak it to be Simply Filling
Salisbury steak with mushroom gravy Simply Filling style :)
Update today I made this with ground turkey but followed the rest of the instructions to a T and it turned out great!
1 lb of extra lean ground beef
2 medium onions thinly sliced you could use 1 but I love onions
2 tsp olive oil divided became part of my daily healthy oils
1/4c of bread crumbs made from bread that is a power food for me that was Ezekiel bread that had been dried out before making into crumbs
2 Tbsp egg substitute
1 cup of low sodium beef broth plus 2 Tbsp for the steak patties
salt and pepper to taste
1 package of mushrooms thinly sliced you could use less but I love mushrooms as well :)
1 Tbsp flour
1 Tbsp tomato paste
1 tsp vinegar
1 tsp Worcestershire sauce
1/2 tsp mustard I used dijon
2 Tbsp water
Saute the onion in the olive oil until browned and caramalized. Take out of pan and divide into 2.
Mix half the cooked onions with the ground beef, bread crumbs, 2 Tbsp of egg substitute, 2 Tbsp beef broth. Divide into 4 patties and brown in the same pan as the onions were cooked. Just brown on both sides as they will cook more later.
When browned remove from pan and put the mushrooms, salt and pepper in the pan and cook for 4 or 5 minutes.
In a bowl mix the rest of the beef broth, flour, tomato paste, vinegar, Worcestershire sauce, mustard and water and the 1/2 cooked onions together.
Put the browned patties on top of the cooked mushrooms. Pour the broth mixture over the patties and mushrooms and cover and simmer on low for 20 minutes stirring every now and then.
The flour/tomato paste when divided between the 4 servings are equal to 0pp so it keeps it Simply Filling!
Serve one patty with 1/4 of the sauce.

Pina colada pancakes Simply Filling
1/2c of quick oats
1/4c egg substitute or 1 egg or 2 egg whites
1/4c light yogurt I used Astro 0% pineapple passion
1/2 tsp baking powder
2g unsweetened coconut I put 1/2 in the mix and half sprinkled on top 0pp
1/4c chopped pineapple which is all I had next time I'd use crushed pineapple
1/4 tsp coconut extract
If you use plain yogurt you might want to add some sweetener
Mix all together saving a little coconut and pineapple to put on top.
Cook as you normally would cook pancakes

Polenta hash browns Simply Filling
This is what the polenta I used looks like but there are many brands which would work
Polenta hashbrowns
Polenta sliced into thick 1/2" slices then cut into hash brown sized chunks.
I had some peppers cut up in the fridge so I chopped a few
chopped onion
olive oil I used 2 tsp for my daily healthy oils
sea salt, garlic powder and whatever other seasoning you like I used this
It's important that you start with a hot skillet.
Heat your oil until hot but not smoking :)
Add the polenta cubes and let sizzle for a few minutes before tossing them over to coat the other sides with a bit of oil.
Sprinkle seasonings over it.
Cook till it's starting to brown a bit.
Add the peppers and onions.
Continue to cook until polenta is starting to get crispy and peppers and onions are cooked.

Slow cooker black bean soup simply filling
Thanks Ida for passing along this Weight Watcher recipe! The only change I made was that I threw it all in my slow cooker :) Items in the red were add in's that I added but weren't in the original recipe
Black bean soup
- 1 med onion, chopped
- 29 oz chicken or vegetable broth (reduced sodium)
- 15.5 oz black beans, drained and rinsed next time I'd add 2 cans of black beans
- 11 oz corn
- 15.5 oz tomatoes with green chilies
- ½ c uncooked brown rice I just used leftover cooked brown rice that I added just a bit before I served it
- garlic I added 3 cloves chopped
- cilantro to taste which I added
Red pepper flakes (Optional)
Sauté onion in broth. Add all ingredients. Bring to boil. Cover and simmer for 50-60 minutes until rice cooks. I just threw everything in the slow cooker
6 servings. 3 pts each. If you are counting points

Cheesy scalloped potatoes simply filling + 1pp
Cheesy scalloped potato Simply Filling +1pp for the cheese
I used a small individual dish that was oven proof.
First I sprayed non stick spray in it.
Then in a small saucepan I melted 1 tsp calorie reduced becel margarine. Then I sprinkled in 1/2 Tbsp whole wheat flour and stirred letting it bubble for a couple of minutes.
Stirred in 1/2 cup of skim milk, sea salt to taste, pepper and parsley.
Cooked on medium until it comes to boil whisking constantly till it thickens. When it was thick enough I stirred in 1 tbsp ultra light cream cheese. Put aside.
I used a medium potato that I sliced with my mandoline very thin.
Now take the dish and put enough sauce in just to cover the bottom.
Put 1/2 the sliced potato in.
Cover with 1/2 the remaining sauce.
Put the other 1/2 of the sliced potato in.
Cover with the last of the sauce.
Now put foil over the dish and put into the oven for 20 minutes.
Take the foil off and put bake into the oven for 10-15 minutes or until the potato is soft.

This is definitely not like instant peaches and cream oatmeal it's better :) It's a stick to your ribs chewy bowl of amazing!!
I tried making this in the microwave and I would definitely make this on the stove top. You could make double or triple and put extra in individual dishes either in the fridge or freezer to heat in the microwave a different day!
I also wouldn't buy containers of the grains but go to your bulk section or health food store bulk section and buy a cup of each for a dollar or two. That will make many breakfasts.

3 tbsp old fashion rolled oats
3/4c water
1 tsp vanilla
if the brown sugar doesn't make it sweet enough add a bit of sweetener of your choice

Put the bulgur, barley, oats, water, vanilla and optional sweetener in a saucepan and cook on medium heat until boiling then keep stirring until thickened. It will still be chewy but cooked. Add the peach and cook for another minute or two.
Put into bowl. Sprinkle brown sugar and pour cream on top :)

Copy cat Panera's autumn squash soup
From Nicole Fritter Stone
1 butternut squash
1 medium onion
2 medium apples
olive oil or olive oil spray
15oz can of pure pumpkin
2 cups of vegetable broth
1/2 cup of skim milk or 1/2c light coconut milk if you use the coconut milk add 2pp/serving
2 Tbsp honey
1/4 tsp curry powder
1/2 tsp cinnamon
salt and pepper to taste
Preheat oven to 450 degrees.
Spray 13x9 inch baking pan with olive oil spray
Peel, seed and cut up squash into cubes
Peel and quarter onion
Peel, core and cut up apples
Place chopped squash, onion and apples in pan
Spray with another spray or two of olive oil spray
Cook for 20-30 minutes or until all are tender
Let cool for 15 minutes or until cool
Put cooled cooked squash, onion and apple into food processor and puree
In a large pot put puree, pumpkin, broth and milk
Blend and bring to low boil over medium heat.
Add honey and spices.
Simmer for 10 minutes.
My copy-cat Panera Autumn Squash Soup turned out so darn good, I must say! The honey is dispersed over about 10 one cup servings, but could be subbed with sweetener. (I like the sweetness of the honey mixed with the full flavors of the squash, onions, and apples.)
I'm choosing not to count the one point the WW recipe maker states when I plug this all in, because the amount of honey is not enough for me, personally, to worry about. You may choose to count it towards your daily 7/weekly 49. If so, it is 1 point for 1 cup.
(If you wanted an even creamier version, sub skim milk with light unsweetened coconut milk. According to the recipe maker, the addition of unsweetened light coconut milk makes each cup 2 pp's)

Someone asked about my recipe and really it's not a recipe but I'll tell you how I did it :)

I freeze leftover chicken to use for this I used a cup or so of chopped chicken
I buy no name lower sodium chicken broth
I chopped or sliced up peppers, celery, onion, carrots, mushrooms and sundried tomatoes

Update: I didn't have cottage cheese and used yogurt and it worked out fine, I also increased the cocoa because I love a strong chocolate flavor. You could also use dark cocoa to do the same thing.
1/2c oats personally I count it as SF but use pp if you don't
1/2 tsp baking powder
1/4c cottage cheese
1 egg or 1/4c egg substitute or 2 egg whites
1.5 tbsp Pb2 1pp
2 tsp unsweetened cocoa 0pp
sweetener to taste I used 2 packets
Banana sliced
Sugar free pancake syrup 0pp
Skim milk if needed
Put the oats, baking powder, cottage cheese, 1 egg, 2 tsp of cocoa powder, sweetener in a bullet or blender. Let sit for 5 minutes. If it's too thick add in a bit of skim milk.
Cook pancakes in a non stick sprayed pan and right after you've done that take a few banana slices and gently push them into the top of the pancakes.
Top with syrup and the rest of the banana :)

Blueberry scones Simply Filling
Blueberry scones Simply Filling Makes 6 Simply Filling
1 1/4c oatmeal put into blender to make oat flour
1 1/2 tsp baking powder
1/2c blueberries I used frozen
1/2c blueberries I used frozen
1/4c splenda or whatever sweetener you use if you use sugar it would add 1pp per scone
1/4 tsp salt
1 Tbsp of light margarine 1pp for the one I choose divided by the servings is 0pp

1 cup light vanilla yogurt
I spritzed the top of them with butter flavored non stick spray
1 tsp sugar to sprinkle on top

Put onto a parchment lined baking sheet or foil lined and sprayed with non stick spray
Pat into a circle approximately 1/2 inch thick and 7 inches

Update put this through the new smart points recipe builder and if you're doing smart points they're 4pp per piece.

I make my hot oat bran by putting the milk and the oat bran cereal in a small saucepan. Put on a medium heat and stir. Don't go anywhere because it will quickly thicken once it boils :)
I make mine with skim milk which is Simply Filling great way to get a dairy in
The 1/2 Tbsp of brown sugar isn't Simply Filling but it is 0pp

Creamy cherry dessert cups
These are a nice way to get some dairy in. You can use any flavor you like.
Creamy cherry dessert cups Simply Filling
1 box of sugar free jello your choice of flavors
1 cup of boiling water
Mix both together for a couple of minutes.
Add 1 cup of light yogurt I only had Vanilla so that's what I used.
Whisk together then put into individual cups.
Top with 2 Tbsp ff/light whipped cream 0pp

Giant banana chocolate chip breakfast cookie
Giant banana chocolate chip breakfast cookie Simply Filling +1pp for the chocolate chips
Warning!!! This makes a huge breakfast cookie so if you're really hungry in the morning great if not find someone to share it with :)
1/2c oatmeal
1 egg beaten
1/2 banana mashed if really small you might need 3/4 of it
1/2 tsp cinnamon
1 Tbsp sugar free pancake syrup or sweetener to taste
1/2 tsp baking powder
10 g mini semi sweet chocolate chips
Mix all together and bake in a toaster oven or regular oven for 18-20 minute or until set and starting to brown.

Creamy cauliflower or potato soup
So easy and tasty!
Creamy cauliflower soup SF add points for any additional ingredients!
1 bag of frozen cauliflower or you could use potatoes if you want probably 3 medium?
2 cups of fat free chicken broth
Salt and pepper to taste I also add garlic powder and onion
3 Tbsp fat free or ultra low fat cream cheese or light laughing cow
Green onion
My add in's today were 1 slice precooked bacon 1pp and light cheese 1pp
Simmer these until the cauliflower is tender in the chicken broth I covered with a lid but left it open a bit so it would reduce a bit of the liquid. Approximately 10 minutes after it boils. I then used a hand blender to make it smoother while leaving a few lumps :). Then I added some ground pepper, garlic and onion powder and the cream cheese you could use laughing cow but I didn't have any.
Garnished with some green onion.
This made 3 good servings of soup.

Apple cranberry baked French toast/bread pudding!
Apple cranberry baked French toast/bread pudding! Simply Filling
2 slices of Ezekiel bread cut into cubes in Canada Ezekiel bread is SF or use whatever bread you use
1 egg, 2 egg whites or 1/4c egg substitute
1-2 Tbsp skim milk or fat free cream you want it wet but not totally swimming in liquid a heavier bread will need a bit more more. I used Ezekiel bread and needed 3 Tbsp but if you're using light bread probably 1 tbsp.
1 tsp vanilla extract
sweetener or sugar free syrup amount depending on how sweet you like things
1/2 small apple chopped up if you want really soft apple put them in the microwave for 45 seconds before adding them to the recipe. I liked mine with a little crunch still.
1/4c cranberries
I like to sprinkle either 1/2 tsp of sugar or 1 tsp maple syrup, or sf syrup 0pp on top to make it nice and crusty
Put the cubed bread into a bowl.
In another small bowl I beat the egg added the milk and sweetener and vanilla. Mix and add to the bread cubes. Toss with a spoon till all the cubes are wet and the liquid has been absorbed. If too dry add another Tbsp of milk. Now add the apple and the cranberries. Let sit for a couple of minutes. Stir again. Put into an oven proof dish. Sprinkle the sugar or drizzle the maple syrup or sf syrup on top.
I popped it in my toaster oven at 375 and cooked until starting to brown and crispy on top :) 20-25 minutes. I did drizzle some sugar free pancake syrup on top after it came out.

Edamame zucchini salad
I came up with this idea to take to work for dinner!
Edamame Zucchini Salad Simply Filling +1pp for the dressing
I cooked up 1/2c frozen edamame and drained them
Made some zucchini noodles with my julienne peeler
Chopped some multicolored carrots
Chopped some green onion
Sliced some cherry tomatoes
Added 2 Tbsp Bolthouse miso with ginger dressing 1pp

Caramel apple stuffed French toast
Caramel apple stuffed French toast Simply Filling plus 2pp for the Pc Greek yogurt caramel cream cheese if you used Kraft Ultra light cream cheese it would be 100% SF
2 slices of Ezekiel bread which is SF in Canada you can use whatever bread you use for Simply Filling
2 Tbsp Pc Greek yogurt caramel cream cheese it's a Canadian brand you could add sf caramel sauce to plain cream cheese
1 apple sliced and sauteed in a pan with non stick spray
cinnamon added to the apple while cooking
1 egg or 2 egg whites or 1/4c egg substitute with a little skim milk added, a bit of sweetener and 1/2 tsp cinnamon
Saute the sliced apple in a pan with non stick spray and set aside.
Beat the egg/egg whites/or egg substitute with a little skim milk, a bit of sweetener and 1/2 tsp of cinnamon.
Take 2 slices of Ezekiel or other power food bread and spread the 1 tbsp of the caramel cream cheese on each slice. Put the sauteed apple on one slice of bread on top of the cream cheese and top with the other slice of bread.
Carefully dip both sides in the egg mixture.
Cook in a non stick sprayed pan until brown on one side also give a quick spray of non stick on the top of the bread and then turn over and cook the other side.
Serve with sugar free pancake syrup or sugar free caramel syrup.

Taco salad!
Taco salad Simply Filling + points for additional extras
- Romaine lettuce
- cherry tomatoes
- green onion
- 55g avocado 2pp
- fat free cheese if you use light cheese which I do that would add 2pp for 1oz/30g
- extra lean ground beef or turkey that I purposely had leftover to use for the salad
- a bit of taco seasoning sorry I just added maybe a tsp? I have also used vegetarian crumbles which were good.
- salsa
- 0% plain Greek yogurt or ff sour cream
- hot sauce or jalapeno peppers
Chop the lettuce then add the other ingredients. Simply Filling plus whatever extra's you choose to add.
Breakfast roll ups!
Love these and they're easy to grab and carry when you're on the go in the morning :)

stuffed pepper casserole
Stuffed pepper casserole special thanks to Jeanne C for passing it along :) Simply Filling
8 servings
3 peppers diced
1/2 large onion diced
2 tsp olive oil
1 lb extra lean ground turkey or beef
1 large can of diced tomatoes
1 small can of tomato paste
2 bags of 90 second brown rice or leftover brown rice
salt/pepper/garlic/italian seasoning
fat free cheese Jeanne used mozzerella I used 4 oz light cheddar as we don't get ff cheese here it added 1pp/portion
Saute peppers and onions in the olive oil. Meanwhile cook the extra lean turkey or beef. I added seasoning to the meat when cooked. Then add the pepper and onions and the rice. Mix well and put into pan. Top with the cheese. Put in a 400 degree oven for 10 minutes or until cheese is nice and melty :)

Apple fritter pancakes
Apple fritter pancakes Simply Filling
1/3c of oat flour which is just oats put into a blender until it looks like flour
1/2 tsp baking powder
1/4c 0% Greek yogurt or you could use light but I'd use a little less so that it's not too runny
1 egg, 2 egg whites or 1/4c egg substitute I used an egg
1 tsp vanilla
1/2 tsp cinnamon or apple pie spice
sweetener
apple rings made from a cored apple and sliced on a mandoline or thinly cut 1/4 inch or so
Combine the oat flour and all the other ingredients except the apple rings. Add a bit of skim milk if too thick.
Dip the apple rings on at a time and cook on a non stick sprayed griddle or large skillet until browned then turn and cook on the other side.
I drizzled them with sugar free pancake syrup you could also use caramel syrup or just dust with some powdered sugar :)
